04:23The fish I love the most, I think, is the sea bass.
04:26That looks fantastic.
04:28And maybe we'll grab one of the sea greens.
04:32Okay.
04:33For the sea green, yeah?
04:34Yeah.
04:35Oh, nice.
04:36Oh, it's beautiful.
04:37Beautiful sea green.
04:38Yes.
04:39And fresh.
04:40There's something about looking at the head.
04:42Yeah.
04:43And that tells you.
04:43How fresh.
04:44Of course.
04:45The eyes and the gills.
04:46The eyes have to be clear.
04:47And look at those eyes.
04:48Yeah.
04:48That was pretty clear.
04:49And the gills have to be nice and red.
04:50So that's fresh.
04:51Yes, it is.
04:52The line is still in its...
04:53Yes.
04:54100%, sir.
04:55100%.
04:56And Clive, we're gonna get also some sardines.
04:58Sardines.
04:58I love sardines.
04:59It doesn't.
05:00These are very cheap fish in Morocco.
05:01Okay.
05:02Not even a pound a kilo.
05:03But it's the Morocco's second biggest export.
05:05Right.
05:06And this is the delicious fish to work with.
05:08Yeah.
05:09Yeah.
05:11Yeah.
05:12Yeah.
05:13Yeah.
05:13We're bringing our fish back to Faisal's Table 3 restaurants, which he opened just last
05:18year.
05:19I'm not going to pass up the opportunity to learn a few things from the...
05:23The man who has a coveted Michelin star.
05:25What are we cooking?
05:27One of my...
05:28favorite dishes when I left home was this...
05:33simple combination of peas and artichoke.
05:35When we made the menu, we wanted to keep that...
05:38the dish just changed it up a little bit.
05:41Okay.
05:42So we made it with fish.
05:43I must admit, I've never shelled peas before.
05:48Really?
05:49Yeah.
05:50For being in England.
05:51You get them in a bag, man.
05:52Oh yeah?
05:53No.
05:53They're not the same.
05:54They're not the same.
05:55But you perhaps should...
05:58You shouldn't even be in the kitchen, should you?
06:00You should be pulling out my teeth.
06:01The plan was to be a...
06:03dentist.
06:04Really?
06:05Yeah.
06:06I mean, they couldn't tell my parents back then.
06:08that I wanted to be a cook.
06:09No, no, no.
06:10I mean, I was exactly the same.
06:11I mean, my parents wanted a lawyer.
06:13Yeah.
06:14And I studied law at university, yeah.
06:15Okay.
06:16But I always wanted to be a journalist and...
06:18They were very disappointed.
06:19They're still ours.
06:20They're still ours?
06:21They're not talking to me.
06:23No, no, no.
06:24They've come around.
06:25Yeah, they come around.
06:26They've come around.
06:27But yeah, you know, you've got to follow your heart.
06:28Yeah.
06:28You know?
06:31I can really tell that Faisal...
06:33loves what he does.
06:34At the same time, we'll start cooking the artichoke.
06:37Okay.
06:38Like every nice meal in Morocco starts with...
06:40Starts with good olive oil.
06:42Olive oil, yeah.
06:43All right.
06:44Just leave that for a while.
06:46With a simmer for about a...
06:48An hour or so.
06:49And then we blitz it.
06:50We make a nice puree out of it.
06:51Yeah.
06:52And then we'll dress it under...
06:53And there are fish.
06:54This is definitely fine dining.
06:58With each individual dish given the utmost attention.
07:01And I can't wait to get tasty.
07:03For starters, it's a...
07:05For starters, it's a...
07:07For starters, it's a...
07:08Deconstructed sardine and tomato sandwich.
07:11Complete with a bread crisp in the...
07:13The shape of a fish bone.
07:18Is this a traditional thing?
07:19I mean, it's a...
07:20Just served in a very sort of...
07:21Exactly.
07:22Modern way.
07:23This is a childhood sandwich, basically.
07:25It's tomatoes and sardines and a baguette.
07:28And for the main course, that fantastically fresh sea bass we bought earlier on a bed.
07:33Of peas and artichokes.
