00:01:44Each team member is completely different, but we come together to create something really beautiful,
00:01:49and that is exactly how you should be designing your garden.
00:01:51Different spaces, doing different jobs, but still being nice and cohesive.
00:01:55And on that note, I'm going to ask Adam to help me design this tricky back garden.

00:02:09I've used my initiative and started prep already.
00:02:11You know, we normally use one of those at the end of a job,
00:02:14and we kind of go for something a bit bigger as well.
00:02:16Oh, well, see, this is why I like working with Charlie.
00:02:19He's so knowledgeable.
00:02:20I learn so much.

00:02:34Well, I tell you what, this is a beautiful house, and what a great location.

00:02:43And you've saved some money on a roller, I see.
00:02:46Yeah, I've done a little bit of painting recently, as you can see, the wall here.
00:02:49I've tried to get some on the actual fence, but I'm now banned from painting.
00:02:52I think there's some on the footpath, too.
00:02:55So, guys, what do you want to see in the garden?
00:02:57Well, we've got an area around the corner here, which is pretty barren.
00:03:02Yeah.

00:03:03So, what we were looking at is just to have a nice coastal, tropical theme with, you know,
00:03:09some lush plants.
00:03:11Yep.
00:03:11We could make an outdoor shower work here.
00:03:12You've definitely got enough room for that.
00:03:14And, I mean, the beach, that is real close, isn't it?
00:03:16Yeah, it's like 150 metres.
00:03:17So, we go for a swim a couple times a week.
00:03:19I go for a run, you know, jump in the water, come home.
00:03:21At the moment, I run upstairs and get sand through the whole house.
00:03:24Yeah.
00:03:24She yells at me, so, yeah.
00:03:26An outdoor shower would be great.
00:03:27Well, if it's not sand, it's paint.
00:03:29Yeah, exactly.
00:03:31So, this spot does have a lot of shade, so it is perfect for the garden you want.
00:03:34But over here, we've got full sun.
00:03:36So, what do you guys want to see in this spot?
00:03:38Well, instead of just doing some plants or trees, what we were thinking about is just a nice edible garden
00:03:44where we can teach the kids about growing their own vegetables.
00:03:48Awesome.
00:03:48Well, all of this sounds really achievable.

00:04:14So, we're thinking of putting a screen, and while we're at it, we're going to update this gate
00:04:17and just modernise the whole look.

00:04:37She's got severe epilepsy and global development delays.
00:04:41So, that comes with its challenges.

00:04:43Having this space that we can utilise for her will be, it'll just be phenomenal.
00:04:47I'm thinking of starting on the gate.
00:04:50So, we've just got some treated pine here.

00:04:54So, we're going to start building.
00:04:55And basically, we're just going to use these bugle screws to screw it all together.

00:05:21With the frame together, before we clad it, we'll just give it a lick of paint.

00:05:38It's close to the path home, close to getting inside.
00:05:41But I also want to screen out those air conditioning units using the same screening that Adam's doing over there.

00:05:47And then I want to create a little area at the end of the garden here for you and Liz just to come down and just be a little private space for yourself.
00:05:53And I want to create that, you know, resort feel of when you're walking along a boardwalk.

00:06:33So, I have actually excavated the first one out, and that's because I don't want a big step up.
00:06:37And now all we need to do is tap this in and make sure it's level.

00:06:48Lay them out, and then, before we set them in, we can make sure we're happy with it.

00:06:59So, with the frame dry, we can now clad this beautiful gate.

00:07:07It's one of my favourite timbers at the moment.

00:07:10And do you like the idea how we're going with the different widths here?
00:07:13So, we're going from the 70mm board to the 130mm board, just to mix it up a little bit?

00:07:18And then I can pre-drill, and you can screw them off.

00:07:21So, now we'll just give it a quick sand, get rid of some of these rough edges.

00:08:11I was just going to use some of these 400 by 400 pavers.
00:08:14Now, these are 800 by 800, meaning we can get four in, right?

