02:22filling your time wisely and sealing the deal so don't get my order wrong well it is a technical
02:28challenge it's judge blind so as scott of the antarctic's wife said to him shortly before he
02:33left for the south pole take a hike
02:39for your technical challenge liam would like you to bring some pizzazz to the tent with his pizza
02:43pocket rockets i love indoor fireworks your pizza dough must be filled with a smoky chili paste
02:51cheese and tomato and to elevate this ultimate grab-and-go portable pizza snack it must be served
02:58with a paprika aioli dip you have one hour in which to make liam's pizza pocket rockets on your marks get set
03:06bake oh wow i've made pizza but not a pizza pocket rocket i think it's such a fun technical
03:15the bakers have been given the same ingredients blender chopped tomatoes garlic clove tomato puree
03:22salt and sugar and the simplified recipe to make liam's pizza pocket rockets it sounds hard but i'm just
03:29going to try and stick to the recipe i wouldn't say i'm a huge fan of rockets i would probably not want
03:34to go space because you could actually like get lost that's my biggest fear i don't know why i'd pay
03:39thousands to go to school when there's nothing to do there it's just a little walk and then come back
03:47so liam why are you testing the bakers with these pizza rockets we want to test the bakers on a few
03:52elements today making the dough shaping it and making those delicious savory fillings you're actually
03:58getting the bakers to make the tomato sauce as well liam this is junior bake-off they have to make
04:03the sauce the dough is wet so just be careful how much flour you add to the dough because if it becomes
04:09too dry it'll be tough and it won't be nice to eat something that will be really challenging with
04:14this is actually sealing the rocket so that the filling stays inside it's going to be a tricky one
04:19which rocket would you like i think this one looks delicious do it yeah
04:22the dough is fluffy and light the inside is tomatoey it's a bit spicy and this dip 10 out of 10. today
04:33i don't want the bakers to aim high i want the bakers to aim rocket high because i love these pizza
04:39pockets from my head tomatoes that is smooth with the tomato sauce ingredients combined oh that smells
04:49really good the bakers must drain the excess liquid try not to push the pizza sauce through the sieve
04:55as a watery sauce will lead to soggy rockets i'm just making sure that it's drained there's a lot
05:00of tomato juice coming out of this i took the first step quite slow to get all the measurements right
05:05because i am worried i'll do something like stupid hi there cole you seem very relaxed very chill
05:13what's cole like when he's panicking i just ruin everything when i uh panic it's a bit more
05:20obvious i'm gonna i sort of like this oh yeah yeah it's sort of that yeah yeah i'm shaking the dough
05:30now add the yogurt flour and salt to a large bowl and mixer combine that wasn't meant to happen the yogurt
05:38will add moisture to the dough i've never put yogurt in a dough so it'll be stickier than usual
05:44feels a bit too sticky maybe more flour but the bakers must be careful not to add too much flour
05:50it says only lightly floured so i don't think he wants us to add too much as this will result in a
05:55hard pizza dough i don't really know what consistency i'm looking for the last thing i want is for it to be
06:02too dry i think once it all gets together my hands won't look like that morning kitto good morning
06:09how long have you had that skin condition on your hands it's very very sticky a little bit of e45 on
06:15that probably should sort that out i bet if you took that throughout it would stick to the roof of the

