Bread Upma is a delicious and easy-to-make Indian snack or breakfast dish that transforms simple bread into a flavorful, savory treat.
Made by sautéing crumbled bread with a mix of aromatic spices, vegetables, it’s a quick and satisfying way to use up leftover bread.
This dish is a delightful combination of textures and tastes—crispy on the outside yet soft on the inside.
Bread Upma is perfect for those busy mornings or as an evening snack, offering a comforting, wholesome meal that’s full of flavor and warmth.
INGREDIENS
2 eggs
3 tablespoons of cooking oil
½ teaspoon of mustard seeds
Few curry leaves
1 medium onion cut into half slices
2 to 3 green chilies split and cut into small pieces
1 teaspoon of coarsely ground ginger
1 medium tomato cut into medium pieces
¼ teaspoon of turmeric powder
5 slices of white or whole meal bread cut into small pieces
Required amount of salt
2 to 3 tablespoons of finely chopped coriander leaves
DIRECTIONS
Beat the eggs adding a bit of salt
Heat 1 tablespoon of oil in a pan over a medium heat
Scramble the eggs and keep
Heat 2 tablespoons of oil in a thick-bottomed vessel over a medium heat
Add the mustard seeds
When they start popping, reduce the temperature of the stove to a low and let all of them pop
When they stop popping, add the curry leaves and let them sizzle for a few seconds
Add the onion slices
Increase the temperature of the stove to medium
Sauté the onion slices until they are soft
Add the green chili pieces and sauté for a minute
Add a little bit of salt and stir
Add the ginger and sauté until its raw smell is gone
Add the tomato pieces and sauté until they are soft and mushy
Add the turmeric powder and sauté for a minute
Add the bread pieces and stir, so that they are combined with the onion and tomato mixture
Add a bit of salt if needed
Reduce the temperature of the stove to low, cover and cook for a minute
Open the lid and give it a good stir
Add the scrambled eggs and mix
Add the coriander leaves and mix
It is ready to serve
