We join Eric in the back yard where Trixie and Chubbs are sunbathing before heading to the kitchen. Eric is trying something different today, a cauliflower grilled cheese sandwich. He uses the cheese grater to “grind” the cauliflower, something he was really overthinking, adds eggs, parm and spices, then squares it up in the pan at which point it looks like a comedian rather than a noodle. He shows us the final product and gives a review. Meanwhile Amberlynn is on Twitter defending her pride for her car. Later that evening the roomies have a game night playing Mario Party. Amberlynn says she’s alright with not drinking but seems to be super thirsty since Beck is having a glass of wine. The Mother’s Day weekend derailed the challenge when Amberlynn spends the day with Beck’s family. She announces on Twitter, but doesn’t film, her first day of the 2018 swimming season at the lake.

01:31So right now I'm just deciding to make me like

01:35I mean, I haven't ate today
01:36So I don't know if you'd really call it breakfast
01:37But it's I guess more of like a lunch meal
01:39I'm making grilled cheese
01:41It's this recipe that I found on here
01:42I don't have a food processor
01:44So I just use one of these things that we have
01:46To grind cauliflower up into this bowl
01:49And then it says add two eggs
01:51Some salt, some pepper, some parmesan cheese
01:53And Italian seasoning
01:54And then you mix it all up
01:55And then I'm going to go over there and grab a pan
01:58Heat some olive oil up in the pan
02:00I use avocado oil
02:01I don't use olive
02:02And then scoop it out
02:03And put it into the pan
02:04And try to shape it into
02:05Well like this
02:06Try to shape it into like toast
02:08Cook it on five minutes on that side
02:10And then flip it over and do five minutes on the other side
02:12Add the cheese and let it melt
02:13Make grilled cheese
02:14So I'm excited to try this
02:16I was nervous to attempt it
02:17I was going to have Ricky grind it
02:18Because I was worried I was going to mess up the cauliflower
02:20I was like I'm not going to do this right
02:21I was like I know Ricky's done this
02:23But I was like I've never done it
02:24So I was like I'm going to mess it up
02:25I don't even know if I'm using the right one
02:27I don't know I was overthinking it

02:29But it was actually rather simple
02:31So the part that I'm really actually most nervous about
02:33Is trying to get it into the pan
02:35With it like in the shape of that
02:36And getting it to stay in that shape
02:38I'm kind of nervous about that
02:39But I followed the directions down to a T
02:42So I think it's going to go well
02:45I'm going to start getting this
02:47The pan heated up with oil in it
02:48And then I'm going to show you guys
02:49If I can do it or not
02:50And what it looks like after I get done cooking it

02:55With trying to get it in the shape of like toast, bread, whatever

03:15It just like reeked of just like cauliflower

03:18And then like now that it's cooking
03:20You can really smell like the Italian seasoning in it
03:22The salt, pepper, and like parmesan
03:25Like you can start to smell the seasonings in it
03:27The five minute timer is almost up
03:28So I'm getting ready to flip them
03:30So hopefully I don't have any problems or an issue with that
03:33Because it just seems like whenever I do like eggs and stuff like that
03:36I don't want to flip them
03:37The top part starts falling apart
03:38And I'm nervous that's going to happen with this
03:40But hopefully it doesn't
03:41And I'm able to flip it correctly
03:43It just stays in the shape that it needs to
03:45This turns out great
03:46And I can continue to make these
03:47Whenever I'm hungry
03:48Or want something for like a month or a snack on
03:50So I wish me luck
03:51So I finally flipped them
03:52And this one did not really give me that much trouble
03:55It did somewhat
03:56But this one as you can see
03:57It fell apart right there
03:58I was so nervous
03:59Cause I'm like I knew that was going to happen

04:02But I'm about to attempt to put the cheese on it
04:03And hopefully once both sides are cooked
04:05If it cooks through thoroughly
04:06It's not going to fall apart anymore
04:08And I just hope that it turns out tasting great
04:10I mean if it doesn't look the best

04:12But I'm worried about the taste
04:13So I'm going to attempt to put the cheese on it

04:35So I can just like dip it in there
04:36If it doesn't taste the greatest

04:42So I'll tell you guys what I think about it

04:45I'm just going to finish my cauliflower grilled cheese
04:47I mean it was no grilled cheese by any means

04:50Considering it is cauliflower
04:52It wasn't bad
04:53Especially with the marinara sauce
04:54I mean I tried it by itself without it
04:56And it really wasn't bad
04:57It's just one of the parts where it got like a little burnt
04:59I was trying to like let it cook
05:00Because I was afraid where it was falling apart
05:02I'm like well maybe I need to let it cook longer
05:03And then it got burnt
05:04So I'm like I don't know
05:05The part that I found
05:06That I struggled with the most
05:07Going back and watching the recipes
05:09Just like when she put them in the pan
05:10And she like scooped them out
05:12And then she just flattened them
05:13With her spatula
05:14And put it in the shape of toast
05:15And then she flipped them
05:16And they did not fall apart like whatsoever
05:18They held together
05:19She used a whole head of cauliflower
05:21And so did I
05:22She only used two eggs for it
05:23I followed it exactly down to a T
05:25So I'm like I don't know
05:26Why mine were falling apart and hers weren't
05:28And hers weren't
05:29I think that if they would have stuck together
05:30And held together like hers did
05:31I think it would have turned out much better
05:33But I don't know what happened with mine
05:35I mean I'm gonna try it again obviously
05:37Because I have a whole bowl full of the mix in there
05:39And I only made one
05:40Going forward maybe
05:41I'll just get better with it in time