06:49life i actually need to use maths kittles using your scale to build the pizza pocket rockets just making
06:56my oval shapes now the bakers will need to roll six oval dough shapes evenly ah this is so difficult
07:04because it's such a sticky dough it proper sticks to rolling the dough keeps sticking it's not getting
07:09into the shape that easily so i've only done three it says to do six but i'm gonna try and do this
07:16quickly one down five more to go how did you feel about yesterday yeah it went all right the technical i was
07:22in the middle so today i'm hoping i can bring it back i thought that you were slightly pipped at the
07:27post by kitto yesterday yeah well he deserved it but today kitto watch out girlfriend
07:36if the bakers roll out the dough too thick i guess that's good the bake will be uneven
07:42they don't have to be like all the exact same i don't think that has to be all symmetrical if the dough is too
07:47thin the tomato sauce and cheese will spill out i think that's a bit too thin i might re-roll that
07:52one i do want them to be kind of thick do you know you get the free doll's house furniture with the
07:58takeaway pizzas i keep getting the table you know that little white table the one in the middle of
08:04the pizza yeah i only get the table i never get the chairs to go with it oh that's sad maybe you can
08:11email where you get your pizza from to give you a chair or whatever i love pizzas this one's a
08:19seafood one let's give it a sniff i asked for that didn't i 30 minutes bakers you've got 30 minutes
08:27left yeah all right you get the idea oh we're halfway okay i don't really have that much time
08:33kind of got to rush a little bit okay i think i'm going to start assembling the bakers have reached an
08:39important stage in mission munchable place a spoonful of tomato sauce on the three of the ovals
08:44making sure that the filling will fit inside the rocket cutter fueling the rockets flavor
08:48boosters with tomato sauce and mozzarella cheese i'm going to do a generous spoonful because i always
08:54find on the pizza there's never enough tomato sauce topped with a few blobs of smoky chili paste
08:59and sprinkling of mozzarella cheese sprinkle of cheese now i'm just in a production line rush
09:04because a rush but overfilling the rockets it's exploding i put a lot of cheese will cause them
09:10to explode in the oven when baking i'm worried about the tomato puree leaking out because i think
09:15i stopped it with a bit too much hopefully it's not going to explode so when do you cut out the rocket
09:23shape not yet i need to put the other layer of dough on top first but what i've done is i've
09:28like mapped it out so i can place my fillings accordingly that's one of the worst things is
09:32when you have a pizza and all the good stuff's on four sections yeah and you've got to try and
09:37trick your wife i'll get the pizza for darling do you cut your slice of another slice of pizza just
09:43angle it so she doesn't get four olives again yeah i'm cutting mine out now
09:48the bakers also need to seal the edges of their pizza pocket rockets right now i'm sealing the dough
09:58so it doesn't leak on the side if the rockets are not sealed molten cheese will escape during baking
10:05just covering up a hole i don't want it to leak oh no hi zacharia hello i am a darling i am you found a
10:15doctor who pardon never mind and a bit of mozzarella on top i didn't know if it was going to say sprinkle
10:23more mozzarella but i was going to do it anyways i've decided i'm going to use my hands they're all
10:28a bit messy but you know we can tidy them up that's actually not looking bad as long as it tastes nice
10:34it's now go in the oven for 12 to 15 minutes we have a lift off please work
10:44and whilst all the other bakers have their pizzas in the oven penguins cross they turn out good
10:49neve is still building her first pocket no it's going everywhere blowing out a little bit
10:57so i need to seal the edges
11:02i've got another pizza it's called a jumbo pizza for some reason not sure why
11:0615 minutes focus you've got 15 minutes left 15 minutes no they're not even in the oven who's on in
11:18the oven mine oh my god they bake for like 12 to 15 minutes i know they're gonna have to be under
11:24back then i'm just gonna bake two i know it's not good that i've only got two but i don't have time
11:31with neve's pizza rockets finally hitting the oven now i'm gonna get started onto the aioli
11:37aioli she can now join the rest of the bakers making their garlic dip to make the paprika aloli
11:43aloli aioli aioli i don't really love it add the egg yolk smoked paprika and garlic clove
11:52pitch salt to a measuring jug then blitz with a stick blender i think i just need to start adding
11:58in my oil the bakers need to take their time i'm gonna really slowly add the oil adding the oil slowly
12:05is key there we go it's really liquidy
12:12myla is yours like actually thick no mine's literally just a soup if they add the oil too fast
12:20i've used all the oil i don't know what's up with it the sauce will split what the
12:25it's just soup that is the only a bit is i think i have added too much oil too quickly so it's not

13:00again let's restart just making my alioli again it just went like soup oh it is going there it is
13:08getting thicker it's more mayo consistency now it's actually looking good come on work with me this is

13:20neve get your oil in really quickly five minutes bakers what is that my timer what okay i oh yes it
13:28is try to see what these look like oh wow very very hot see mostly didn't burst out
13:37no no and i just cheese spelled out that was my worst thing no they're looking much better than
13:42expected actually now i get how it's a pocket rocket because it can fit in your pocket one minute bakers
13:48you got one minute left one minute i think i'm going to put it in for one more minute can we
13:52i need to get these out the oven yeah i'm just mixing it off a little bit more hot hot hot hot hot
13:57far orange juice ah it's a bit burn on the bottom i'm just gonna cut off the little bits happy with that
14:03it's so sad i've only got two they could do with longer in the oven time's up bakers cheers louise
14:10time's up i'm so annoyed i only made two please bring your pizza pocket rockets forward and place
14:19them behind the photographs of yourselves on the front table yum yum that looks nice myla thank you i say

