01:56something naughty while staying on the nice list we're gonna forget the cardinal rule of childhood not
02:03playing with your food we're making edible cookie dough you'll be making four adorable edible cookie dough
02:12characters and placing them in a whimsical winter scene we've created to inspire your designs as always you
02:22will be judged on your creativity execution and taste the winners of the dessert dash will land on top of
02:29Santa's nice list and earn an advantage in the next bake bakers you have one hour to complete your edible

02:45so we got the wonderland right we need a cute character I'm thinking maybe a deer
02:57some more cute fox yes the baby fox hi I'm Amber I'm Yasmeen and we are the co-owners of
03:07babe and yays and kitchen sisters aka the electric lady we actually met at an all call for female chefs
03:17you guys basically hollered out where all my pastry shows at and that's kind of like how our story
03:22started from that one encounter we now have our own business together ginger spices sugar we're making
03:30spicy foxes made from a gingerbread cookie dough with candied orange and ginger amber's gonna make
03:36the edible cookie dough I'm gonna start on the face that is really really key that's where a lot of the
03:42details are gonna come in from the eyes down to the ears judges it's the dessert dash now the bakers are
03:50tasked with creating edible cookie dough characters so I have to ask April what makes the cookie dough edible
03:56what you want to do in this case is make sure that there are no raw components in that dough that
04:02could make you sick so in the case of flour you want to make sure to put it in an oven at 350 for
04:07at least five minutes and we're not going to use any binders like eggs you can use a lot of other
04:12things so mom and dad were right no looking spatulas kids we had the fireplace what about we do it
04:19it's no man yeah it'll be melting because it's closer for our place what you think perfect I love it
04:26this is Chloe and this is Victor and we're from the UK so me and Victor became friends online I saw
04:33Chloe's cake I love her art and I want to follow her and make friends with her Victor's really great at
04:40sculpted cakes big cakes whereas I'm most known for baking sculpted cakes from animals to realistic food
04:46we are creating four snowmen that are going to look like they've been melted by the hot fire for
04:56our cookie dough we are using brown sugar apple and cinnamon to make a Christmas taste it smells so
05:04good right flowers going in what do we think about gnomes I love gnomes yeah like on skates right so yeah
05:11it's up skating right my name is Rachel and this is my friend Helena I am a custom cake baker from
05:17Victoria British Columbia I am a baker from Nanaimo BC I have a custom cake business I love realism cakes
05:24the most impressive bake I've ever done was probably my nephew's wedding cake it was a six-tiered wedding
05:30cake I am a mom and a pastor at my church and love baking for large groups of people we love flavors but
05:38we don't take ourselves too seriously you are going to start with the flour okay Rachel I'm gonna put
05:46this in the oven nice I'm gonna start with the dough icing sugar all the sweet things we are making a
05:56triple fig cookie dough with pistachios so we need to incorporate three kinds of figs fig syrup freeze
06:01dried fig and then a regular dried fig one gives the chew one gives the crunch and one just gives an
06:06elevated flavor profile these figs are gonna taste really good in this so Dwight there's three
06:11different settings for the characters yeah so we've given them a winter woodland scene a skating rink
06:16and a fireplace three iconic winter scenes but where they take the characters that's completely up to
06:23them I need to start decoration prep now this judges I always love chatting with you now I'm gonna
06:28check in to see if the bakers need any ingredients for inspiration hey Yasmeen and Amber do you need any
06:34ingredients for your bake I'll order them through Instacart oh yes yes we need the crystallized ginger
06:39for our cookies on it thank you Halana Rachel can I get you anything yeah could you get us some
06:44pistachios and could you make sure they're shelled please on it thank you done Victor and Chloe I'm

06:57my face is kind of coming I fell in love with baking at a very young age my father was a chef and it just
07:06felt natural to be in the kitchen I specialize in wedding cakes and celebration cakes I fell in love
07:13with eating pastries before I fell in love with baking I was in my 20s and I decided to go to culinary
07:20school I have my own company and we do custom desserts for different restaurants and custom cakes like we
07:28got this hey your orders here thank you so much right on time thank you thank you so much oh

