01:2832 year old Vicky Zuchiewicz has two loves in her life.
01:33The first is her family, 2 year old daughter Ella and her partner of 5 years, Damien.
01:38The second is cheddar cheese.
01:42I get through a packet of cheese every single day.
01:47It's always been my life, really.
01:49For over 28 years, Vicky has lived on a cheese-based diet,
01:53refusing to even try vegetables, fish or meat.
01:57Vicky, when pushed, her barriers go up straight away
02:00and Vicky tends to push in the opposite direction
02:04out of sheer bloody mindedness more than anything else.
02:08Digging her heels in also extends to the couple's social life.
02:12Vicky refuses to eat anywhere other than in her own home.
02:16And even a takeaway is a problem, unless it's round, with cheese on.

03:05With Vicky failing to share Damien's love of food, family life is now seriously under threat.

03:17Married last year, Vicky refused to go on honeymoon.
03:20And despite five years of trying, Damien still can't get Vicky to eat out.
03:24For our anniversary, we wouldn't go out for a meal.
03:27I don't know what we'll do.
03:30Probably get Domino's pizza in.
03:33But with three-year-old daughter Ella eating more than mum, there's a real need for change.
03:38I miss out on so many things and I don't want my daughter to notice and start picking up bad habits from me.
03:46I have to do something about it.
03:48It's day one of a month-long dietary makeover for Vicky.

04:26Right, Vicky, the next four weeks are going to be really tough, but you're going to have our help and support along the way.

05:14And so she might be picking up on the kind of food that you're eating, which could have a negative effect on her in the long term.

05:34How nice it would be for us to be able to be a family unit and do the other things that families need to do and do together without the planning that goes into it or the limitations that we have in place.

06:05It was, it's everything that I know, but obviously when it's put in front of you, it reiterates the problem and that everyone knows it's a problem for me.
06:14So do all the comments about Ella and her health and seeing you as a role model, is that something that you feel really motivates you?
06:22Absolutely. You know, I'm not in a position to just play around now.
06:26It's always like the do or die card is being dealt to me. If I don't try now, I will never change.
06:32Well, we've got a lot of work ahead of us now, Vicky, so are you ready for it?
06:37Yep.
06:38Well, let's begin.

06:41Felix and Charlotte have organised a surprise for Vicky.
06:47One that they hope will shock her into action.

06:57What a waste of pizzas.
07:01We've taken a look at your diet, done a few calculations.
07:04In total, you eat 550 pizzas a year, which quite frankly...
07:12Is a lot of pizza.
07:13And makes me feel slightly nauseous.
07:15It does look absolutely terrible.
07:17And smells.
07:18And smells really bad.
07:20And one of the things that's predominant about this is the amount of cheese on top.
07:24But this is not the only cheese that you're eating in your diet.
07:33I mean, Vicky, you eat a twelfth of this every month.
07:36A twelfth is a huge chunk of this.
07:38And the idea of having to sort of wade through that seems like an ordeal to me.
07:43Is this a year then?
07:45Yeah.
07:46This is a year.
07:47How does, I mean, how does that make you feel looking at that?
07:49Very solid, isn't it?
07:51It makes me feel sick to smell.

08:00I think we need to just maybe further illustrate that point.

08:14Well, this is pure animal fat.
08:16And we worked out that this is the amount of animal fat in your diet over a year.
08:21Which is twice as much as a healthy person should be consuming.

08:28So, we've got a lot to be working with here and I need you to remember all of this.

08:43I'm never going to live it down now.

