An India Today Special Investigation Team undercover investigation led by Nitin Jain exposes severe hygiene and food safety violations at eateries surrounding the New Delhi Railway Station. The report shows food being cooked in the open directly beside dirty drains, with kitchen staff failing to use mandatory gloves and hair nets. At Madras Hotel, the manager claims basic regulations do not impact operations and asserts that possessing a food license shields establishments from scrutiny. He acknowledges pest infestations are common, stating staff personally kill cockroaches rather than undergoing official regulatory audits. The findings reveal a total lack of municipal and food safety inspections at high-traffic eateries catering daily to thousands of travelers.

00:00Now let's turn our attention to one of the busiest places in the national capital.
00:06I'm talking about the railway station.
00:08Thousands of people eat around the New Delhi railway station every day.
00:12But what happens in the kitchens behind those plates?
00:15India today went undercover and found food cooked in open next to dirty drains and a
00:22manager who says a license is all you need.
00:27This is what travellers in the national capital are eating.
00:51This is New Delhi railway station, the heart of the capital.
00:58So many locals, so many tourists, so many families grab a bite here.
01:05But you will be shocked by the kitchens we saw.
01:10Food is cooked in the open, right next to filthy drains.
01:16The cooks follow no basic hygiene, no hair nets, no gloves.
01:23This is the Madras Hotel and the manager has no answers as to why basic norms are not being
01:40followed.
01:53We then asked him about pests and cockroaches all over.
01:57And his response?
02:00We do everything we can.
02:07And the police.
02:08That's the one that we have to do.
02:08We are going to do pest control.
02:09So we do pest control.
02:10We do pest control.
02:12We do pest control.
02:12We do pest control.
02:12But they will not do it.
02:14We will not check.
02:15I am saying that it is common.
02:17It is common.
02:17It is a pest control.
02:20We have to do pest control.
02:28Once again we ask, how is it that nobody checks if food safety is being followed?
02:35We are reassured that there is no issue whatsoever as long as you have a license.
03:02Food being cooked outside on a dirty lane next to a drain.
03:07We see it all.
03:10And yet Kumar denies it.
03:31A license on the wall is not hygiene in the kitchen.
03:35When food for thousands of travellers is made like this, who is checking and how often?
03:44The answer is nobody.
03:47A report by Special Investigation Team's Nitin Jain for India Today.
