00:38the food system accounts probably for around a third of greenhouse gases emissions.
00:44So that's actually a tremendous amount, a tremendous contribution to the warming of the planet.
00:49And tech, to address that, is emerging.
00:55And it's creating some interesting solutions, for example, in food waste,
00:58because one third of the food that we produce doesn't actually make it to the table.
01:05And since we all eat, this is just a tremendous number.
01:09Then if we can do something about addressing that, that is, you know,
01:12that is just so much resources basically used in a much more efficient way.
01:18So talk us through the solutions.

01:21So, I mean...
01:22That was the easy part, the first question.

01:25So when you consider, for example, in France,
01:27that more than 40% of fresh fruits and vegetables goes to waste, basically...

01:35So you can imagine, for example, that a supermarket uses AI to track, you know,
01:41which products are close to expiry dates, then decide to either give those away or discount them
01:47or to move them to another way that they can be used.
01:52And we'll talk about that in a bit, the other ways to use that waste.
01:55Or you can imagine that, for example, AI is tracking what the weather is doing
02:00and what that has meant for what shoppers are buying.
02:03So you can imagine that what you have on the shelves is different on a sunny day
02:08when people might want to eat a salad or on a rainy day when you might want to eat some
02:12soup, for example.
02:13Yeah, even when we don't talk about artificial intelligence, we talk about artificial intelligence.
02:18What about the food system at large?
02:19How can startups and technology reduce the impact on the planet?
02:24I mean, we know that a big part of the impact comes from animal agriculture,
02:28and that was a big theme here today.
02:30What can we do to reduce the impact?
02:33And some of that will come from alternative proteins.
02:35So there was talk about producing meat alternatives, as the name is called, from plant-based materials.
02:43Also from mycelium, so that's mushrooms, so making steaks from mycelium.
02:48And other things like insect protein, I'll get to that in a moment as well.

02:59Maybe I can convince you yet to eat a plate of mealworms.

03:06But I mean, there are certainly some solutions that we can figure out
03:10to make meat substitutes on a more planet-friendly manner.
03:16So insects as a source of protein, even if you don't want them on your plate.
03:20You know, chickens and salmon, they might be happy to eat them.
03:24Your dog or your cat might also be able to eat some insect protein.
03:29And at the same time, there's also, you know, food has changed over the years.
03:35Hamburgers, you know, that didn't exist 100 years ago.

03:39In Europe, 30 years ago, we might have said yuck.
03:42I mean, now we say yuck to insects, but maybe, I don't know, an insect protein bar.