00:08:17But I didn't want to go to the hassle of having to mix up mud and all that sort of stuff.
00:08:20So, we can go directly road base, and then sand, and then our core 10 edges are going to hold it all in.
00:08:34I went for this Eurostone paver cypress colour, because you've got so much white around here.
00:08:39It is white, but it's got this kind of warm fleck through it, which is very nice.
00:08:42It combines perfectly with the Shapescape of steel, which kind of gives us that formwork for it.
00:08:47Sure.
00:08:48But we do need to get some paving sand in here just to lock it all together so it doesn't move around.
00:08:52Okay.
00:08:56The trick is you've got to have your sand really dry, otherwise it just doesn't go in.
00:09:05Very nice.

00:09:09So, we're just using some 66 by 30 pre-prime treated pine.

00:10:35A rock platform.
00:10:37What is a rock platform?
00:10:38It's that big open area of rocks below cliff faces that are exposed at low tide.
00:10:43It's full of lots of little pools, and it's a microcosm of animal life.
00:10:49Come with me.

00:11:13Well, we predominantly are here to educate the community, so school groups, primary school

00:11:21We are unbelievably blessed on the northern beaches to be quite literally surrounded by
00:11:26nature.
00:11:27So this is where people can be hands-on?
00:11:29That's right.
00:11:29Absolutely.
00:11:30Okay, because you can't be hands-on on the roof.
00:11:31No.
00:11:32You're allowed to touch anything on the roof, okay?
00:11:34Or on the platform or whatever.
00:11:35It's really important to us to connect people with nature.
00:11:37In order to protect and preserve and look after, we need to experience.
00:11:42So that's what we're all about.
00:11:45We're all about making sure that people have got the ability to be in these amazing spaces.
00:11:50Yeah.

00:11:50Obviously here, we're looking at a beach situation.
00:11:53That's right.
00:11:53Is this stuff you're going to find on the beach?
00:11:55So lots of local treasures there.
00:12:03Isn't that a fantastic thing?
00:12:04You know, it looks like a Christmas decoration almost.
00:12:08It does, actually.
00:12:08You spray it with a bit of silver stuff you can hang it on your tree.
00:12:11But, you know, this is an egg casing, isn't it?
00:12:13It is.

00:12:14You're a shark.
00:12:14The idea is the Port Jackson shark, once she lays the egg, she'll take it in her mouth,
00:12:19find a safe spot, maybe amongst a kelp forest or in a rock crevice, and she'll actually twist
00:12:24it like a corkscrew.
00:12:26So she would actually physically screw this into an area so it stays put.
00:12:31It's been cleverly designed to be hidden in lots of different places to keep it safe.
00:12:36Shine inside that, look how beautifully polished that is.
00:12:45So we've got the seashore up there, being the beach.
00:12:48Yeah.
00:12:48But this is an example of what we're going to see on the platform, isn't it, in this tank
00:12:52here.
00:12:52Yeah.
00:12:52It features things like our carpet sea stars.
00:12:56So it's actually eating.
00:12:58It is, yeah.
00:12:59What is this crawling up there?
00:13:01Uh-huh.
00:13:01I think that's one of our favourites on the rock platform, that's a sea hare.

00:13:06Yeah.

00:13:07And so beautiful.
00:13:08The colours and patterns that they have are really determined by what they eat.
00:13:13I'm coming out from underneath that rock.
00:13:14Oh, yes.
00:13:15I just saw the tentacle just come out.

00:13:17That's an elephant snail.
00:13:19An elephant snail.
00:13:20So one of the larger snails on the rock platform.
00:13:22These antennae at the front were always thought of as like elephant's tusks.
00:13:27It's quite big.

00:13:29They can be as big as your hand.
00:13:30We're going to hopefully encounter a lot of these animals when we get out on the rock
00:13:34platform.

00:13:35And actually look in the rock pools and see what we can find.

