00:04:44So what I'm thinking for this dessert is an enchemade in the shape of a snowball.
00:04:48Composed of a mascarpone whipped ganache, a fig ginger insert.
00:04:52So I'm decorating my dessert.
00:04:54It's going to be inspired by a snowball fight.
00:04:56I have a pretty great memory of being a kid and having snowball fights and being the mischievous
00:05:01little kids we were in school.
00:05:02My decorations are going to be the little gingerbread man throwing the snowball,
00:05:06and having alcohol sitting atop a vodka mascarpone sauce with some white chocolate snow.
00:05:11Working with alcohol can be very tricky.
00:05:13You have to find a really nice balance of not killing the judges' palates,
00:05:18but then you also want to have enough where they can actually taste it.

00:48:26So what I'm going to do is, once I spread them out flat on the sheet tray,
00:48:29I'm going to make just some lines through because I want them to resemble bricks.

00:48:43I'm a little bit frantic that we don't have the elf-pricaca eggs,
00:48:46so I'm just trying to keep it simple.

00:48:50A pavlova is basically a big baked meringue,
00:48:54and it should have a crisp outside and a nice soft tender.
00:48:57My fillings are going to be a little amount of fig jam and some lemon curd,
00:49:02and then I'm going to do a goat cheese, honey whipped cream,
00:49:07and then fresh figs and candied lemon peel and maybe some gold leaf.

01:00:21and then I'll put the nougat on top of that and then coat the whole thing in chocolate.