08:21overpowering and the last thing I want to do is make the judge's head explode with too much ginger
08:26and too much cayenne even though my partner love it a little spicy I do

08:43you doing oh good pistachios are on nice and I'm starting to paint the little skates for us nice what
08:51can I do for you Rachel I'm just gonna start forming now okay 125 grams per piece I think probably

09:07a ball deep in chocolate and stuck together once I've done the hats I'm gonna do the holly now it's

09:26okay perfect what are you working on I'm gonna start on the gnomes beards we're both working on gnomes
09:32they need hats with knitted texture to them and they need faces and expressions so I'm just making the
09:40beards for the gnomes I'm gonna use the same mold to give them some hair at the back oh excellent okay
09:46yeah if you get four on there no matter what they look like so they're gonna be gorgeous

10:08covering I'm having trouble getting these foxes covered he's not working for me my brain is just

13:11bakers we asked you for edible cookie dough characters fit for a winter wonderland Yasmin and
13:19Amber tell me about this sweet little scene in front of us so we created our spicy brown foxes
13:26because they're brown on the inside and that's where it counts
13:29and they are brown because we decided to do a plate on gingerbread first impression I love how
13:37you've used your woodland scene here and then you've added this little pop of color with the
13:42orange it was an unexpected color choice and I think it works really really well with this scene thank
13:47you thank you just a really nice design I think it's super creative I can't wait to try it awesome
13:52time to dive into the foxes den so cute here we go so we did a gingerbread cookie dough with
14:02candied orange and ginger and then because my girl here it's a little spicy we add a little cayenne
14:08to pump it up just a little bit crystallized ginger the orange it all works so well together you've given
14:16us a delicious well spiced edible cookie dough the additional candied ginger really was a stroke of
14:24genius it was the texture the one comment that I would have would be that the ginger is a little
14:30bit too powerful okay the cayenne it like sort of warmed my mouth I could feel it go down into my belly
14:36like having a nice glass of whiskey I loved it thank you so much appreciate it thank you
14:43Dwight said it's just a little too much ginger for him tell me you can't handle it Dwight can't you
14:50can't he can't handle the spice you feel better now I do you have to get that out you have to get that
14:57out Helena and Rachel tell us about this jolly scene in front of us these are our three fig gnome for the
15:03holidays we've got an ice fishing gnome we've got a sliding up a snowbank gnome and we've got the
15:08dating gnomes it's so alive and expressive I love that they're all doing different things you have
15:15these two cuties over here watching the action this one looks like he's ready to launch into the air
15:20and of course this lovely little guy doing some ice fishing it's just so cute I noticed with the hats
15:25you used an impression mat and it gives it a really nice knitted texture it's all very adorable you've done
15:30a lovely job thank you thank you okay judges time to reel it on grab your gnome and going for a taste
15:37our flavor profile is a triple fig cookie dough with pistachios
15:45this is delicious I love the fact that you incorporated figs in multiple ways because the
15:55flavor really comes out the pistachios what a good purchase right yeah that crunch that texture
16:01beautiful it is a little bit drier than I would expect from a cookie dough but I really like it
16:08Helena Rachel thank you so much thank you thank you thank you like we were happy with the feedback
16:14they gave the most important thing was is the flavor there because if it is a bit dry you can win
16:21over that as long as you got that real punch of flavor Victor Chloe what did you make this is a
16:27frosty demise Christmas cookie dough characters okay it's funny it brings us in it makes us intrigued as
16:36to what's going on over here I so enjoy the placement of the snowman and an understanding that everything
16:42that's happening up here is a result of what's back here I love that you chose to dip your edible cookie
16:52dough in candy melts there's a natural sort of drip adding to that idea that they're melting a very wise
16:59choice of material there the little details in the hats to the scarves to their noses so charming so
17:07sweet time to take a taste get your shovels out we've made brown sugar cookie dough with Granny Smith apples
17:18and cinnamon Granny Smith apples and cinnamon yeah it's a beautiful flavor combination the cinnamon is
17:28not overpowering it it was perfectly balanced it's warm it's invoking holidays it's got that lovely kind
17:35of crunch it's nice and moist the only thing that I can point out about the aesthetics of this all is
17:44this lollipop stick it just took away from the story laughing just kind of like what's going on
17:49do they have antennas coming out of our heads but other than that you've done a really marvelous job here
17:54thank you I'm really happy with the judges say yeah the judges loved our cookie dough they love the cinnamon
17:59they love the apple I think we nailed it yeah judges you have an adorable but difficult decision to make
18:07this one's gonna be hard
18:08bakers miniature makers we asked you to bring a winter scene to life with your edible cookie dough cuties
18:20and all of you gave us festive and flavorful fun but only one team totally transported us to a
18:29winter wonderland congratulations Yasmeen and amber wow thank you guys you are the winners of the
18:45dessert dash you've earned the helping hands advantage oh this advantage allows you to get a