08:46I think today's exercise really shocked Vicki.
08:50She only shops for pizzas daily to avoid seeing how much she actually really eats.
08:57And the accumulation of what she eats is truly appalling to see in its entirety.
09:02To have that kind of diet for some 28 years suggests a very strong-willed person.
09:08And I haven't seen that yet, but I expect some resistance, some contriving behaviour.
09:12So, I still think we've got a lot of work ahead of us.
09:1524 hours later and Vicki is still coming to terms with the truth about her appalling diet.
09:23I went to bed and I was just mulling over this information.
09:27I just couldn't stop thinking about the lard, the cheese, the pizzas.
09:33And I was nearly physically sick quite a few times last night.
09:38I just couldn't sleep.
09:40It made me feel so poorly that I think it actually affected me more than I actually realised.
09:49I really want Vicki to succeed at this.
09:52It's crucially important that she does for all our sex.
09:56I mean, for her more so than anybody, but also for Ella and for me as well, I guess.
10:03Vicki was born into an affectionate, loving family in Ebervale, South Wales.
10:16A middle child, she was a real daddy's girl.
10:19But at the age of three, she began to show the first signs of an eating problem.
10:23She was very stubborn. She always wanted her way or no way at all.
10:27So that was a little bit of difficulty that she would never sort of toe the line.
10:39Vicki's father worked away from home, so it was left to her mum, Eleanor, to try and get her to eat.
10:44They had the same personalities, which meant they continually disagreed about everything.
10:51I just remember lots of arguments.
10:55I was just being fussy, I was just, you know, being a little madam,
10:59and everyone was all so frustrated with me.
11:02At age nine, Vicki began retreating from family meal times, choosing to eat in her room by herself.
11:07When we had family meals, her meals were always, you know, always very separate from ours.
11:12As she became a teenager, that's when she became more stubborn
11:16and would decide on what she wanted to eat.
11:19When Vicki left home, her relationship with her mum improved, but her eating deteriorated.
11:25Sadly, Vicki's mum died three years ago and never got to see her daughter eat a full meal.
11:30In less than a month, Vicki will face her final challenge, her first meal out in years.
11:42Charlotte wants to kick start her dietary makeover, so has sent her some homework in the form of a healthy hamper.
11:49We need you to wean you off your favourite food, cheese.
11:54Start by clearing all the blocks of cheese from your fridge.
11:58Now in here is Mummy's cheese.
12:02Mummy's not allowed cheese anymore.
12:04And that went.
12:08Well done.
12:10Bit gutted, because it smelled really nice when I threw it away.
12:14But it's got to be done.
12:16So I got rid of all the cheese in the house.
12:18So it better be a good replacement.
12:22What was this?
12:27I don't know.
12:29To replace her cheese-free fridge, Charlotte's provided a hamper of fresh vegetables to eat over the next week.
12:35And has even suggested the first recipe of carrot and swede mash.
12:39Mummy's got to put some carrots, look, and some swede and make mash.
12:47What do you think that's going to taste like?
12:49Is it going to be yummy?
12:50Oh, yeah.
12:51I've never ever cooked any of anything in here in my life.
13:00Faced with the prospect of a dramatic change, it's not long before Vicky's stubborn side reveals itself.
13:06The thing is, I wouldn't eat this in a million years.
13:10I'm just going to taste it like that.
13:12I don't like it anyway, so.
13:17It's not going to mash.
13:22It's too hard.
13:25I don't find that very appetising.
13:31Is it ready?
13:37Yeah.

13:39Why don't you taste them?

13:51This is going back to my childhood.
13:52This is exactly what I used to do at the dinner table.
13:53I think they would keep saying, you know, try, have a few more mouthfuls, you know, and then I just end up sort of just squishing it all down and sort of moving it around my plate.
14:02So it looked like I've ate loads, something like I've ate loads, something like that.
14:22And then, yeah, yeah, I'd be put in the bin.
14:30Halfway through the first week and Vicky is showing signs of falling at the first hurdle.
14:34Charlotte calls her to London for her first one-on-one nutrition session.
14:38It's really important from this exercise that I really gauge where Vicky's boundaries lie and where we need to move her to and how we're going to do that.
14:48It's also really important that Vicky sees those issues as well.
14:53With Vicky reluctant to eat vegetables in the confines of her own home, Charlotte is keen to see how she'll cope with a bit of encouragement.
15:01Hello.
15:05Is that your first reaction when you see this array of foods?
15:10Only because I see salmon and I remember my first memory of food going off of food was salmon.
15:17That's the first thing I've got the memory of.
15:19The reason that these foods are here particularly is because I wanted to find foods that really plugged holes in your current diet
15:27and also tried to make amends for some of the ills in your diet.
15:32I want to try with a cucumber first.
15:38Let's just get in there.
15:39Okay, that's one of my worst.
15:41That's probably, you know, that's why you're giving it to me.
15:43Oh, very good, okay.
15:46I'm just not going to smell it.
15:49What's your feeling about cucumber?
15:51Oh, do you know, even if somebody's got this on their breath, it makes me feel sick.
15:54When was the last time you ate this?
15:56I'd never actually eaten it.
15:58Oh, okay.
15:59So it might not actually taste the way you believe it tastes?

16:04Okay, then you should taste it to find out, I think.

16:09On a scale of one to ten, how much would you say you dislike that?
16:26I'd say about five.

