03:42This morning, it's their debut in the kitchen for their very first breakfast.

03:56And then get one strawberry tart and one lemon tart or something.

04:04Michelle and Steve are working together for the first time in their lives.
04:11With an hour to go until guests and judges sit down to dine, Michelle is keeping things
04:17on track.
04:18I'm going to make some lovely little yoghurt pots.
04:21Michelle's little fruit compots, I think I'll call them.
04:24It's a typical French breakfast that we're going to do.
04:27So very relaxed, very chilled.

04:51did you make them back did you make these yeah you did you do it no I'm every time Steve will
05:01be fine hosts who use fresh and local ingredients at breakfast could score highly with the judges oh
05:09you come bearing gifts how was the boulangerie busy I bet it was did I have any nice things in
05:18there oh are they for a little sneaky treat for us that pain and turmoil yesterday but with a
05:27background in sports nutrition Rob and his wife Jackie also plan to play to their strengths today
05:33all right where we at we are still going to do a continental breakfast but we are going to try
05:39and just do a little bit of a healthy breakfast hot option we're asking them what they want yeah
05:43so I've made a list of everything so on the list I've said about boiled eggs poached scrambled so
05:51we're going to do the potatoes with a bit of salt a bit of pepper and then I'm just going to quickly do
05:57the tomatoes because obviously we don't want to do a hash brown or anything like that do we sounds
06:01like a plan yesterday Nicola and Roy prepared ahead shopping for their breakfast menu at the local
06:09supermarket French toast bacon maple syrup hold on hold on hold on we've got this fast I can't
06:19spell syrup it's funny this way are you be and we do vegetarian eggs benedict it's muffin poached egg
06:29on this sauce but with Roy's experience as a chef the pressures now on him to deliver this is a lazy man's
06:42way of making hollandaise because traditionally it's done it's done by hand whisk Nicola I'm really
06:51struggling here with this cooker the guests are starting to stir we had a great night sleep actually
07:06didn't we yeah I think I snored a bit but apart from that yeah I think I'm ready but they are not the
07:14only diners the hosts need to impress the judges are on their way and for them the second B of B&B is
07:25the key to success with our breakfast probably in 99% of the reviews they mention our breakfast and
07:35absolutely it brings people back hope I slept okay last night breakfast is most important meal of the day
07:44and you've got to have a really exceptional breakfast hopefully locally sourced you need to have a lot of
07:53choice in a B&B you want to make it look like home the difference between a good breakfast and an excellent
08:09breakfast it's the quality of the produce at the the owners have chosen to serve it's called bed and
08:15breakfast so of course it's something that guests would be looking forward to it's 9am the guests are ready
08:27follow the bacon good morning the tables are set ready I'll keep an eye on the potatoes and the hosts have
08:41everything to prove oh did you get a tag do you want to get one not pointed to some hotels you didn't get
08:49it then oh it should let me down there we should add two of them don't forget the toast the muffins