19:17do you know what I saw on the news today they're giving Santa a star on the candy cane lane of fame
19:26I mean I'm happy for the guy but sometimes it's a bit of a spotlight hog
19:33there are so many other holiday stars that deserve a moment in the spotlight so today we are hosting the
19:44first ever search for the next holiday superstar sorry Santa in this batter royale we want you to bake
20:01us a trophy worthy sculpted cake dedicated to a holiday hero who deserves festive applause we will be
20:09looking for creativity execution and taste we want a star cake with star flavor all right bakers you have
20:19three hours to create your holiday cakes ready set
20:28what about everyone's hero yeah the mother love that for our Christmas hero we chose the mother
20:47whose representation is of any adult who has really brought out the magic of Christmas for children in
20:54their world I am going to start by making our cake batter because we really need to get that in the
21:00oven pretty fast in order for this whole challenge to work out the cake itself is a spake glass spice cake
21:09with an apricot brandy glaze and cardamom white chocolate ganache well sometimes we measure sometimes
21:18a sprinkle sprinkle spake glass is a very Dutch cookie and the flavor profile is all the Christmas
21:24spices you can think of the cinnamons and nutmegs the allspice all right going in the oven Helena is
21:30going to be starting on the Swiss meringue buttercream we'll be mixing together the sugar and the egg whites
21:36whisking that over some heat to get that to temperature and then putting it into the mixer to beat out to
21:43stiff peaks and then adding the butter after that she's making the white chocolate ganache if we are
21:48not precise in who is doing what and when we are not going to make it time management is going to be
21:54crucial with only three hours so I think we're going to put mr. humbug himself okay okay the character
22:01which is him is Scrooge he will be wearing a top hat okay Scrooge is bar humbug to us he's a sad character
22:08but we wanted to give him a spin and make sure that his depth and sad is still there let's add some lights around here
22:15yeah can be fantastic at the bottom is where the Christmas is for the flavor of our cake we decided to go with
22:22Dubai chocolate we also add freeze-dried raspberries Dubai chocolate as a normal chocolate with a
22:28canafi and pistachio paste inside come on darling the key is canafi as a main flavor what do you do do you bake that till it's golden brown
22:41yeah you roasted yeah to make a crunchy does it burn easy or you're gonna be all right
22:47it's taking time to burn it but it's fine it's good so we know for sure Tio sits here the log the pooping
22:55log the pooping log the pooping tree so we're choosing Tio Denadel the your log's cousin in Barcelona
23:04they have a log called Tio Denadel that during the Christmas season they feed it scraps and then they
23:12beat it with a stick and he poops presents oh you know what he needs a blanket Christmas should be fun
23:24and festive and so I think it's very interesting to bring a character like him to life and I think
23:32it's gonna be really unexpected oh I need all my spices what we're making for this challenge is an
23:38almond cake with passion fruit foillotine and a plum and fig jam it's gonna have all the warm spices and
23:51flavors of the holidays this smells so good it smells like the holidays definitely reminds me of my mom
23:56for sure all these spices in here we're gonna go with passion fruit chocolate we have decided to take
24:04foillotine and we're gonna add chocolate and nuts to give it a crunch factor oh it looks good yep
24:10we're going to have it friends this is it the battle royale the bakers are tasked with the holiday hero
24:19cake when it comes to flavors and flair what are you looking for when you cook from the heart will
24:25almost always come out tasting the best so that's the only way that they're gonna be able to win this
24:31competition and you will taste the love in it yes oh it's burning oh my gosh it smells really burn all
24:40I could smell is a burning smell I don't want to dare look 100% the canafi is burned we lost game over
24:47oh it's burning oh my gosh for the Dubai chocolate kajafi as a main flavor when I see was burning I decided to swap the pans
25:04or they don't damage the flavor yes better and I noticed they wasn't burned yet and was fantastic perfect