16:56Having come so far, Charlotte decides to test the true extent of Vicky's boundaries.
17:01Right, so what's your thoughts when you see this?
17:05I hate fish, and I won't even let my husband cook it in the house.
17:11Can you cut a piece off?
17:13Salmon is one of the dishes that completely put Vicky off food.
17:18This is the first time she's come this close to eating it in three decades.
17:22I don't think I'm going to like this.
17:24But you don't know.
17:37That's really nice.
17:43It almost seems like she's two people.
17:45There's the one who has really boxed herself in into this tiny, constricted, bland diet.
17:54And then there seems to be someone in there who's quite curious about things...
17:57...and then quite open-minded when she does try things.
17:59So I'm going to be very interested to see where these two people meet.
18:02And I think where they meet is where we're going to meet the resistance.
18:12Vicky's proved that she can eat vegetables and fish with Charlotte watching over her.
18:16But the biggest test will be coping on her own.
18:19Charlotte's homework for Vicky is to eat two new veg a day.
18:22But it's not long before she demonstrates that the next few weeks won't be easy.
18:27I'm going against the wishes of Charlotte this evening.
18:31And I'm going to have cheese on my jacket potato this evening.
18:35I'm having it with my jacket potato.
18:40I feel like an alcoholic.
18:42It's like a secret mission, off to get the cheese.
18:46I have to do it into the cover of darkness.
18:54Demonstrating that her problem is less about a phobia and more about mindset,
18:58the next day Vicky has her first session with psychologist Felix.
19:03He wants to delve into her past and find out where her eating problems first began.
19:08So Vicky, can you tell me a little bit about how your diet is a problem for you in your life?
19:13Well, the main problem I have with it is the fact that I can't go out for a meal.
19:18I don't have dinner with my family.
19:22I can't go abroad because I won't like the food.
19:24Every time there's any family get-togethers,
19:29then I've always got to be sort of segregated off to get the things that I like.
19:34That sounds really constraining, doesn't it?
19:37Yeah, absolutely, absolutely.
19:39But it is for everybody who be around me, to be perfectly honest.
19:44So it's tough on you and tough on others as well?
19:46Yeah.
19:48So it makes sense, then just avoid it if it's a negative experience.
19:51Yeah, absolutely.
19:52I have been told that when my parents went away on holiday, I was staying with my nan and I wouldn't eat at all.
20:02And then apparently when they come back, my dad asked me if I wanted some food and then I would just start eating.
20:08And if he was away, apparently I'd just lie on the sofa and cry, wouldn't do anything until I could speak to him on the phone.
20:15But I've pretty much got to have my own way about nearly everything.
20:19What would happen if you didn't get your own way?
20:21I'd be so angry.
20:23Because what would it mean to you?
20:25Because it wouldn't have been my decision.
20:28No, it's not about that. It's that I like what I like.
20:31Right.
20:32And if somebody changes that, it would be something that would just forever annoy me.
20:35When her father was absent, Vicky revealed she would actually go on hunger strikes.
20:41That's exactly the time when she started trying to really control her food.
20:45I think unless Vicky's really willing to look at some of those underlying childhood issues, she's unlikely to ever embrace eating new foods.
20:53It's the end of the first week, and without Charlotte next to her, the stubborn Vicky is refusing to embrace any kind of changes to her diet.
21:05I want pizza.
21:07Do you have?
21:09Yeah.
21:11I really do want pizza.
21:14Um, alright, well how about you save that pizza?

21:20Why don't you have some...
21:22Damien, stop trying to...