00:14:12They're incredibly well camouflaged, aren't they?

00:14:34So the elephant snail down there, it's just moving itself at the moment, maneuvering underneath

00:14:46They are beautiful because they really do look like flowers growing underwater.

00:15:01So as the waves wash past, they'll grab onto any of the plankton, the phytoplankton that's

00:16:32OK, when I think of my childhood growing up, a big part of our cooking, and my mother's
00:16:45cooking, was a crumble.
00:16:47So we used whatever was in season.
00:16:49So in summer, we used berries.
00:16:51In winter, we used quince and apples.
00:16:53Rhubarb was the standard.
00:16:54So today, I'm going to make my version of a crumble with a few different ingredients
00:16:59that my mother would not approve of.
00:17:02Right, so the crumble mix, 300 flour.
00:17:08This is the basic crumble mix.
00:17:10200 sugar.
00:17:14200 diced butter.
00:17:17And then, just to annoy, I'm going to put some oats in.
00:17:23I know.
00:17:24And then I'm going to put some chia seeds.
00:17:28That's really upset a lot of people.
00:17:30So, the secret to the crumble is, you dice your butter, and then you crumble it into your
00:17:38flour and sugar mix.
00:17:39Oh, I'm living in a no-man's land, nowhere, and no place left.
00:17:47The way to make the crumble is, it's called sanding.
00:17:48So, you get the butter, the flour, and the sugar, and you basically just work it through your fingers, until it starts to become sandy.
00:17:54So, just before I started filming today, my wife said, can you keep me some crumble, and don't chef it up with ginger and oats like you normally do.
00:18:03Sorry, Jan, no crumble for you.
00:18:10Okay, now I'm going to add my nutmeg.
00:18:12About that, my chia seeds, my oats, work that through.
00:18:23Oh, I can smell the nutmeg.
00:18:24And then what I'm going to do is par-cook this on a tray, get it nice and crispy, and it's soft underneath, and it makes it much easier to build the crumble.
00:18:31Any little bits you've missed.
00:18:41So, that's going to go in the oven at 160 for about 15 minutes to get a nice crust.
00:18:47All right, rhubarb, this has been washed.
00:18:55I'm just going to cut the tops off the grain.
00:18:57Get rid of that for the worms.
00:19:01So, if you haven't got rhubarb, you can use berries, frozen berries, fresh berries.
00:19:14In the winter, I love to use quince and apple.
00:19:17Quince takes a little bit longer to cook.
00:19:22Right, rhubarb goes into the pot.
00:19:23Next, ginger beer.
00:19:34Secret ingredients.
00:19:35So, I've got some beautiful ginger beer.
00:19:37So, the rhubarb ginger all goes together.
00:19:40So, that's about three, 370 ml, 350 ml, whatever ginger beer bottle is, that's the amount.
00:19:48Pinch of salt.
00:19:50200 grams of sugar.
00:19:51It's going to make it nice and jammy.
00:19:53Going to add a little bit of honey.
00:19:55Just a squeeze.
00:19:58I'm going to put in some fresh ginger.
00:20:01And it's good for you as well.
00:20:02It's a healthy dessert.
00:20:07Beautiful.
00:20:08I've got lemons here.
00:20:09All the lemons here, might as well just throw in a bit of zest.
00:20:11Beautiful.
00:20:12All right, just check the oven.
00:20:15It's starting to come together.
00:20:16It's starting to come together.
00:20:18It starts to stick together.
00:20:21It smells like cookies, like biscuits.
00:20:24All I need to do is add some apple.
00:20:26And this is the most work I'm going to do today, is peeling the apple.
00:20:29That's the hardest bit.
00:20:43I'm tired of peeling apples.
00:20:44I've changed the recipe to five apples.
00:20:47Now you're just going to take the core out.
00:20:50Just left with that.
00:20:51With a quarter.
00:20:52No core.
00:20:53No seeds.
00:21:00So now you don't want to go too small, so maybe just in half, because you want those chunks.
00:21:04You don't want it to break down too much.
00:21:06All right, so we've got all our fruit in the pot.
00:21:16Just give it a mix.
00:21:24Lid on.
00:21:25Keep an eye on it.
00:21:26Stir it.
00:21:27Once it's all sort of half cooked, we take it off.
00:21:29It's all about cavities, baby.
00:21:39Oh.