25:11come on darling here's where they come in the flavor add in pistachio mix it up a little bit of tahini
25:22that's it oh gorgeous now I need muscle because she's big and making the batter we've got all the Dubai
25:31flavors I haven't got a normally I'll do this with a measuring drug but we're gonna go with it don't
25:37worry I'll clean it now I can get my cakes in the oven and start that buttercream attention Mary
25:43Bakers two hours left two hours left shoot I am going to start casting some isomalt very early on
25:50because we have these pieces that need to set we're also making fondant presents on the side I'm using
25:55the extruder to create ribbons and then cutting them to size and piecing them together to create a
26:00little bit more height and design elements on the presents oh Helena the presents yes they look
26:06beautiful oh thank you Rachel Rachel Helena hey we're doing some holiday hero cakes yeah very festive
26:12yeah what does that mean to you we have chosen to do a mother I love that I love that what do we got
26:18going on today maybe just a sneak peek of the flavor profile yeah so Helena's family comes from Norway
26:23yeah cardamom yeah cardamom is a big flavor in the Christmas baking in Norway and my family's from
26:29England and I made brandy snaps every Christmas so we've got some brandy apricot glaze I love that
26:34yeah all good things everything that you have both said sounds delicious I'm super excited to try
26:40everything thank you thank you Victor and Chloe how are we doing so far all fantastic or fantastic
26:48thank you for asking can you tell me a little bit about this we have to buy chocolate chocolate cake
26:52and then chocolate ganache on the top oh my gosh I love that and buttercream with condensed milk
26:59they call Russian buttercream I'm excited
27:02to sculpt a sculpted face start with crispy rice because you can mold it into the shape with your
27:12own hands and then carve away with a knife to get the more precise shape I need the modeling chocolate to
27:18build his face up now I find the best tools is my hands I'm just gonna sculpt with my fingers Victor because
27:24um yeah that's fine that's fine quicker than my tools right now you can make wrinkles lines your
27:29hands are your tools fantastic he's all right yeah what are we thinking that for a little wider
27:38sculpting is not actually my forte but I think if you pay attention to you know faces that's gonna be
27:46the key to whether this character is going to come alive needs to be motherly looking what do you
27:52think looks like a woman it will when it comes to sculpted cakes you really sort of have to plan it
27:58from the inside out start with a really good structure and then think about what you're going
28:04to form on that structure the last thing you want is for that beautiful carved piece to fall apart or
28:11somebody's nose to fall off right yeah that's cooked that's done yeah get out it's fine
28:19so I'm gonna start on Tio he's your logs cousin I'm gonna sculpt him out give him all the pizzazz and
28:30you know some extra character so I have to show that we can do details really really well I have
28:38just painted some white coloring on top of this brown I'm hoping that it'll crack and make it look
28:44like wood I'm making teals wood outside and I want this to be as realistic as possible I'm taking the
28:51blowtorch to torch it and then reroll it again so it's gonna have a nice cracked effect that I can then
28:56wrap around Tio what are you working on I'm stacking the cake come on come on there you go mama loves you
29:06wait ever what's your favorite thing to do on a holiday sleep
29:09one hour left bakers you can do this
29:14what do you think Rachel be happy with this yeah is it fairly level I think so our cake is
29:29not on the cake board we haven't carved anything yet the mother's head is mostly done so I do feel
29:35happy about that but there's so many little pieces to this cake that I don't know if we can finish this
29:40in an hour okay so I'm gonna start stacking these and buttercream put in white cardamom chocolate
29:47ganache she looks like a hero with no arms need to start doing some decorations soon Christmas lights
29:58electric wire socket I'm not forgetting the cookies yeah we can do it girl I'm starting on garnishes
30:07right now yeah right what else do we need to do roll out the fondant cover the whole cake oh my god

