A cowboy steak is a dinner statement piece of meat. Weighing about 2 1/2 pounds and standing several inches tall, it’s as spectacular to look at as it is delicious to eat. In this video, Martha Stewart shows you how to grill this special steak, starting on the stovetop in a grill pan and finishing in the oven.

00:00A cowboy steak like this, well, it will certainly make a statement when brought to the table.
00:04Rub it all over with safflower oil. Now a sprinkling of coarse salt rubbed in with some
00:10freshly ground black pepper. And if you don't want this pretty bone to burn, just wrap it
00:16in a piece of aluminum foil. Place it one side down in your hot griddle pan. So now we're going
00:23to turn the meat at two and a half minutes so that we get a really nice crisscross marking
00:29on it. And your oven must be preheated to 425 degrees because this meat's going to go in for
00:3612 to 15 minutes after it is browned like this. Now transfer the meat to a rack. It has to
00:44reach
00:44125 degrees in the middle of the interior for medium rare. This steak has to rest for 10 minutes
00:53just so that all the juices redistribute throughout the meat. And this may be the best steak you'll
00:59ever eat.