00:21:44Beautiful, crunchy on top.
00:21:46Soft inside.
00:21:47Got my mixture.
00:21:50So what happened is the rhubarb breaks down, sort of makes the sauce, and then the apple
00:21:58is half cooked.
00:21:59That gives you the texture.
00:22:00And now you just ladle it in.
00:22:02You don't have to go all the way to the top, because there will be a lot of leakage.
00:22:17Just dig in, and sort of smash it over.
00:22:24All the way to the edge.
00:22:27Right, that goes onto the tray.
00:22:29That goes in the oven.
00:22:30160.
00:22:31I reckon for about 20, 25 minutes.
00:22:33Golden on top.
00:22:34Bubbling.
00:22:39Okay.
00:22:40Oh.
00:22:42Look at it.
00:22:43Still bubbling.
00:22:44Oozing over the sides.
00:22:48So have a look.
00:22:50Crunchy on top.
00:22:51Soft.
00:22:52Still bubbling.
00:22:53Like this is oozing.
00:22:54It's like a little volcano of rhubarb.
00:22:56But look at the color of that.
00:22:58The syrup takes on all the rhubarb.
00:23:05Oh.
00:23:06That's good.
00:23:10Red hot.
00:23:11Molten.
00:23:12See our apples have still got that bit of texture in there.
00:23:17Some crumb.
00:23:18So the bottom of the crumb is all gooey and oozy and the top is crunchy.
00:23:25Bit of crème fraîche.
00:23:30Very arty.
00:23:31So I reckon this is a crumble even my mother would be proud of.