07:34What's incredible is this fish was in the market this morning.
07:38This was in the market and now it's on our plate looking very, very posh.
07:43What do you think?
07:44What—
07:45What do you think you...
07:46What do you think you got in the D preventative bitter coconut rum,
07:54what's off?
08:00He—
08:01and my mouth.
08:04certificates—
08:06Yes.
08:07Thank you, Klaus.
08:08Works for me.
08:10Simple, to you, Chef.
08:11To you, Chef.
08:12Cheers.
08:12Cheers.
08:13Thank you, Klaus.
08:14Mmm.
08:17Cheers.
08:19Cheers.
08:21Cheers.
08:22An early morning walk around Casablanca's old city.
08:27Is the perfect way to start the day.
08:32Cheers.
08:33Cheers.
08:34Cheers.
08:35Cheers.
08:37Of course, it's because of Hollywood that many of us have such a romanticized vision
08:42of this place.
08:42The famous Rick's Cafe from Casablanca, of course.
08:47Except there was no real Rick's Cafe and the film was made on a studio lot in Hollywood.
08:52This was established in 2004, but you know what, still-
08:57It looks good.
09:02Morocco's melting pot culture, a blend of African, Arab, and European-
09:07makes it easy for anyone to feel at home.
09:12It also means that if you like antiques and vintage design like I do, there is no where-
09:17better in the world for an afternoon rummage.
09:20Writer Tahir Shah moved-
09:22to Casablanca from the UK 20 years ago.
09:25Hello.
09:26Hello.
09:27Clive.
09:28Ha-ha, Tahir.
09:29Ha-ha.
09:30And he's offered to show me the rope.
09:32Oops.
09:33This is from Art Deco Casablanca.
09:35Oh my word.
09:36That is a cocktail sh-
09:37Yeah.
09:38From the 1930s.
09:39That's beautiful.
09:40And when you see-
09:42stuff like that.
09:43Yeah.
09:44It means-
09:45It's part of the history of the city.
09:46I'll tell you what, I bet-
09:47Rick's Bar.
09:48Rick's-
09:49Rick's Bar.
09:50Rick's-
09:51Rick's Bar.
09:52Rick's Cafe.
09:52The American.
09:53But look at that.
09:54Yeah.
09:55And the thing is, a lot of Moroccans don't-
09:57drink, obviously.
09:58Yeah.
09:59So, a thing like that, it's probably been here for decades.
10:02It was Tahir's renovation of an old property, not far-
10:07from here, which led him to uncover this Aladdin's cave of treasures.
10:11And all the-
10:12guys working here are masters of bargaining and-
10:16Yeah, yeah, yeah.
10:17And getting an-
10:17emotional reaction from you.
10:18It's a very Moroccan thing.
10:19And what-
10:20Exactly.
10:21But what I noticed they do-
10:22they're watching your eyes to see what is getting your-
10:25um-
10:26attention.
10:27Because if-
10:28So I need to come in here with-
10:29With contact lenses.
10:30That's why I've got guard glasses.
10:31Shades on.
10:32Put my shades on.
10:32Exactly.
10:33So that's the only way to do it.
10:34Exactly.
10:35I do love antiques, but I'm not sure they're my-
10:40especially subject.
10:41But-
10:45then again-
10:46If it is an Eames shirt, it's the same company,
10:48it would make the black chair in Mastermind.
10:49Oh my god-
10:50I'm not sure it's a real one though.
10:51Fantastic.
10:52But it might be.
10:53It's a must have.
10:54Might be a bargain.
10:55We aren't in the market for chairs today, but Tahir is bringing-
11:00me to one of his favourite stores that deals in art and books.
11:04The thing I'm-
11:05interested in-
11:06Right.
11:07Is propped up against the wall.
11:08Ah.
11:09This is 19-
11:1060s, I think.
11:11Egyptian.
11:12And it's a movie poster.
11:13The translation in English.
11:15It's the return of the son of the Sheikh.
11:17The son of the Sheikh.
11:18Yeah.
11:19What I love about these so much-
11:20is that it's gaudy and crazy and all over the place.
