03:48I'm going to make a chocolate pecan bourbon pie.
03:50And we're adding tons of bourbon, obviously.
03:54For this challenge, I'm feeling inspired
03:56by Thanksgivings at my grandma's house as a kid.
04:00We would often build leaf piles in the yard.
04:03So I'm going to decorate with leaf piles made out of pie dough.
04:07Because what's nicer than like a bunch of children
04:10playing in leaves?
04:11Making an all butter crust.
04:13I learned a long time ago that you
04:15don't want to leave your butter too big.
04:16The more you can work it into the dough,
04:18the more tender it's going to be.
04:20And I'm making a metal tin because it conducts heat
04:22faster than glass or ceramic.
04:24It helps you to more quickly evaporate
04:25the water in your butter to create the separation
04:28of layers in your dough.
04:29So that you don't have soggy bottom,
04:30that you have a good crust.
04:32And then for my filling, I pre-toasted my pecans
04:36just to express the oils, get them aromatic.
04:39The judges told me last time that my flavors weren't balanced.
04:41And I really want to make sure that I do that today.
04:43I tasted elimination last time.
04:45And I don't ever want to taste it again.
04:47I came here to win.
04:48I feel like it would validate a part of myself that's always
04:52wondered, like, should you have gone to culinary school?
04:55Or should you have done something different?
04:57I'm going to fight with everything I got.

05:04Coming into this competition in the beginning,
05:06I don't know that I did believe in myself enough.

05:16And part of the dream of doing that is being able to take my dad
05:20on a trip to Scotland.
05:22He had a liver transplant about nine years ago,
05:25so hasn't been able to travel as much.

05:29So what kind of pie are you making?
05:30So I am making a pumpkin black pepper.

05:35So that's kind of the secret ingredient.
05:36The black pepper really adds a little zing to it.
05:39And then I'm going to top it with a maple whipped cream,
05:41as well as stained glass confetti sugar cookies
05:44to represent Christmas ornaments.
05:47The reason I'm making it today, actually,
05:48is because of my dad, because he hates pumpkin pie,
05:51like absolutely despises it.
05:53It became my favorite pie as an adult.
05:54And now, out of spite, I bring it to Thanksgiving.
05:57So we're going a little bit naughty on the sense
05:59that my dad hates pumpkin pie.
06:01It's so ironic you're making something your dad hates.

07:57To add a little bit of a deeper flavor to my blueberry filling,
08:00I want to play into the warm spices like cinnamon and ginger
08:03and stuff that you would traditionally see around the holidays.
08:06And then also I'm adding bourbon.
08:08I feel like the flavor of the alcohol plays well with fruit,
08:11and it's going to taste bomb.
08:13And then I'm going to decorate it inspired by one of my old family traditions,
08:17which was where my siblings and I would not only leave milk and cookies,
08:20but we would leave shots and a pack of cigarettes for Santa.
08:26It was definitely naughty.

08:28So my pie is going to have a cream filling.
08:31There's going to be a spiced blueberry filling,
08:33and then I'm going to top it with pretzel cigarettes.
08:36Because I really want my pie to look like an ashtray.

10:24a goat cheese whipped cream Christmas tree and pie crust snowflakes and stars.
10:29I spent most of my childhood sitting on my grandmother's lap in the Lake of the Ozarks
10:34staring up into constellations.
10:36I learned constellations from her.
10:38So I'm really excited to make this in her memory.

12:08The inspiration for this dessert today is a combination of one of my favorite pie flavors.
12:13I'm making a pumpkin and cherry pie.
12:16Pumpkin pie was the first pie I was excited to eat when I got here in America, and I love cherries.
12:23So, I'm going to bake my pumpkin filling, and later, I will add my top for the cherries.
12:29And I will cover the pie with puff pastry lettuce, and I will decorate with cinnamon buttercream,
12:36cherries, candy cans, and hollies.
12:39For my cherry compote, I'm adding orange juice to make my cherry really pop.
12:45I will take Team Naughty down by the flavors.

13:18So, I want a little layer of frangipan, a little layer of miso caramel, a layer of cooked apples.
13:24And then, to decorate, I want to do a cute beanie-inspired hat.
13:29It's going to stay nice because it's going to be the cutest little hat you ever did see.

13:36So, the main thing with this challenge, I feel like there's something coming.

14:52I cook down the shredded apple so it really concentrates that flavor.
14:55So there's no mistaking it's an apple pie.
14:57And I try not to use too many spices because otherwise it just covers up all the natural kind of brightness that apples have.
15:03And then I am decorating it with braided pie crust and a little whipped creme fraiche.
15:08And I'm also going to make a little semi-rotten apple in the center with a little Christmas worm.
15:13And just to really tie in the naughty theme.
15:15It's a lot to make the filling and break down all these apples, but I think it can be very delicious and impress the judges.

15:52So a sweet potato and pecan pie sitting on a pretzel and ginger snap crust with a toasted brown sugar meringue.
15:59And I'm going to have the nice team made out of showbread cookies setting aflame a marzipan Santa's real naughty list, trying to destroy the evidence of their naughtiness.
16:09I've sort of made a name for myself as being the one to kind of go a little past the line on the naughty side, and I want to just keep that up.

16:17You have such an incredible energy and passion for this, I can tell.
16:20How did you find baking?
16:21Like, a lot of kids is kind of doing it for fun at home, and then as time went on, I started to continue to find my love and my passion for it.
16:29But it, like, I had a while where I wasn't sure if it was going to be something that lasted.

16:35Because I just had a lot of struggles with, like, food and eating.
16:38I'm diagnosed with anorexia.

16:40So I actually had to drop out of culinary school.

16:43Yeah, to go to a recovery.
16:45But since then, I've gone through treatment.
16:47I'm in the greatest place I've ever been in my life right now.
16:50And the last four months, I've gained about 50 pounds.
16:53And a big motivator in doing that was being able to come out here and live out a dream of being here.
16:58And it's like, even, like, if I'm not successful in every bank, just being physically healthy enough to be here is, like, a win in and of itself.

21:46I think that blade is a really, really strong technical scale.
21:49The crust is so beautiful.

21:54The cream is really good.

27:46The pecan pie is not only the one that's always fought over, but while we were kids, I think to distract us and keep us out of the kitchen, it was like, go collect sticks, go make leaf piles in the yard.
27:59So, I wanted to replicate the leaf piles.