00:24:33But for families in crisis, basic household items like these are luxuries they simply cannot afford.
00:24:40Thankfully, one innovative Sydney not-for-profit called Relove is changing that,
00:24:45allowing their clients to furnish their place, all from scratch and all for free.
00:24:57So Ben and Wren, founders of Relove,
00:25:00first of all, I'm so blown away by the quality of all this amazing furniture you've got in here.
00:25:04I mean, it is top-notch.
00:25:07Yeah, it's a really important, really important part of our model to be able to give people beautiful things.
00:25:13I mean, you've got a bit of everything.
00:25:14So I guess you have learned over time that you don't choose someone's style.
00:25:18The beauty is they get to come in here and see what appeals to them.
00:25:21That's right. It's the dignity of choice.
00:25:23So people can come in and choose everything they need to set up their new homes.
00:25:26So how did a banker and an architect end up founding a charity like Relove?
00:25:33Yeah, it sounds like a joke, doesn't it?
00:25:34A banker and an architect.
00:25:35It does sound like the start of a joke.
00:25:36Yeah, look, you know, we call ourselves an accidental charity, you know.
00:25:40We had no idea that this was a need.
00:25:43And we'd been running a project.
00:25:45We'd been working with a wonderful organisation, the Women and Girls Emergency Centre.
00:25:50And we'd been out to visit one of the women's refuges during COVID.
00:25:53And, you know, that was a really profound moment for us.
00:25:57Once you see a mum sleeping on the floor and she's only been able to, you know, get a blow-up mattress for a kid, we've seen women sleeping on their clothes.
00:26:06And it's unacceptable.
00:26:08We're supporting more and more women over 50 who have been experiencing homelessness.
00:26:15Over 35% of the people that we support are First Nations people.
00:26:19That's not a target.
00:26:21That's the need in our community.
00:26:23Unbelievable.
00:26:23And all different.
00:26:24So a real variety of ages and circumstances.
00:26:26Yeah, it's kind of anyone you can imagine that find themselves in a position where they've experienced homelessness.
00:26:33And, you know, what we were really staggered when we were looking at who we helped last year is how many children.
00:26:40Where does all this furniture come from?
00:26:42The majority of this furniture is coming from hotel defeats and corporate relocations.
00:26:48But it comes from everywhere.
00:26:50There is so much stuff in the world.
00:26:51And we're saving about 2,000 tonnes of furniture from landfill every year.
00:26:56That's extraordinary.
00:26:57And furniture is the second biggest source of landfill in Australia.
00:27:00So each week we're supporting about 20 families per week.
00:27:03And usually that's with a full house of furniture.
00:27:06So since we started, we've supported over 2,000 families, which equates to over 4,500 people.
00:27:12And so that's 2,500 kids that we've supported through that time.
00:27:16When you're giving stuff to people that was, you know, excess to other people's needs, it makes sense.
00:27:23Well, congratulations on what you're doing.
00:27:25It's seriously impressive.
00:27:26And I've loved chatting with you, but I do believe we've got a truck to load.
00:27:29Yeah, I've got some work to do.
00:27:30So where's all this going?
00:27:40We're loading this up for a family who came through yesterday.
00:27:44So they chose all of their items for their new apartment.
00:27:47Wow.
00:27:48Including pictures, not just the practical furniture.
00:27:52Okay, so I should have actually mentioned this.
00:27:53So Ross and Diane, you're actually a married couple who've been volunteering for how many years now with Real Love?
00:27:58About two.
00:27:58Two years.
00:27:59So I'm interested to know the difference of what you both experience then, because Diane, it's very critical the role that you're playing with making the clients who come through feel very, very comfortable quickly.
00:28:10So when they come in, we don't ask them about their past.
00:28:14We just say, what is it you need?
00:28:16We say what we're going to do.
00:28:18We'll start in the warehouse.
00:28:20And then we move into the homewares area.
00:28:22They choose their cushions, their decorative items, their bedding, the toys for the children.
00:28:27So they're often unsure about whether or not they should be doing this, whether they deserve it, whether they're taking too much.
00:28:36But we encourage them to choose the things that they need.
00:28:40So then you get to experience the other end of it, where you go into a client's space, which might just feel completely bare and soulless.
00:28:47And by the time that you've left and all the other guys, they've all got massive smiles on their faces.
00:28:51You're helping them create a really beautiful, comfortable place to be in.
00:28:56Absolutely, yeah.
00:28:57And we don't just put the furniture in the living room and walk out the doors.
00:29:01We make up the beds.
00:29:02We put the lamps on the bedsides.
00:29:04And by the time we walk out, it looks like it's a home that's lived in.
00:29:08I love the fact that through everything that you both do, at either end of what you're doing for real love, there's just no judgment.
00:29:14It says a lot about showing kindness to another human, doesn't it?
00:29:17It does, and it's not hard.
00:29:19I know that there is a family that's waiting for this load, so we'd better get it off.
00:29:23Sure.

00:29:39Another amazing job.
00:29:40So, Tash Davies, your organisation, the Aboriginal Women and Children's Crisis Service, is one of many that Real Love actually helps.
00:29:46Tell me about some of the situations the women and children you help come from.
00:29:49Sure.
00:29:50The women and children that we work with are predominantly from domestic violence or family violence backgrounds.
00:29:55And they come to us.
00:29:57We're an emergency accommodation, crisis accommodation service.
00:30:00And with the help of Real Love, we're able to make those homes that they receive that are empty shelves into a home.
00:30:07Imagine coming home to an empty house.
00:30:09It's one thing to be housed, but not to have anything to fill it and make it a home.
00:30:13That's the difference.
00:30:14And that's what Real Love do.
00:30:16It's really interesting just looking around, like you have a look at things like the personal touches with artworks that have been selected or plants or even things as simple as crockery.
00:30:25So many people take that for granted.
00:30:27Obviously, the help that you're able to give these women and children starts from such a harrowing situation to bring them somewhere safe.
00:30:34But what are the reactions like when you're actually able to bring them back to a safe place that is fully furnished?
00:30:39The overwhelming joy that they all have is just, it's priceless.
00:30:43Yeah.
00:30:44Just being able to have that home and not have that fear.
00:30:47Yeah.
00:30:47And just to feel safe and secure.
00:30:49And that's, I think, why we do what we do.
00:30:52And the power of two great organisations working together.
00:30:55Oh, it's phenomenal.
00:30:56Like, you know, we're so lucky to have Real Love and, you know, we're just so lucky to have a service like that.

