00:00This is the margarita for people who actually like the taste of tequila.
00:03The Tommy's Margarita is a bartender favorite.
00:06And as Food & Wine's recovering bartender, I'm here to show you how to make it.
00:09First step, prepare your glass.
00:10Make sure that you're rubbing the lime on the outside of the glass
00:13and you want salt on the glass, not in the drink.
00:15A half ounce of agave nectar.
00:16Followed by fresh lime juice.
00:18Two ounces of tequila.
00:19Tommy's Mexican Restaurant kind of changed the entire game of tequila
00:23as Julio Bermejo adopted a program that only carried 100% agave tequila.
00:28The entire theory behind this is that you want a cocktail
00:31that brings out the best in the tequila and doesn't cover it up.
00:34And it is very important with this drink to make sure you have a very hard shake.
00:38Very hard shake.
00:39Fully incorporate the agave.
00:41Margaritas were traditionally blended or sometimes served up.
00:44He actually kind of popularized the idea of revisiting a margarita on the rocks.
00:48I've never had one of these before.
00:50They're freaking delicious.
00:51I'm excited.
00:52I had to stop myself from cursing there.
00:53That is so good.
00:55Right?
00:55It really is very tequila forward, but it's not too tart.
00:58It's like the most balanced margarita I've ever had.