11:25I'm not sure about that, to be honest with you.
11:28But remember, Cleve, this is Morocco.
11:30Where a bit of gaudy is acceptable.
11:34I'm making-
11:35I'm making it clear-
11:36You're pretending-
11:37That you don't want this.
11:38It gets to the point where if I-
11:40I don't buy it.
11:41Someone else might get it.
11:42Someone else is gonna get it.
11:43And then I'll never ever forgive you.
11:44Okay, okay.
11:45So-
11:46The art of the Casablanca haggle.
11:48I'm gonna ask him the price.
11:49Yeah.
11:50500.
11:51500.
11:52500.
11:53500.
11:54500.
11:55Dirhams.
11:56Dirhams, right.
11:57Which is about 50 euros, about 38 pounds.
11:5938 pounds.
12:00I would start halfway.
12:01I would start halfway.
12:02I am...
12:03I am...
12:04I am very...
12:05But they sell a remise.
12:07Expansive?
12:09Expansive.
12:1014.
12:1114, yeah.
12:12That's all.
12:13Okay.
12:14He's dropped it by...
12:15Like, 100 dirhams?
12:17Yeah, that's not bad.
12:18Eight pounds?
12:19Okay.
12:20I think we should...
12:20You've got to do it.
12:21You've got to do it.
12:22I have cast on different...
12:24I think I...
12:25I got that deal in the end.
12:27Not bad for a newbie.
12:28Your pupils did die late.
12:30I think I was found out.
12:32And the price...
12:33He clocked you as soon as you...
12:35He walked in, man.
12:36I think he had clocked us...
12:37Even before we got to the market.
12:40Tahir's home is an historic residence named Dar Khalifa.
12:45Or the Caliph's house.
12:47Which suggests it was once owned by a wealthy ruler of...
12:50This area.
12:53Beautiful place.
12:55Let's just put this here for now and we'll come back to it later.
12:58Oh.
13:00Tahir got the property for a bargain when it was practically a ruin.
13:04And has painstaking...
13:05Intakingly restored it to its former glory.
13:07Complete with an amazing array of antiques.
13:11Some people would say there's a lot of clutter.
13:13But...
13:14I would...
13:15You know...
13:16Disagree with them.
13:19You've got...
13:20The Moroccan tiling of the waterfall.
13:23It's absolutely gorgeous.
13:24It's cold.
13:25It's called Zelige.
13:26Yes.
13:27And actually I had that big fountain...
13:30Fountain made.
13:31Yeah.
13:32And it took one man a year and a half to make.
13:33Right, yeah.
13:34And he was the fountain maker.
13:35To the king himself.
13:36Really?
13:37He was the best of the best of the best.
13:39And what about the...
13:40The hanging...
13:41Pendants there?
13:42The astrolabes are ancient...
13:45Navigational tools.
13:46Yeah.
13:47Christopher Columbus apparently had Arab navigators.
13:49And they were used...
13:50Using those devices.
13:51Astrolabes.
13:52Wow.
13:53Legend has it that this house is...
13:55The original White House that gave Casablanca its name.
13:59Whether that's true or not...
14:00It's an impressive property.
14:02So looking back on this...
14:05This amazing house...
14:07Along...
14:08The fountain...
14:10The fountain there.
14:11Stunning perspective.
14:12When I first said to my wife...
14:15Let's move to Morocco.
14:17She said...
14:18Fantastic.
14:19It turned...
14:20When I first found out...
14:21She thought I was saying...
14:22Let's move to Monaco.
14:23And...
14:24She was saying...
14:25Can we afford it?
14:26And I said...
14:27Yeah.
14:28It's Morocco.
14:29It's Morocco.
14:30It's Morocco.
14:30And she said...
14:31Mo...
14:32Mo...
14:33It begins with an M.
14:34And when we moved in...
14:35Here...
14:36It was in the middle of a shanty town.
14:37The wider community...
14:38In the shanty town...
14:39Beli...
14:40believed that...
14:41Part of the house was haunted.
14:42With ginies.
14:43With gins.
14:44And so...