09:11in the dordogne the competition is coming to the breakfast table

09:34aspiring hosts can do good morning morning I am loving the matching aprons
09:42look doesn't that look pretty I thought I got French traditional you just need a guy on a bike with a string of onions
09:51Michelle and Steve's hosting skills have already made an impression on judges
09:57come on in that looks amazing right well we've set you both a place there if you'll see it and
10:05there you are Nick would you like to come and sit down this morning Nicola will be casting a critical
10:10eye on the ambience at the table with guests Sam and Alex I really like breakfast to be shared up at
10:17one table because that's the most sociable way of having breakfast that creates sometimes absolute magic
10:25now I think Steve's been up to his folding again doesn't it oh yeah what what's that Steve what do
10:33you think it is what what does it look like is this a rose yes it's a rose rose for the ladies
10:39would you like a pastry oh I'd love one you looked as if you were glaring at me meaningfully so
10:52everything you've got here is all from the local it is either the um the bakery or this local
10:57supermarket yeah at the counters and everything yeah all local would you like a cup of coffee or
11:03there we go the Pope's name Leo right there you go you enjoy your coffee breakfast was lovely it was
11:14beautifully presented I was really really pleased they decided to serve it in the kitchen and not in
11:19the dining room because it made it far less formal the only problem with serving it in the kitchen is
11:25that then they're hovering a bit Steve had been at his sculptures again and had made bits of kitchen roll
11:35into roses when I first looked in I thought oh someone's left an old snot rag on the table
11:41it was a rose my rose fell over
11:47yesterday Ava praised Nicola and Roy's warm welcome checking in guests Alison and Janine don't trip in
11:58that wee thing in the way now she's watching to see if that charm extends to the breakfast table so
12:06the hot breakfast this morning is French toast with bacon and maple syrup or there is eggs benedict in
12:14terms of the cooked breakfast equality of the mid will be important how well the eggs are cooked as
12:18well do they offer a choice of eggs are they flexible if they've got vegetarian options available
12:24etc as well so breakfast is definitely key I'm gonna try the eggs benedict please veggie style eggs benedict
12:34vegetarian I'm gonna try the French toast is there a Hollander's sauce homemade by Roy it is yes he's just
12:42made up I'll go for the yes eggs benedict no problem okay ready soon what do you think of the spread the
12:49selection they've chosen for us today I think it's quite typical do you think the quality of the cheese
12:53is going to be up to French standards or it's sliced processed cheese yeah turning more bacon I only put
13:03four on I guess a wee bit mean a lot of water in that right well true enough yeah into the muffin I
13:11give more than that in future yeah okay French toast thank you okay what's that more Hollandaise it's a bit fluid I
13:28think it could be a bit more emulsified I think they should have had a bigger breakfast I do too but
13:41we're against time no but here time doesn't like as I think if you if you're gonna do it do it properly yeah
13:46yeah yeah hello you have to do it right I am we'll wait for good food I think it sort of set the the bar
13:57quite high seeing hosts wearing a professional uniform here so expectations were high from the
14:03start in terms of the cooked offering the egg itself it could have been a bit fuller and the
14:10yolk wasn't perhaps as friendly as could be the Hollandaise sauce wasn't quite as emulsified as
14:18expected as well you have from mine no you want me to shut up my don't you no a few slip-ups left
14:32Jackie and Rob on the back foot with judges yesterday if you don't like to take a seat they'll need to
14:38prove to Andrew and Brennan and guests Joe and Karen they're back on track we have decided to keep
14:45it within keeping with where we are in France so it won't be a full English breakfast I'm afraid we
14:51have a selection of continental for you we do have some hot items as well petty potatoes with some roasted
14:59vine tomatoes and we have a selection of eggs if you'd like poached eggs scrambled egg boiled eggs
15:05a poached egg I think what's really really important between whatever type of breakfast you you have is
15:14choosing what your theme is going to be are you going to have a USP with that the eggs will come
15:20out fine your eggs always come out lovely just remember with your poached eggs to just pat them
15:25dry yeah so they're not wet you need to make a choice and stick with it here we go Karen oh thank you the
15:33plates are hot because they've been in their warmer so poached egg potatoes and some fine potatoes
15:40tomorrow to catch up if anybody would like what I would really like please salt and pepper of course yes
15:49that is downstairs you can tell that they've they've gone and got very good ingredients
15:58because the eggs are lovely color really smooth texture and the tomatoes are really tasty I have
16:10to give you compliments the eggs are very well cooked the tomatoes are lovely thank you thank you you've
16:15mentioned before that you wanted to go with health and well-being and the nutrition side so would you
16:20feel nervous if you said that this is the way we're doing it no no really genuinely I think we can all say we
16:28would not be put off if you said that this was going to be an absolutely health driven breakfast yeah in
16:34fact I think for many people that would be hugely attractive yeah as the guests head off to pack their
16:43cases the hosts can reflect on their fast breakfast of the competition thank you appreciate it we had a
16:52good breakfast yeah we've got to give yourself a pat on the back I think we've done really well
17:02of course we have oh come here you did well breakfast breakfast in there I can't away know my job and I
17:09hate people you know tell me what to do but I I knew it was okay did it make you cry no well you made me cry
17:16yesterday he said about my room not being enough home furnishings and I had a cry oh that's okay
17:23why didn't you tell me that just let's move on okay how was everything for you lovely thank you well
17:31done you're very welcome I think it went extremely well actually I think it went better than I thought
17:37it was gonna go yeah well that was really good and your eggs were fabulous that's right that was
17:43all right no they were really good every guest who stays at the B&B's will be filling in feedback
17:51forms please write the following on a scale of one to five one being very dissatisfied of five being
17:57very satisfied and adding comments to the visitor books which will be vital evidence for the judges in