00:36:11So we're going to keep everything lush and green.
00:36:13These small pebbles work a treat for compacting this base.
00:36:16But we're going to go with the larger pebbles on top.
00:36:19That way it's more comfy on your bare feet.
00:36:21And also the little ones won't eat them.

00:39:00For the first ones, I'm creating these gorgeous hanging decorations.
00:39:04I am using some 3mm MDF.
00:39:08It's super cheap and easy to work with.
00:39:10I'm going to create three different sizes that you can see there.
00:39:14And all you need to do is just create a circle on your MDF.
00:39:19Like a holiday.
00:39:21Let them know it's time to celebrate.
00:39:25Start a party like it's New Year's Day.
00:39:29Raise your hand.
00:39:31It's a high, high, high, high.
00:39:33Come on.
00:39:38Ready?

00:39:51To create the channel, I'm adding a hole using a 4mm drill bit,

00:40:29And the benefit of that is also that you can use them all year round.
00:40:32So if I let go with the drop in the ocean
00:40:35My eyes are a foot of emotion

00:40:44And it is as simple as that.
00:40:48They look absolutely gorgeous.
00:40:49And to hang them, you can just use some fishing line.
00:40:52And by creating different sizes,
00:40:53it means you can group them together and create clusters.
00:40:55This next project is multi-purpose.
00:41:03So not only is it decor, it's also a really sweet gift idea.
00:41:06I'm using smaller circles this time.
00:41:08I've used a chalk paint in charcoal
00:41:10And I'm going to decorate the top of these.
00:41:12And that way they can be coasters,
00:41:14they could be a gift tag, a place setting,
00:41:16they could even be a Christmas tree decoration.
00:41:19And I'm going to put the name of each of my guests
00:41:21for Christmas lunch on the top here.
00:41:25As the finishing touch, I'm just using some raffia
00:41:35to tie in the top of each disc.
00:41:37And then that will be ready for the table.
00:41:39I'm going to tie them around these gorgeous napkins.
00:41:45It is amazing what you can do with an off-cut of timber.
00:41:48Using the same tool, I have created a little Christmas tree stamp.
00:41:52And it's as simple as cutting out the triangle shape,
00:41:55I then drew in some lines.
00:41:57And then I've cut out those lines.
00:42:00Now I'm just going to add some paint.
00:42:02I'm using this pretty pastel pink.
00:42:04Then I'm going to use it on some brown paper
00:42:07and create my own bespoke wrapping paper,
00:42:09similar to using a wood block to create a pattern.
00:42:13Once the paint's dry,
00:42:14it'll be ready for wrapping all of those Christmas presents.
00:42:16For this final idea, I'm creating a swag similar to bunting
00:42:24because it looks so nice hanging over the table
00:42:26or by a window, and this could not be simpler.
00:42:29Again, I've got some small circles.
00:42:31I've painted these ones in a soft blue
00:42:33because I want that beachy, coastal, Aussie Christmas feel.
00:42:37And then I've got some pre-cut letters
00:42:40which are just going to be stuck on the front there
00:42:43with hot glue.

00:42:58Now to hang them, I'm just using some twine
00:43:03and some two-tone chord.
00:43:17There's nothing quite as heartfelt as homemade decorations
00:43:20to add to the charm of Christmas.

00:43:25easy to make and very affordable.