14:45I had to have an exorcism. And my wife was saying, and why are these 24 exorcisms?
14:50Throwing blood and milk and salt in all the rooms. And so I was in...
14:55I've been in the doghouse for a really long time.
14:57I'm not surprised. It was a bad time.
14:59First of all, she thought it was Monaco.
15:00Then you end up buying a house that's full of genies in Morocco.
15:05Tahir has authored more than 50 books, many detailing fantastic books.
15:10And he was covering all statistical journeys across Africa.
15:15His amazing library is the perfect place to...
15:15play the artwork he picked up at the market here it is
15:20a drum roll for my latest treasure
15:25perfect I think it goes fabulously it really does on top of the Arabian
15:30night
15:30exactly Thousand and One Nights one of the great editions by Richard Frans
15:35how important is it to sort of you know maintain the cultural legacy of
15:40this part of North Africa you know I grew up in a family of writers and
15:44a family
15:45of storytellers and a family that
15:50have loved Morocco for many many decades and
15:55living here you cannot fail but
16:00be swept away by the magic and by
16:05the mystery and by elements like
16:09al-flai-le-we-le-le
16:10the Thousand and One Nights
16:12I just have to sit in the chair over there and close my eyes
16:15and I drift off into this magical realm which in many
16:20ways is Morocco
16:22for me Tahir's home is the epitome
16:25of Moroccan culture and has a real magical quality all of its own
16:30island
16:32and we can't go beyond all the weird things
16:35and we can't go beyond all our

17:08Hi Clive. How are you?
17:09Clive.
17:10Not too bad.
17:11It's great to see you.
17:12Gabriel Gadira is CEO of the newly opened Juve.
17:15The Aventus Academy.
17:16Where the Italian giants are keen to unearth the stars of the future.
17:20How long have you been a coach?
17:22For now more than 15 years.
17:2415 years?
17:25In football?
17:26Yeah.
17:27Starting with Arsenal?
17:29You started with Arsenal?
17:30Yes.
17:31The director, Dez, didn't tell me that.
17:34Support Man City.
17:35Ah.
17:36Okay.
17:37That could be a problem.
17:38God.
17:40Gabriel wants all Moroccans to get a fair crack at the football dream.
17:44So the Aventus
17:45Academy offers free scholarships.
17:47So we're here in Sidi Maru.
17:50In one of the so-called shanty towns that surround the city.
17:55Salaam Alaikum.
17:56Salaam.
17:57Salaam.
17:58Salaam.
17:59Salaam.
18:0015-year-old Eunice is an academy talent with a chance.
18:05A chance of making it.
18:10Clive.
18:11Hey, is this the man?
18:12Yes, he's the player.
18:15You love football, yeah?
18:16Yeah.
18:17OK.
18:18What position do you play?
18:19Oh, yeah.
18:20Oh, yeah.
18:20Aréatoire.
18:21Aréatoire.
18:22OK, so right back.
18:23Right back.
18:24And what's your favorite team?
18:25Juventus.
18:26Juventus.
18:27Yelica, c'est vrai.
18:28Oh, Juventus.
18:29I support Manchester.
18:30City.
18:31What are you laughing at?
18:32That's not funny.
18:35In Morocco, you can never enter any home without...
18:40being asked to sit down for some mint tea and pastries.
18:43Oh, fanto- oh.
18:45I don't know.
18:46Love a feast.
18:47Uh...
18:48But we're supposed to be going training.
18:50Hey, Juventus.
18:51We can't eat all this.
18:55So with honey and cheese...
18:56Honey and cheese?
18:57Okay.
18:58It's very good with this...
18:59Oh...
19:00Right.
19:01So I just put it on?
19:02Yes.
19:03Well, it would be rude not to.
19:05This is great food.
19:06Yeah.
19:07This is great food.
19:08Yeah.
19:10Thank you so much.
19:11Very good.
19:12Yeah?
19:13Like it?
19:14Very good.
19:15Right now, most of Morocco's...
19:20star players were born in Europe of Moroccan parents.
19:24Like Spanish-born Brahim...
19:25Tim Diaz or Paris Saint-Germain's Atraf Hakimi.
