08:59one big difference between farming and foraging
09:01is the nutritious value of some of the plants
09:04for example a wild blueberry
09:05would have probably three or four times more antioxidants
09:08than the farm ones
09:10here we are looking at some wild blueberries

10:17here I would be definitely looking for chanterelles
10:20and lobster mushroom probably

10:24to start foraging with somebody that already knows
10:26if you don't have that chance
10:28once again
10:29start with like a few basic spaces
10:31don't try to go too hard too quick
10:33because that's how there is accidents and poisoning and stuff
10:35and get a couple of books
10:37but never rely on any special tip to say
10:40if something is edible or not
10:42you need to learn it properly

10:54so this one is a chanterelles
10:57mushrooms can't do any photosynthesis
10:59so they need to get their food from somewhere
11:01they're going to be relying on trees or plants
11:03to get the food
11:04because the plants are doing the photosynthesis
11:05the mushrooms
11:06they're going to attach themselves
11:07to the roots of a tree
11:10with what is called the mycelium of the mushroom
11:13the mycelium is actually the main organism of the mushroom
11:17so here is a good example actually of some mycelium
11:20that has been like developing into that rotten log
11:23most of the mushroom life is mycelium
11:27imagine that underneath the soil here in the forest
11:30there is a tree with branches
11:33and that tree would be actually the mycelium
11:35the mushroom get food from the tree
11:37and the tree partially get food and water from the mushroom
11:40and what we see as a mushroom
11:42is a reproduction part of the mushroom
11:45the fruit body
11:46and that fruit body is going to really spore
11:51look at this
11:52oh
11:54don't step there
11:55that's quick mud
11:59so here we actually have two different spaces of chanterelles
12:01so this one is a yellow chanterelles
12:04this one is a white chanterelles
12:06you won't find them in supermarkets or anywhere
12:08you will always find the yellow
12:10because the white tend to bruise orange really quickly
12:13so the shelf life is not as good
12:15but the white chanterelles is really like firmer and meatier
12:19and last year we actually tried to do a vegan pulled pork
12:22so you basically shred them
12:24and the texture is really fibrous the same than chicken
12:26so try this one you will see
12:28that's anymore
12:29yeah
12:30but it's kind of peppery
12:31like
12:32i like it though
12:33some mushrooms they find raw
12:35some of them are not
12:36like you can't eat a morel raw
12:38if you eat too many
12:39it's likely you're going to have trouble to digest them

13:45and then there's boss chanterelles king belit

13:57it's important to never consume anything foraged
14:00unless you are absolutely certain of its identity and edibility
