00:08:14Christmas tends to be a bigger family celebration.
00:08:17My husband and I met in high school in South Jersey.
00:08:20But I've always wanted to live in New Orleans.
00:08:23And now I am the pastry chef for big restaurants there.
00:08:26The food culture in New Orleans is like nowhere else I've ever been.
00:08:30The food is so good and so flavorful.
00:08:32So warm and toasty, New Orleans, you got to go with big, warm flavors.
00:08:37The custard is infused with a lot of spices, some rum, some bourbon, bananas in there.
00:08:42A little bit of orange dust to kind of brighten that up a little bit.
00:08:45And then a Foster sauce anglaise.
00:08:49To decorate, I'm going to caramelize some bananas.
00:08:52You know, kind of shingle them on top really nice.
00:08:55Little white chocolate snowflakes.
00:08:58Just really kind of bring it together.

00:16:35To decorate, I'm going to take my meringue, pipe it into strips, and make these chocolate snowflakes
00:16:42with a little bit of filetine on the top or a little crunch.
00:16:44I feel like it's a very easy and efficient dessert to make.

00:17:24My decoration idea is to make kind of little chocolate logs for the bottom and kind of have it look like a little campfire with toasted meringue.
00:17:32I also wanted to make a smoked cinnamon Bavarian cream.
00:17:35This is hickory wood and you light it on fire and then it puts the smoke into this where the cinematics are.
00:17:40It'll kind of infuse the Bavarian that I'm making warm and toasty.