00:44:27Now, when you're packing your swimmers,
00:44:29your rod, your reel,
00:44:30don't forget your golf clubs.

00:44:35About a 20-minute drive
00:44:37south of the marina
00:44:38at the foot of the Great Dividing Range,
00:44:40you'll find Bonneville Golf Resort.

00:44:51It's not too bad a shot.
00:44:52A couple of centimetres off the hole.
00:44:54You know, there's a very good reason
00:44:56they call Bonneville
00:44:57the Augusta of Australia.
00:44:59Just look at this landscape.
00:45:01And of course, the gardens,
00:45:02well, they're just as immaculate
00:45:04as the greens.
00:45:13Shane, this has got to be
00:45:14the best office you could ever have.
00:45:15Yeah, it's not too bad coming here every day, Graeme.
00:45:18Our job entails basically presenting the golf course
00:45:22the best we can for members and guests
00:45:24on a daily basis.
00:45:25What sort of area are you covering?
00:45:27That's why we're so unique.
00:45:29We're huge for a golf course.
00:45:31So we're running 60 hectares of refined turf.
00:45:37So that's a huge area.
00:45:39So how much is actually cultivated garden?
00:45:42We work on approximately 20 hectares of gardens,
00:45:45a variety of different gardens,
00:45:48from the formal to the exotic native.
00:45:51They really complement the golf course,
00:45:54and the golf course complements the gardens.
00:45:55Augusta is famous for its azaleas,
00:46:00so you'd expect them to be here at Bonneville,
00:46:02and they're looking stunning.
00:46:04And you've got to clip them really carefully
00:46:05to still get that beautiful flower display
00:46:08and keep the shape all the way through.
00:46:10These are these old Indian varieties,
00:46:13and they call them indicums,
00:46:14and they're just stunning.
00:46:15And in the background,
00:46:16you've got some lily pillies.
00:46:18Now, some of the new varieties
00:46:19get this wonderful new spring flush of growth.
00:46:23That adds colour to the landscape.
00:46:25Along with the cordilines
00:46:26and the Fijian fire plant, the acalipha.
00:46:34Down by the dam,
00:46:35where it's a little bit moister,
00:46:36the bottlebrush and the gaimea lilies
00:46:38are looking fantastic.
00:46:39But colour is really important all year round,
00:46:42not just in flowers.
00:46:43So you've got the crotons,
00:46:45and of course these hedges.
00:46:46This is Fertinia red robin.
00:46:47If you're looking for a hedge like that,
00:46:49that's the one to select.
00:46:50I'm going to swim for a weekend
00:46:55We're here on the elevated third tee,
00:46:57just overlooking the second green,
00:46:59and it's a beautiful landscape
00:47:01looking in both directions.
00:47:03Now, the course manager tells me
00:47:04that this is the most difficult tee
00:47:06of them all to manage.
00:47:08And the reason being,
00:47:09you've got this forest
00:47:10right onto the edge of the tee,
00:47:12and that means pretty much permanent shade
00:47:14right the way through winter.
00:47:16So how do you select plants?
00:47:18How do you grow grass?
00:47:18Well, you've got to have skill to do that
00:47:20and good plant selection.
00:47:22That's the bottlebrush.
00:47:23We've seen a few of them here
00:47:24in full flower.
00:47:26They're full of lorikeets and birds.
00:47:27You see, this is an animal habitat as well.
00:47:30But if you add to it
00:47:32by bringing in attractants
00:47:33like the birds
00:47:34and like the bottlebrush,
00:47:35then you're going to have
00:47:36a whole environment,
00:47:38a whole experience.
00:47:39That was a beautiful shot.

00:48:47The two grass trees indicate it's 150.
00:48:50Then there's one single grass tree,
00:48:53and it's 100 metres to the pin.
00:48:55How considerate is that?
00:48:56Every garden needs its source of water,
00:49:05even a golf course,
00:49:06and this one here has a beautiful billabong,
00:49:08and it's jam-packed full of beautiful native water lilies.

