00:06:38I've worked at multiple Michelin star restaurants, including Per Se in New York, French Laundry in Napa.
00:06:44I've been a chocolatier. I deserve to be the winner of this whole thing.
00:06:48I know that's scandalous to say, but, um, yeah.
00:06:52I'm gonna do kind of a layered entremé cake, kind of blueberry cremeau.
00:06:59Actually, we're not gonna do blueberry in the cremeau, so I have a white layer.

00:07:07I'm, I'm a list guy, so I have to kind of make a game plan.

00:07:12It is a layered mousse cake entremé, almond sponge cake on the bottom, a blueberry white chocolate mousse that's chill and frosty.
00:07:21A little of that lime mint jalapeno.
00:07:24So the jalapeno is the naughty ingredient.

00:07:26What, is there any naughty deco going on here?
00:07:28I'm gonna make some evil, abominable snowman eyes to give a little naughty evil side.

00:07:35I mean, I don't think I'm a good fit for the nice team.

00:07:58Um, I am making a Bananas Foster bread pudding. New Orleans is well known for its bread pudding, for its Bananas Foster. And I moved there about three years ago. I'm originally a Jersey girl.
00:08:09I come from a very big Latin family. I'm Puerto Rican. Lots of get-togethers growing up. Christmas tends to be a bigger family celebration.
00:08:17My husband and I met in high school in, uh, South Jersey. But I've always wanted to live in New Orleans. And now I am the pastry chef for big restaurants there.
00:08:26The food culture in New Orleans is like nowhere else I've ever been. The food is so good. It's so flavorful.
00:08:33So, warm and toasty. New Orleans, you gotta go with big, warm flavors. The custard is infused with a lot of spices, some rum, some bourbon, bananas in there. A little bit of orange just to kind of brighten that up a little bit.
00:08:45And then a Foster sauce anglaise.
00:08:48To decorate, I'm going to caramelize some bananas. You know, kind of shingle them on top, really nice. Little white chocolate snowflakes. Just really kind of bring it together. And also, when it's cold outside, what do you want? Bread pudding.
00:09:02I hope I can be the overall winner for my team. So, I gotta bring it. Sweet dreams.

00:13:14All of a sudden, I'm opening up a bakery, and I'm making all types of desserts.
00:13:17Today, I'm going to use my famous cheesecake recipe so the people back home will know exactly
00:13:23what this is.
00:13:24I'm going to put a little bit of peppermint for the cool and refreshing.
00:13:27And for the Naughty, I'm going to put a little bit of tequila inside of mixed berry compote
00:13:32and some mint, something chill and frosty.
00:13:35And then afterwards, I might just take a bite out of it before I serve it to the judges.

00:15:41And then we're going to throw some tequila in there to make it a little bit spicy.

00:16:35To decorate, I'm going to take my meringue, pipe it into strips, and make these chocolate snowflakes
00:16:42with a little bit of filetine on the top or a little crunch.
00:16:44I feel like it's a very easy and efficient dessert to make.

00:17:32I also wanted to make a smoked cinnamon Bavarian cream.
00:17:35This is hickory wood and you light it on fire and then it puts the smoke into this where
00:17:39the cinematics are.
00:17:40It'll kind of infuse the Bavarian that I'm making.