14:36the baker's pizza pocket rockets now face the judgment of rav and liam nice to see him
14:42it's rav and liam okay so we were looking for free pizza pocket rockets filled with chili paste
14:49tomato sauce and mozzarella and served with paprika aioli some of them are pretty good we definitely have
14:55some rockets lift off okay first one it's great that we have three and they look like rockets
15:04the flavor of your tomato sauce is really good but the base of your pocket rocket is slightly
15:08thick ever so slightly under baked and the aioli has split
15:14okay next one we've got a big rocket medium-sized rocket and a small rocket
15:19the rockets are really well baked they're really pleasant to eat i love how much chili paste is in
15:27there they're delicious but they i can't even call it aioli so oil and egg that's split completely
15:36some of them look a bit less baked on the edges than others i would have had these rockets in the oven for
15:41like just an extra minute but in terms of your flavor is pretty much spot on and your aioli is good
15:48it's come together really well there's a really strong garlic flavor which i really like nice one
15:56the rockets look very uniform in shape
16:02i think that actually in some areas are a little bit under baked just be careful how you seal your rockets
16:06because this one hardly has any filling but what is there is delicious and your aioli in terms of
16:13texture and consistency is smooth
16:17in terms of baking where the frost is are they look slightly over baked and the top of your rockets
16:23look slightly under baked the dough is really nice the flavor of the tomato sauce is wonderful
16:29there was a problem with the aioli and that it's completely split
16:31the bread itself is slightly thick that's probably why you couldn't get three rockets
16:41good flavor with the tomato sauce however i think they just needed to be more even so that they would
16:46bake evenly but your flavor in terms of your filling spot on they look really appetizing even though
16:53they're not necessarily the neatest shape they taste pretty good i was just a little bit worried that
16:59your bread was a little bit too thick but it's baked so thumbs up nice tomato sauce nice amount
17:04of filling we don't need to talk about the aioli porridge
17:10rav and liam will now rank the pizza pocket rockets from last to first
17:15in seventh place we have this one neve the filling was really good but we needed three rockets to settle
17:23two in sixth place we have this one byla really good attempt we really like the taste of these but
17:31they could have been a bit neater and that aioli had split miko is fifth cole is fourth and zacharia third
17:38leaving kitto and isla competing for the top spot in second place we have
17:44this one isla really good we like the shape of them the aioli was really good but we just needed
17:53them to be a bit more baked evenly look at that smile which means in first place we have this one kitto
18:04well done the shaping was great the filling was awesome so well done right bakers come and have
18:11a look at each other's bakes and we'll see you shortly for the showstopper well done everyone
18:16i'm very very happy with the result of the technical but isla was very close they all tasted delicious
18:24it's all to play for still i'm still gonna go really strong in the show supper i'm real upset that
18:29i got sixths but it's okay because i've got the showstopper and i'm gonna try make the socks blow
18:36off with my bread i'm not feeling great obviously i came last i think i will turn it around in the
18:43showstopper even if i don't get star baker i hopefully think i'll do enough to stay in
18:51the showstopper will now decide who will be this week's star baker and who will be leaving the tent