00:58:21Tonight I'm cooking my red curry prawn skewers
00:58:24with cucumber and pineapple salad.
00:58:32We're going to start off with the marinade.
00:58:35It's a fairly easy recipe.
00:58:38Not much chopping, I promise.
00:58:43We're going to start off with one cup of coconut cream.
00:58:47This is going to give you the beautiful richness
00:58:49in your marinade.
00:58:52And then I've got about two tablespoons of red curry paste.
00:58:58If you've got, let's say, a green curry paste
00:59:01sitting in your fridge, use that.
00:59:04I've got some ginger grated finely
00:59:07and two cloves of garlic,
00:59:13one and a half tablespoon of coconut sugar,
00:59:17one tablespoon of soy sauce,
00:59:22one tablespoon of fish sauce,
00:59:25and then I've got about one and a half tablespoons of oil.
00:59:30You mix them up.
00:59:37So that looks like it's well combined.
00:59:39Now add the prawns.
00:59:41It's so simple, like that's it.
00:59:43I've got slightly more than 500 grams of prawns here.
00:59:51And then mix them thoroughly.
00:59:54Make sure it coats all your prawns.
00:59:57And to that, I'm going to add some lime.
01:00:03This will sit in your fridge for half an hour.
01:00:07And while it's marinating,
01:00:09I'm going to start off with our pineapple and cucumber salad.
01:00:12On to our pineapple salad.
01:00:26I love this salad.
01:00:28This is on repeat during summer at my house.
01:00:32It's like a palate cleanser.
01:00:35So we usually have this with a nice, beautiful, thick, creamy curry.
01:00:41It breaks down the creaminess and it gives you a nice, fresh kick.
01:00:47And then I'm going to start off with my cucumber.
01:00:51If you want to actually prep this salad,
01:00:54just prep your pineapple and your cucumber,
01:00:58but do not dress it yet.
01:01:02Just dress it just before you serve it.
01:01:08I've got some coriander here.
01:01:11This is optional.
01:01:12And then, of course, I need a chilli in this.
01:01:23Next, I'm going to do the dressing.
01:01:26I've got a third of a cup of white wine vinegar here.
01:01:30You can use apple cider as well.
01:01:32About two tablespoons of sugar.
01:01:39And about one teaspoon of salt.
01:01:46The key to this is your taste buds.
01:01:52This particular dish needs to be sweet, sour, salty,
01:01:56with a hint of chilli for mine.
01:01:59So, mm-mm.
01:02:02Mm-mm.
01:02:04The pineapple is so sweet.
01:02:07Amazing.
01:02:09That's done.
01:02:14Ready to start skewering these bad boys.
01:02:19If you're using metal skewers,
01:02:21you don't have to prep the skewers,
01:02:23but if you're using bamboo skewers,
01:02:26do soak them for about an hour in water
01:02:29so they don't burn.
01:02:32This is such an easy marinade.
01:02:47Now that I've skewed all the prawns,
01:02:49I'm left with the marinade.
01:02:51Do not waste this marinade.
01:02:54We want to cook the marinade
01:02:56so that we can use it as a dipping sauce.
01:03:00While I'm cooking down the marinade,
01:03:03I have just preheated my grill.
01:03:07I'm going to add the prawns.
01:03:09I'm going to add the prawns.
01:03:11I'm going to go right there.
01:03:19The other really good thing about this recipe
01:03:23is that you can use any protein for this.
01:03:27I'm using prawns.

01:03:29You can use beef.
01:03:30You can use chicken.
01:03:33Gosh, that is smelling so good.
01:03:35I love the smell of the char-grilled prawns
01:03:39and how it hits the marinade.
01:03:41Amazing.
01:03:42It's only going to take about two or three minutes.
01:03:46Make sure you don't overcook them.
01:03:54Now that has thickened up into this beautiful dipping sauce.
01:04:04And then we have the salad that we made earlier.
