00:00Well the new restaurant is going to be called Rick's Dine at Coogee Beach and it really came
00:06about the fact that the the company I work with Salter Brothers we've got two restaurants one
00:11Rick's Dine at Mollymook and one Rick's Dine at Port Stephens and I never intended to open
00:20a third restaurant but when the opportunity and the the premises came up here I just thought it
00:26would be a really great place to have another seafood restaurant simply because it's it's by
00:32the sea on a beach and I particularly like Coogee I think it's a it's a great Sydney beach it's Sydney
00:40area it's very sort of informal and it feels right it feels sort of comfortable and the restaurant
00:49itself is right overlooking the beach so it's um for me actually being near the water eating my food
00:58is really important because it I think it just allows it makes people feel like having some
01:05lovely seafood if you're overlooking a beach somewhere we will have a lot of oysters a lot of
01:11prawn dishes a lot of scallop dishes a lot of raw or sort of semi a lot of dishes like sashimi or other raw
01:22or semi raw fish dishes like ceviche crudo a lot of first courses the entrees which would be sort of
01:35quick and easy and lovely and full of fresh flavors but then some sort of more substantial main courses
01:44which will include things like whole grilled snapper or fish and chips which we will put on fish pie
01:54seafood curries dishes that that I like