19:25characterized and be accompanied by a delicious dip you have two hours on your marks get set
19:33bake good luck guys oh my god what my bread's very big the bakers were given time yesterday to prepare
19:42and prove their dough overnight rising to the challenge yes dad jokes you see yourself as a role
19:48model i know a lot of young people are right to me and name use their role model is it no the vanity of
19:56the guy oh for today's showstopper we're asking the bakers to create their bread role model she's a
20:07very inspiring woman she's not only stood up for herself but for people of all color i want to be able to
20:11look at the showstoppers today and know exactly who their role model is if it's stormzy i want to see
20:17storms eating bread i'm making the most influential scientist of all time there's lots of different
20:23bread styles that the bakers can choose i really need to do well in this challenge because i didn't
20:27do very well in the technical so you want to pick a bread that's quick efficient and easy to make i want
20:33that soft crumb texture buttery pillowy i cannot get eliminated today i'm going to prove myself worthy
20:41the proof will be in the bread the proof will be the i'm too good man
20:51kitto hello tell us about your bread role model it's albert einstein why einstein einstein is really
20:58inspirational he has dyslexia like my brother zach awesome i'm doing a rosemary and strawberry
21:06bread loaf for his face i'm doing cinnamon and orange swirls for his hair and then i'm also doing
21:11iced buns quite a lot i love iced buns oh gosh no pressure kitto's ambitious homage to einstein is
21:21made up of three main elements they'll make up albert's face and hair as well as nod to his famous
21:26formula kitto will serve his showstopper with a hot chocolate and orange dipping sauce i just smelt
21:32that do you think it's a lot of rosemary or do you think it's a good amount i'm also adding a bit
21:37of strawberry essence so it doesn't overpower it yes i'm gonna trust you on that hopefully
21:43these little things here i'm gonna braid them no matter how elaborate the bakes are so that's for
21:49the face that is the hair the judges will want to instantly recognize the baker's chosen role models
21:55it does look like a now but it's about i've heard of rosa parks of course but i wouldn't be able to
22:00tell you what she looked like she looks like a normal human being right she went on the bus
22:06and she stood up for herself she didn't move for a white person and then what happened to her after
22:11this um incident on the bus oh she got arrested oh yeah a bit of a downer myla is recreating rosa parks
22:21with an enriched honey and cocoa brioche using fondant decor for the details and served with hazelnut
22:27and chocolate spread how was practice myla good so just a slightly underbaked so i'm just gonna try
22:32and put it in for about three more minutes and i just don't want to get eliminated today i mean if
22:36you can pull up for grey brioche brioche is very difficult so you have to breathe and have confidence
22:43i'm gonna flatten it out to make the face and myla's not the only one i hope it gets bigger and gets
22:48fluffier especially because it's a brioche banking on brioche my role model is floella benjamin there's
22:55a name from the park she came to my school and she was really smiley and bubbly and i just thought she
22:59was such an icon yeah she's great i know of course from play school children's tv in the 70s cut to
23:05floella and she'd say let's find out what's going on through the round window there'd be like a 15-minute
23:10clip of bottling factory in in stockport it's a very different time striving for star baker isla's
23:18created her bread role model with a cinnamon sugar swirl brioche decorated with a chocolate glaze and
23:24served with caramelized bananas how did you do this morning um so i came second this morning i think
23:29there's still a shot for sar baker look he's looking at you kitty that face he knows so the flavors are
23:41cinnamon apple and pistachios whatever likeness the bakers are trying to achieve their bakes need
23:47to be packed with flavor twisted the strawberry and the match of dough together and despite coming last
23:53in the technical it's kind of christmasy flavors because the person i'm doing wrote like a christmas
24:00neve is hoping to find joy by modeling her bread on a former finalist i'm making kim joy out of bread
24:07yeah nice she's a baker who's influenced me a lot i'd say and tell us about your flavors today
24:13milk chocolate white chocolate cranberries and also like a nice salted caramel sauce
24:19liam likes that do you think that salted caramel goes with the cranberries does it work nicely
24:23um um uh you know we'll see classic flavors and kim joy's level of presentation is neve's recipe
24:33for a comeback kim joy let me just oh i remember yes one of the two runners up on the 2018 great
24:40british make-off that's a known spin-off from this show oh and paul hollywood's bought a helicopter

25:04not puff up much in the oven i'll probably put it in for about 25 minutes but while most of the doughs
25:11hit the proving drawers kitto has so many elements to his bake i actually need to do my iced buns
25:18as well now so he's still making one of his breads i'm actually in a rush now i think yours is gonna
25:25be amazing thank you isla yours is gonna be excellent just not as good as mine i'm fine i don't need your
25:32approval oh whilst kitto and isla fight to be king or queen of the tent there's one baker who has always
25:40had the crown in her sights so i'm making princess diana because she was really kind and i think
25:47she was the sweetest person ever i'm making a strawberry and matcha bread and i've put a bit
25:52of white chocolate chips inside oh lovely from a flavor perspective it sounds really unique and
25:58different japanese milk bread is the base for miko's tribute to lady die it's made with the strawberry
26:04matcha and white chocolate filling with strawberry jam and matcha cream on the side do you have any
26:09worries about your bake today i'm just worried about the white chocolate leaving like small
26:12pockets in the dough but if i put the same amount of yeast as baking powder i did that and it worked
26:17better yeast and baking powder interesting good luck miko thank you okay proving 40 minutes so up against
26:28time here does anyone know how much time is left we've got a new health and safety officer at channel

27:32curd raspberry and lemon go well together but the cinnamon element you don't know until you've tried it

27:43will be created using cinnamon bread with poppy seeds and fondant adding a touch of growl to his roll

28:38with his scientific showstopper don't tell me brian may from queen pardon oh it's isaac newton
28:45but i think newton always get those two mixed up hoping for a stroke of genius zacharia will use
28:50apple cinnamon and pistachio bread for the face the hair will be made with individual cinnamon swirls
28:56filled with an apple puree if isaac newton hadn't discovered gravity we'd still all be walking around
29:01like this i don't think you walk like that yeah because there wasn't any gravity then he could be

29:14then just plain old isaac yeah i'm putting my bread into the oven now the judges are expecting perfectly