30:41you home with us oh wow put you to work it looks like velvet we rolled out our fondant use the textured
30:53rolling pin the texture that we did for the Santa sack fantastic yeah I really love that right we're
30:59ready to rock so we're gonna use the steamer Victor to attach this light string and we're gonna get rid of
31:05all them cornflour marks we steam our cake to help our items stick to the cake like the light bulbs and
31:11it also makes the color pop just scream at me if I'm burning you yeah I'm shiny and shiny half my time
31:18is done anything else you want are you happy with the variety I'm happy with the variety yes what else
31:23you want her to do besides the ball huh can she put some indentations in a couple of them to make them
31:28look like apples there you go yes can you make some look like apples okay so you're gonna feed this guy
31:34some apples he's gonna get fed all the fruits and nuts fruits and nuts yeah like oranges citrus
31:40apples what is up with that I hated that I hated that spotting me too I wanted toys I wanted presents
31:46I wanted stockings and you gave me fruits and nuts wait I love that I know you do that's how you eat
31:51there's some brown we'll just make it like a little teacher apple giving one cutie little apple before
31:55there I go okay I'm so sorry these helping hands have to go bye bye thank you okay she's solidly on
32:08there I can start finishing her face now okay I'm just she is ready for a nap 15 minutes left we can do it

34:30we have tio de nadal during christmas time you feed it your scraps and he poops you presents but you
34:38know we gave him a little more pizzazz with the gold tooth and he pooped this giant present that
34:43he's sitting on it's fantastic I love the face on the log and the little hat that you've put on there
34:48just to kind of make it more festive my favorite detail on this cake right off the bat is this
34:54incredible bark effect you've created with fondant yes and of course the gold tooth I love the humor
35:03that you've inserted into this cake it's got a little swag everything about it is so charming
35:09you also have the stencil to create sort of a wrapping paper effect beautiful touch
35:17enough sitting here like bumps on a log time to carve it up let's go for it let's do it
35:22this is an almond cake with passion fruit for your team and a plum fig jam
35:40can we talk about this plum and fig jam how did you make it let's talk about it amazing right yeah
35:45that's that one's amber it's just such a great flavor combination yeah I absolutely love this flavor
35:49it's a beautiful bite thank you my favorite thing about the flavor profiles in here is the crunch
35:55factor the foillotine with the passion fruit chocolate I love when I eat something and it's
36:01like what is that I love it but I don't know what it is one little bit of feedback is that it's eating
36:07a little bit sweet and it could use a little bit more balance but with that being said great job

36:20to make it that makes me feel real good like I feel like we're on the right track right

36:31because she is a worldwide hero to so many people for us our moms created amazing magic and we've tried to
36:38pass it on to her own kids and we just feel that she doesn't get the credit she deserves at such a
36:43busy time of year your story obviously tugs at my heart strings I am also a mother I also know
36:50the struggle to get everything as you want it to be for your kids during the holidays I'm like tearing up
36:58about it yeah I see the time here it's 2am I I know what that feels like it's all worth it to make
37:08that magic for our loved ones the story is fantastic I love the look you've got the fried egg on the front
37:16some trees the stars this isomalt mug seems to be empty of coffee yeah I love the story and you know
