01:16Our story begins here, with coffee.
01:34Its flavor caught in the closed fist of the bean,
01:38freed then by the grinding mills in an endless cascade,
01:42brewed into a beverage that is consumed in the hundreds of millions of cupfuls each day.
01:48In this beverage that has become so much a part of our lives,
01:53there is a background, a tradition that reaches deeply into the culture of many lands.
01:59Its beginning under warm tropical sun,
02:04the care and attention to which it is treated during its journey from tree to cup.
02:12The many processes it must undergo are all devoted to creating good coffee,
02:22with its secrets of aroma and body and taste,
02:27to which the talents of millions of men are devoted during their lifetime,
02:31to which tradition, rich in the lore of centuries and far away places,
02:37sets its fine hand to bring these three elements into precise flavor.
02:41The tastes of fine coffee extend over a wide range,
02:51but for each palate, there is a flavor that is just right.
02:55Around the world they drink this beverage in its many exotic forms.

04:23How then do we make the perfect cup of coffee to our taste?
04:28Success lies in a single word, care.
04:33Three simple ingredients go into the brewing process.
04:37Water, coffee, time.
04:45Care will produce a perfect result every time.
04:51The beginning is the coffee pot,
04:53and there are as many varieties and types as taste will dictate.
04:58Yet, each is intended to do the same thing in a different way,
05:04to produce perfection in a coffee cup.
05:14To make a good cup of coffee, your coffee maker must be clean,
05:19free from all remembrances of that last pot of coffee,
05:23ready to begin its work anew, fresh and really clean.
05:29Water.
05:31Into a hundred thousand pots an hour,
05:35water flows in the coffee making process.
05:38Water.
05:39Too much?
05:41Or too little?
05:43Boiled first?
05:46Or later?
05:47Or not at all?
05:49For how long?
05:51And yet, there is only one correct way.
05:56Water.
05:58The first element.
06:00Carefully measured, clean and cold.
06:03Three quarters of a measuring cup for each cup of coffee,
06:07then brought to a full boil.
06:15Coffee, fresh.
06:18And again, questions.
06:20What grind?
06:22Percolator?
06:23Drip?
06:24Or fine?
06:25How much?
06:27Coffee.
06:29The second element.
06:31Your favorite blend.
06:38The proper grind for your coffee maker.
06:41One level CBI measure per cup.
06:50This, found in many homes, is the same as this.
06:55A coffee brewing institute approved measure.
06:59So whether you use one or the other,
07:02the measurement will be the same,
07:04and it will be accurate.
07:22The boiling water now passes over the coffee,
07:25and the brewing process begins.
07:28The flame is lowered.
07:30And, well, watch.
07:33The third element is time.
07:37And it too must be measured accurately.
07:41The minutes counted.
07:43The flavor will emerge as the process continues.
07:48The taste of coffee heightens and increases
07:52until all that is good has been extracted.
07:55In this method of brewing, percolator,
07:59six to eight minutes over gentle heat.
08:02And then, the liquid is coffee.
08:14From these grounds, there remains nothing more to gain but bitterness.
08:18No amount of cooking can extract another ounce of good taste,
08:22not another iota of good flavor.
08:27In the drip method, the coffee is measured and placed in the pot.
08:36The water, carefully pre-measured and brought to a full boil,
08:46is poured, still boiling, over the coffee.

09:05The time, it should take only four to six minutes.
09:08In the vacuum method, the coffee is carefully measured into the top bowl.
09:17The water is brought to a full boil before the brewing process is allowed to begin.
09:24The time, not more than three minutes after the water and coffee are in contact.
09:41Stir gently during the brewing process and lower the heat.
09:58That's all there is.
