00:06Well, I booked a ticket and flew all the way to Oakland, California to meet Lenny,
00:11the 105-year-old starter living at the Clermont Club and Spa,
00:15also known as the White Castle in the Hills.

00:19Executive chef Joseph Pear walked us through a day in the life of the renowned pastry program,
00:23rolling, folding, and shaping the dough before it's placed into these cube molds.