22:19When I'm at that point that I'm hungry and I've made my decision that this is what I want, there's no way I am going to be sold a different food.
22:35When I want a pizza and I'm really hungry, I will have one.
22:40No stopping me really.
22:43It's the start of week two.
22:44Charlotte is concerned that Vicky is losing the commitment needed to conquer her cheese habit.
22:57So she's brought her to London for an appointment on Harley Street.
23:02Today we're meeting Dr Pixie and I really hope that what we're going to discuss is going to shock Vicky into understanding the long-term health implications of her diet.
23:12Dr Pixie McKenna is a GP with a special interest in eating problems.
23:20She's performed an analysis of Vicky's blood and has some serious news for her.
23:24I'm very surprised you're looking so well actually.
23:30Now we've worked out that you're taking twice the amount of salt that you should be in your diet.
23:35It's a well-known medical fact that that will push up your blood pressure.
23:43A cheese-based diet is high in salt and saturated fat.
23:46An adult should not consume more than six grams of salt a day.
23:50Vicky consumes nearly twice this.
23:53This high salt intake puts Vicky at greater risk of high blood pressure.
23:58Dr Pixie wants to shock Vicky into action.
24:00So she gives her some double vision goggles and makes her dizzy to simulate the symptoms of high blood pressure.
24:16Now, do you want to step up?
24:19Just try and catch you.
24:23How are you feeling now?
24:25Dizzy.
24:26You also have nausea, headache, giddiness, sickness, buzzing in your ears and you feel really, really, really unwell.
24:38Would you be able to cut a piece of cheese and eat it?
24:41No.
24:43Do you feel like you could do much?
24:45No. I think I need to lie down.
24:47Yeah, that's exactly how you would feel if you had really high blood pressure.
24:52While cheese does have some health benefits, in vast quantities it can be a killer.
24:59A diet high in saturated fat can create a build-up of arterial plaque in the veins, leading to circulatory problems and eventually even stroke or heart disease.
25:07We researched and we actually found, especially for you, a picture of a heart of a man in his forties who had a diet very similar to yours.
25:19Now, can you see that?
25:21Is that all just fat?
25:23Bloody hell.
25:25So is that actually a layer of fat completely around the heart?
25:28That is...
25:29It's almost strangling it.
25:30Insulating it, but strangulating it.
25:32Yeah.
25:34It's not very nice.
25:36It's not very nice, is it?
25:37Vicky was very frightened by the fatty heart.
25:40Is it enough to get her to change her diet?
25:43She's so happy-go-lucky and easy-going.
25:47I'm not sure.
25:4824 hours later and the session with Dr. Pixie still has Vicky upset, but not about the fatty heart.
26:00I wasn't particularly happy about how it went.
26:03I felt that the way that I was being spoke to was as if I had complete control of the situation and that I could have eaten a healthy diet off of my own back quite easily and I was just choosing not to.
26:16I'm well aware of my problem and there's just, for some reason, I've been unable to go and eat vegetables and meats and everything else.
26:26So I sort of felt that she didn't take that into consideration.
26:30I felt like I was just a bit more lazy.
26:33That's how it came across to me.
26:34Over halfway into the process and Vicky is still failing to let go of her old habits.
26:48Concerned that they have less than two weeks to inspire any kind of change, Charlotte and Felix meet up in London to compare notes.
26:54She's not doing the homework particularly well. I mean, she will eat lots of different foods when she's with me, but when it comes to being on her own and doing her homework, there's such a resistance to change there.
27:07She's still got this childhood mentality. Yeah. And we need to really move her from childhood to adulthood. Absolutely. And I don't think she realized fully how difficult this was going to be and how much effort she was going to have to put in.
27:23We are really going to have to push her outside her comfort zone. And I think there's a danger that we could push her so far that she shuts down really.
27:30Charlotte and Felix believe that Vicky's relationship with food is trapped in childhood. For a second healthy hamper challenge, Charlotte wants to bring out the parent in Vicky.
27:43Bloody hell, I bet it's recipes.
27:45She's not only got to prepare meals for herself, but for daughter Ella and husband Damien as well.
27:51Right. You have been provided with eight recipes. Your aim for this week is to cook a meal for Ella each day for the selection of recipes provided.
28:00Cooking a family meal will be a first for Vicky, having always relied on husband Damien to do all the cooking.
28:07Salmon and prawns. No way. I don't think I'd eat any of those.
28:13Everything in here, personally, you know, I know it's for Ella, everything's very chunky, which I don't like.
28:19These are all completely different things now. So the control aspect sort of comes in and I just, I feel like I don't want to try it. I don't want to try them.
28:32Especially if I'm cooking. Because I'm rubbish at cooking.
28:39Once again, I shall go and get the fishmonger to prepare the fish.
28:44This is the first time she's ever cooked for me. It is a massively significant moment because from this point on, Muggins isn't doing all the cooking.
29:01Damien, like, can you just turn off Damien's thoughts? This is for me.
29:07I think you'd be alright. I think you'd be alright with that.
29:10Do you want to make it for me? No. I want you to make it for me.

29:18For her first meal, she prompts for vegetable chilli.
29:30My major problem and battle with vegetables has always been it being lumpy. Not taste, texture.
29:37That is just horrible.
29:40Well, you've just got the hump because you don't want to do it. That's bottom line.
29:43I hate food.
29:48I know you do.
29:50But that's why we're here, Vicky, you know?
29:54That was Vicky's typical reaction that she normally has to food.
29:58I've been surprised it's been quite held in for so long.
30:01She's managed to stop herself from doing it, I guess, up until now.
30:06But you could see, as soon as she was set the challenge today, for the week, that she was determined, almost, to set herself to a failure because of her mindset.