19:28But academies like this...
19:30This one will help to change that.
19:34He's looking good.
19:35He's doing well.
19:36It must be so good to see, you know, a young kid like that from a really...
19:40deprived part of Casablanca.
19:42You know, able to sort of play with the best.
19:44This is part of...
19:45Yeah.
19:46Of the program we manage to give the chance to everyone.
19:48Mm-hmm.
19:49And UNES is really doing well.
19:50What potential does UNES have?
19:52What do you see in him?
19:53We're looking for...
19:55one specific quality in all the players.
19:58And I think UNES has this...
20:00one specific quality, which is intelligent player.
20:02We think that we can develop the technical aspects, we can...
20:05develop also the tactical aspects, but making a player intelligence is not...
20:10easy.
20:11So, at this age, you believe that you can teach the sort of...
20:15skills that they need with their feet, but it's what they have at...
20:18Exactly.
20:19Exactly.
20:20It's really in black.
20:21Well, I'd like to think of myself as having a footballing brain...
20:25rather than footballing feet.
20:27Right.
20:28What do you think?
20:29I'm ready.
20:30But training with the Juventus Academy is too good an opportunity to...
20:35burn down.
20:36So, we start the challenge?
20:38What challenge?
20:39Crossbar challenge.
20:40Yes.
20:41Our players are ready for that.
20:42They can explain.
20:43UNES!
20:44UNES!
20:45UNES!
20:45UNES!
20:46UNES!
20:47UNES!
20:48UNES!
20:49UNES!
20:50I thought...
20:50maybe they'd go easy on me.
20:52But it's straight into competition with some of the best...
20:55young talent in the country.
20:59So, coach...
21:00coach has told me about this crossbar challenge.
21:02What's that?
21:03The crossbar challenge is...
21:05when you should take a shot and hit the crossbar.
21:07So, how many shots do you have?
21:08Three.
21:09Three?
21:10I'm gonna give it a go.
21:11Yeah.
21:12Let's go.
21:13Don't laugh at me.
21:14You listen.
21:15Don't laugh.
21:16You're laughing now, man.
21:17Don't laugh.
21:18You're laughing now, man.
21:19You're laughing.
21:20You're laughing.
21:21I'm gonna give it a go.
21:22I'm gonna give it a go.
21:23You're laughing.
21:24I'm gonna give it a go.
21:24That was good, that was good.
21:27Ooh, almost, almost.
21:29This is .
21:29It's really hard, guys.
21:30It's your turn, you have to do it.
21:32It's my turn.
21:33You have to do it.
21:34I've got to do it.
21:34No one's done it, no pressure.
21:36Okay, but it's .
21:39It's okay if I don't do it, right?
21:41You have to do it.
21:42You have to do it.
21:43Ha, ha, ha, ha, ha, ha.
21:44Does the post count?
21:48At least I was .
21:49It's close to that.
21:50I'm an old bloke, what can I say?
21:52It's okay, Eunice is going .
21:54I'm going to show me how it's done.
21:56It's no wonder these kids are tipped to take .
21:59the football world by storm.
22:01Yay!
22:04Pinpoint accuracy.
22:051, 2, 3, 4!
22:061, 2, 3, 5!
22:071, 2, 3, 5!
22:081, 2, 3, 5!
22:091, 2, 3, 5!
22:101, 2, 3, 5!
22:111, 2, 3, 5!
22:121, 2, 3, 5!
22:13I just couldn't .
22:14I just couldn't resist.
22:15Good.
22:19One thing I've always meant to do
22:21when I've had breaks in Morocco
22:22is rent a scooter to .
22:24cut through the traffic like the locals.
22:29But there's a group of women here
22:30who've ditched the moped for something
22:32altogether more impressive.
22:35Hello.
22:36Hello.
22:37Can you help us, please?
22:39You want some help?
22:40Yes.
22:41Dalila Mosba has created the Arab world
22:44first female only motorbike club.
22:47And we're talking seriously.
22:49two big bikes here.
22:50Yes.
22:51It's very heavy.
22:52Ah.
22:54Very.
22:56Dalila.
