Darwin’s event draws thousands of global laksa enthusiasts each year

One of Australia’s spiciest festivals is underway in the northern territory. Darwin's International Laksa Festival is a mouth-watering celebration, featuring everything from ‘laksa inspired’ ice-cream to some unique twists on old classics.

00:00Here in Darwin, the International Luxor Festival is back for another year.

00:05Now you might not think it, but this hot and spicy soup is a favourite of Territorians,

00:10even as the humidity increases through the month of October.

00:14Now I'm here with Jason, who's a Luxor producer in Darwin, and you've actually won a couple

00:19of awards, haven't you?

00:20Yes, I have, Lillian.

00:21We've done great over the years.

00:23We took out the first prize when Darwin International Luxor Festival started back in 2019, so we

00:29took that out, and a few years later we did our back-to-back, and yeah, it's been great.

00:35We took a gap year last year, only because I wanted somebody else to embrace and enjoy

00:40the journey that we've managed to fortunately have, but for 2025, well actually 2024, we're

00:45actually back in it this year again to give it another crack.

00:49Yeah, so part of the Luxor Festival is a competition to see who can be crowned Darwin's greatest

00:55Luxor.

00:56You've obviously won it several times.

00:58How are you feeling about your chances this year?

01:00We're excited.

01:01We've got a great community in Darwin and great followers, and I think we'll go, if not

01:06winning, very close to winning.

01:08And are you trying anything new for this year of the Luxor Festival?

01:11Yes, we have.

01:12For the last four weeks, we've tried to bring out a Darwin-inspired by Luxor dish.

01:17We did the traditional mac and cheese Luxor, so that's on offer to the public, and yeah,

01:22I think it would do well.

01:24Mac and cheese Luxor doesn't seem like a combination that would work.

01:27Why does it?

01:28I reckon it works, and the feedback that we've had, it only consists of no more than 10 ingredients,

01:33but with our mac and cheese combined with our secret liquid of gold, which is the Luxor,

01:39there's well over close to 15 ingredients just to produce that mac and cheese Luxor.

01:46There you have it.

01:52you can try throughout the Darwin International Luxor Festival, running all through the month

01:56of October in the Top End.
