11:10my starter is a pan seared king scallop with a beetroot gel apple puree
11:15roast celeriac fondant toasted hazelnuts and a parsley oil

11:22My main takes it back to how I've grew up it's going to be called the simmer down curry
11:28Essentially is a curry chicken with aromatic rice and mini fried dumplings
11:34My main is kind of inspired by what I love with cooking asian fusion
11:41So I'm doing a satay chicken supreme sweet chili garlic noodles stir fried veg
11:47and some toasted peanuts pickled chilies pickled chilots
11:51Both very interesting already
11:54Now jean tell us about your dessert
11:56This one takes it back to my own childhood
11:59I'm not afraid to or ashamed of how I grew up and I feel like I have to take inspiration
12:04from that
12:04It's going to be a conflict tart with plantain jam paired with a cream liqueur infused custard
