Chicken Tetrazzini is a classic, creamy pasta dish that combines tender pieces of chicken, earthy mushrooms, and a luscious white sauce, all baked together to golden perfection.
This comforting casserole has stood the test of time as a beloved family favorite. With its rich blend of flavors and hearty ingredients, Chicken Tetrazzini offers a deliciously satisfying meal that's perfect for both weeknight dinners and special occasions.
Whether served on a chilly evening or at a festive gathering, this dish never fails to impress with its creamy texture, savory depth, and irresistible aroma.
INGREDIENTS (All the ingredients are measured in a 250 ml cup)
200 grams of spaghetti
3 tablespoons of butter
¼ cup of all- purpose flour
The required amount of salt
¼ to ½ teaspoon of pepper powder
1 cup of chicken broth (Save 1 or 2 tablespoons extra to use latter if needed)
1 and a ½ cup milk
½ cup heavy cream
250 grams of cooked chicken pieces
200 to 250 grams of white button mushroom cut into slices
½ to 3/4 cup of parmesan cheese
Parsley cut into small pieces (Optional)
DIRECTION
Cook the spaghetti as directed on the package, using minimum cooking time
Drain and keep
Keep the cooked chicken pieces ready
Meanwhile, in a thick-bottomed pan, melt 1 tablespoon of butter over a medium temperature
Add the mushroom pieces and a bit of salt. Stir now and then and cook the mushroom pieces until all the water is reduced and the mushroom pieces are completely cooked. Keep aside
Heat 2 tablespoons of butter over a low heat
Add the flour
Stir and fry for 2 minutes or until the flour is smooth and bubbly
Switch off the stove and add the chicken broth, heavy cream and milk
Mix well so that there are no lumps
Switch on the stove again and keep the stove on a medium heat
Add the pepper powder and a bit of salt
Stir and cook until the mixture starts boiling
Reduce the temperature of the stove to low and stir and cook for another minute
Add the mushroom pieces, cooked chicken pieces, mix together
Add the cooked spaghetti and mix well (you can add a bit of water or stock if you feel the sauce is too thick)
Switch off the stove

Spoon the spaghetti mixture into a ungreased 8x8x2 casserole or a baking tray
Sprinkle with cheese
Bake for about 25 to 30 minutes or until bubbly in the center
It is ready to serve
Can be served up to 6 people