30:21At this moment in time, I just don't want to do any more cooking. I'd rather not do it, to be honest, at this moment in time.
30:38Because, you know, it's all right if things got a bit worse as it went along, but, you know, I just think that that's going to set me right back.
30:51Felix believes Vicky's problems with food are rooted in her childhood, so wants to find out more.

31:05He heads to Swindon to meet up with her father, Paul.
31:09This particular photo, the teacher, or whoever was taking the photograph, told her to pose like that because I was quite, I said, well, Vicky, that's not your pose.
31:17Very angelic.
31:18That's right, yes. And that wasn't Vicky.
31:20This is when she's in her teens now.
31:23She's got her finger up there, so, you know, I thought you were taking a photograph of me.
31:30As Vicky's mother, Eleanor, passed away three years ago, it's left to Paul to fill in the missing pieces.
31:36Well, I suppose when Vicky was born, being the second child, I was rather hoping it would be a boy.
31:43Right.
31:44So, for a millisecond, may I add, I was a little disappointed.
31:48However, Vicky didn't disappoint me, to a certain extent, because she was into cars, little cars, garages and things like that, and she would be fighting boys.
32:00Right.
32:01So, to a certain extent, she had the traits, I thought, of a boy, and then I spent a little more attention to her.
32:09And we've got a very glamorous photo here.

32:30Yes, I suppose I can remember, I have to say vaguely, because I was at work, you know, I had a long working day, and my job also meant that I was away for periods of time.
32:44However, I can recollect that, you know, there was a concern about her eating, whether she was eating sufficiently enough to sustain herself.
32:55Because there was some mention that Vicky would go on these kind of hunger strikes when you're away.

33:01I understood whenever my phone call came in to the home, there was Vicky, who had been lying on the settee all day, wouldn't move.
33:09Then suddenly, when that phone call came through, and it was me, she became animated and grabbed the phone, and there she was, talking away.
33:18As soon as the conversation was finished, she would just go back and lie down on the settee.
33:22A bit of a hard situation, and my father would have a little girl, too.

33:26Part of me would be secretly delighted if my daughter is, you know, kicking up a fuss, because I'm not there.
33:31It felt good that, you know, that somebody so small would be missing you, would understand that, you know.
33:40A lot of Vicky's problems do stem from her childhood, and especially around the times Paul was away on work.
33:47I think what Vicky seems to have done is started to control her eating as a way of getting attention to make up for the loss of her father.
33:57And now that she has her own family, that's really getting in the way from what she really wants to do.
34:03With Vicky failing to embrace the challenge of cooking for her family, Charlotte has arranged to meet her at a soup kitchen in Reading.
34:17She wants to inspire her by getting her to cook for the homeless.
34:21I'm really hoping that today Vicky starts to understand how nurturing cooking can be, and that when she starts to cook for herself, understand the process of making food and giving it to other people, that she connects that with nourishing and enjoyment and pleasure.

44:11and where her immediate family members are buried.
44:14Vicky's never actually spoken to her father
44:17about her problems with eating.
44:19And I know that a lot of Vicky's anxiety around eating
44:22was because her father was absent, working away a lot.
44:25And so today I'm hoping that by bringing her here
44:28to this special, neutral place,
44:31they can feel comfortable and safe enough
44:33talking about their feelings, about their relationships in the past,
44:36when Vicky's problems started surfacing.
44:39And after that I'm hoping they'll get some sort of closure
44:41on what happened and be able to move forward.
44:43Okay, so Paul and Vicky, here we're in a place of special significance to you both.
44:49We want to get some closure for what went on at the time.
44:53Even though it's happened in the past,
44:55it's never too late to get some new clarity on it.
44:58During that time that Vicky developed this problematic relationship with food,

45:04What is it you needed at age four to hear from Dad
45:07that if you heard this you wouldn't have needed to dig your heels
45:11and then react that way?
45:13I think having stress at four is very difficult to handle.
45:17You know, I suppose, and I was quite an aggressive kid.
45:20And I think that was probably where a lot of it stemmed from,
45:23is just, you know.
45:24If I had my time over again,
45:26it would have been more sensitive to the issues of the family.
45:30If I could have looked forward and seen that,
45:33we would have been very positive and done something about it.
45:36It would have spent more energy and made it more of a priority.
45:38So, yes, if I had time back again,
45:41I certainly would have spent a lot more time
45:43in dealing with what was a fussy thing
45:46and taking a more serious view of it.
45:49So, there is a concession from Paul that had to work,
45:54but I do apologise for not being around.
45:56And what your dad is saying now is,
45:58in hindsight, I'll have more of an input in that.

46:03I think it would just, you know, be an elevating feeling, I suppose.
