00:21 the minimum required to pass legal standards. As of the latest data from October, just under
00:27 14,000 establishments failed to reach the minimum legal standard, but some places fared
00:32 worse than others. In Liverpool, Bath, Southend-on-Sea, Manchester and Birmingham, there's a two in
00:38 five chance of choosing a business not up to legal standards. But across all the more
00:42 than 280,000 studied food venues, only 73% of them are fully compliant. Officers rate
00:49 establishments on their handling of food, how food is stored and prepped, the cleanliness
00:54 of facilities and how food safety is managed. How does an eatery's hygiene rating affect