22:57Dalila, you've broken my back.
22:59You are so famous.
23:03You are so famous.
23:04across Morocco for starting up the women's
23:09motorcycling club.
23:11How did you get into .
23:14bikes?
23:15Normalement, j'avais une moto aux Etats-Unis.
23:17Mon fils, il habite aux Etats-Unis.
23:19Je faisais des concentrations.
23:21Et là, je voyais des femmes venir.
23:24du Canada, partout.
23:26Des femmes assez âgées.
23:28Et je les vois.
23:29Venir aux motos.
23:30Et je me suis dit, pourquoi pas créer un club au Maroc.
23:34I love your waistcoat.
23:36I love it.
23:37I love the color, all the badges.
23:39You're the boss.
23:40Boss woman.
23:41Boss woman.
23:42No, men.
23:43Women.
23:44No.
23:44Absolutely.
23:45Et là, c'est notre logo.
23:46Ah.
23:47Ops.
23:48Dalila is .
23:49better known as Miss Moto Maroc.
23:51And her women-only biker gang is now more than a .
23:54decade old.
23:55I wonder what the response from men has been to .
23:59you starting the motorcycle club in, you know, this, you know.
24:04Muslim country of Morocco.
24:05Non, les hommes, ils nous encouragent.
24:08On était, on était.
24:37Wow.
24:38I mean .
24:39Leila, Miriam, is so impressive.
24:41Yeah, she is, actually.
24:43I can see why .
24:44You'd want to join the club too.
24:45Of course.
24:46I'm so proud of her.
24:47She's the first one.
24:49Who came of the idea to create a feminine association.
24:54How long have you been into bikes?
24:56Eight months.
24:57Eight months?
24:58I'm new, yeah.
24:59You're a newbie.
25:00I came from another city and I don't have many friends.
25:04So I was looking to have at the same time friends and family.
25:08Yeah, yeah.
25:09I did find one.
25:12This Moto Marocz motorbike club.
25:14The club has 18 members from all across the country, some of whom have gathered in
25:19Casablanca today for a ride out and Dalila has invited me to come meet you.
25:24Meet her fellow petrolhens.
25:26I mean they're big machines as well.
25:28What have you got there?
25:29KTM.
25:30KTM.
25:31And what's yours?
25:32It's Yamaha FZ6.
25:33A Yamaha.
25:34Yeah.
25:35So what do you get out of the club?
25:36The most important thing I've found is...
25:39Freedom.
25:40You just escape your troubles.
25:41Exactly.
25:42Yeah.
25:43That's wonderful.
25:44Yeah.
25:45I'm just wondering why you're all wearing orange.
25:47Because it's flashy.
25:49You can see Miss Moto everywhere.
25:50You stand out from the crowd.
25:51Yeah.
25:52You stand out from the crowd.
25:53Yeah.
25:54Now I'm not a woman and I don't...
25:59Have a bike.
26:00But the club is kindly making an exception for me today so that I can join them on...
26:04...their ride out.
26:05Here we go.
26:06Here we go.
26:09Here we go.
26:10Here we go.
26:11And as we head out along...
26:14...the coast road, I don't think there's a better way to see Casablanca than this.
26:19What an amazing way to see the coastline here.
26:24The sea looks incredible as the sun is dipping.
26:27It's beautiful.
26:28The weather's glorious.
26:29As we're riding by, there are so many people putting their thumbs up.
26:34They recognize the orange vests of the club.
26:38It's brilliant.
26:40I'm just jealous.
26:41I haven't got one.
26:44They've got one.
26:45Perfect.
26:46And I'll get into the sky.
26:47Let's see.

26:49But we're out there.
26:50To be certain parts of the club, there's a couple parts of the club.
26:51One of the club, we have a little bit of a famous name.
26:53That's our music.
26:54The sun's beautiful.
26:55It's beautiful.
26:56And I'm really nice.
26:57We're out there.

27:07I'll be like.
27:08You want to be so little.
27:09That's very shiny.
27:10You want to be so nice.
27:11impressed by that when they when they see it yeah they show it by saying hi and Dalila first
