It's an annual celebration of a revered noodle soup and on Day one of this year's International Laksa festival, rivalry is as fierce as ever. The event encourages diners to vote for their favourite dish from a smorgasbord of over 140 culinary creations in the lead-up to a grand finale at the end of the month.

00:12When he came to Melbourne for a Melbourne laksa festival, we all Darwinites living in
00:16Melbourne went and voted for Jason and he won, of course.
00:19Even though he's already won two Golden Bowl awards at previous laksa festivals, today
00:24with the 2025 festival underway, he's still refining the recipe.
00:28Your actual broth is your foundation.
00:30So once you have your foundation then it's a matter of just building layers and flavours
00:34and it's just like building like a high rise.
00:37And once you've reached the top, you've pretty much mastered it.
00:40Fierce rivals Copy Stop are turning up the heat for this year's festival with a Chinese
00:45twist on their crowd favourite soup.
00:48Today we are getting a new dish for laksa festival in Makal Stop, it's Nyonya laksa.
00:55Meanwhile in Catherine, reigning regional people's choice winners Bao and Chong have chosen to
01:00change last year's winning ingredients.
01:02We got a very good recipe last year for the pork and the chicken but this year we tried
01:07to bring something more Australian because I believe that Australians really love beef and
01:12briskets also.
01:13And as foodies cast their vote for their favourite soup or laksa inspired dish, fishos are out
01:18casting a line in search of the elusive million dollar barra.
01:22There are still 11 red tagged fish on the loose in top end waters, each attracting a
01:27one million dollar prize.
01:29What would your reaction be if you caught the million dollar barra here today?
01:32I'd probably jump off and do a backflip in the water, to be honest.

01:36It times in nicely, you know, we had lots of tourists during the dry season.
01:40They start to back off as the heat hits us but then the locals and the gunfisher so to speak
01:47all gear up.
01:48The 11th iteration of the million dollar fish competition runs until March next year.
