An India Today Special Investigation Team probe exposes severe food safety and hygiene violations at popular dhabas in Delhi's Paharganj. At Punjabi Dhaba 7876, staff revealed that hygiene rules are observed only during inspections, alleging regular payoffs to officials while skipping mandatory hairnets and medical checkups. The manager also hinted at illicitly sourcing contraband meat. A visit to the nearby Royal Flavours outlet uncovered food being prepared right beside an open drain undergoing cleaning. The management dismissed safety gear rules because it was Sunday and acknowledged uncontrollable rat infestations in the cooking area, exposing zero compliance with food safety regulations.