18:04their final decisions but they'll also be watching check out very closely thank you very very welcome
18:14it's been an absolute pleasure to have you stay with us for our first night it was lovely just a few
18:19minor things perfect tissues in the bedroom no yeah lovely and glass in the bathroom yes thank you very
18:28very much yeah have you any helpful feedback for us nothing you've done really well your hosting skills
18:38are magnificent no I think maybe once you get going you'll get more local knowledge of where you're
18:43living so you maybe can't maybe get more local maybe produce but we said wherever you where we come
18:50to you oh no thank you so much and say we really thoroughly enjoyed your company yeah we will meet
18:57up again thank you so much yes and how was your stay we had a lovely stay thank you very much it was
19:06the bed comfortable very comfortable we loved it didn't you've been lovely it's absolutely I'm not
19:13checking you thank you you couldn't want a more welcoming couple as hosts I think they were
19:24exceptional lovely people it's emotional that when they said that don't it as the hosts say au revoir to
19:34their first guests and the judges there's no chance for a breather as the next challenge is on their
19:43doorsteps oh no it's one of those again oh the golden envelope come on it feels heavy day two tonight two
20:02rooms have been booked for one night each you need to change over room one and prepare room two you
20:09need to give your guests a welcome gift on arrival the judge will inspect the rooms at 3 p.m. oh
20:14there you go okay we're gonna get shopping let's go and do this let's do this right come on
20:22the challenge is designed to test how they cope with one of the most demanding tasks B&B owners face
20:31the same day changeover the changeover can be quite stressful especially if it's a tight changeover they
20:41need to be really thorough to make sure it's absolutely squeaky clean and there's no evidence
20:46of anybody before and they've got to be quick to and today the judges are switching B&B's each team
20:53will have a fresh pair of eyes to impress come inspection time well the Sun is shining it's
21:01gonna dry me washing and we're gonna crack on the last thing you want is a guest walking through the
21:06door with the washing machine going you're going to stay in a aspirational home you don't want to see
21:13what downstairs are supposed to be doing if you could maybe Hoover downstairs yeah I need to iron
21:25the sheets for this and then I just need to go out and get a couple of bits because we need to get
21:29some more bedding no worries but with a life-changing prize up for grabs the judges weren't going to
21:37make things easy today there's a curveball hello oh so what time you come in yeah yeah been those
21:51well we've got a guest arriving early mmm that's not late we'll welcome them with open arms in rural
22:08France the hosts are facing their first ever changeover a key test of the competition with a
22:15luxury B&B at stake it's put too much bubbles in here so every time you go like this it's just two
22:23minutes to two for me hello that it's just two for me and with guests arriving early the race to be
22:33ready is on Steve that took one there Steve that took one there it goes in there yeah there's a sink in
22:41here what did you put in it destroyed me because it's like a bubble bath look at this I only put a
22:49little square you know you didn't you put half a bottle in no I didn't honestly well look at this
22:54it can't talk can't lie I want it to be clean we're wasting time I'm gonna clean kitchen no but I've got
23:07another flower I've got to do a flower again what don't put anything in I'm not gonna I've got a
23:11rinse it
23:15early check-ins are a reality of B&B life and for the judges keeping calm under pressure is a must
23:22times against us and Roy's had to go shopping on his own so I just have to crack all and just use
23:30brand-new bed that hasn't been through the machine but I can't wait for two hours for the washing machine to
23:35go and get it dried so I just have to make do before I've got I think I've been hard on in the last 24
23:43hours it's more than to criticize this breakfast and it's it's time and it's getting everything right
23:48it is stressful no sugar put a slight like a not a burn mark but a outline of the iron which isn't
24:01going to come out now so I'm just going to turn the sheet around so it's it's the bottom of the
24:05best and let's hope the guests don't yeah notice for hosts with no hospitality experience mistakes
24:16are to be expected but learning from them is what really counts in this competition maybe oh as quickly
24:24was out to the shops because they shot in 10 minutes for their break yeah quickly whizzed around to get the
24:29sheets unfortunately I forgot the duvet covers so you need to is down there I have the iron on yeah
24:34and then I can quickly get them done the rest of the beddings will be done it's just literally two
24:38duvet covers to go on so it's now 20 to 2 I need to be ready for when these guests turn up and you
24:44need to be gone yeah as well as presenting two immaculate rooms the hosts have also been tasked with
24:53providing a welcome gift for their guests let's go and have a look are you sure you know what an
24:59orchard looks like we'll be looking in a welcoming gift the thought that's gone into it locally sourced
25:07or natural picked in the garden or home baked I make lemon drizzle cake doesn't matter if the guests are
25:16coming in an hour early at this cake is being made but their little gift is going to be the little
25:20recipe for this and some flowers which is nice and personal I think yeah you're good yeah it's a lovely
25:28day out there yeah and there's some fresh mint growing out there so I think we could make some
25:34lovely fresh mint tea yeah and the guests could sit on the patio and maybe just have a little chat
25:38sounds like a plan I think just using what they've got around them is going to be great and it's it's
25:46how they do that you know whether it's just the most beautiful posy of flowers or maybe they baked
25:52something using raspberries that are on a bush in the garden for me it's going to be the way in which
25:58they implement it let's just split up and have a look this pear tree oh get some no they're not big
26:05enough listen if we just get figs then see if there's out on these trees if not come and pick
26:11some of these let's just use these figs are up but not as hard as this let's just put them out
26:18anyway yeah you like a nice fig oh yeah but they're about that size they're not that big yeah no they're
26:25not a carton what you have in a packet they're days well that's what I mean days and then they're figs
26:32yeah figs is different right come on Steve let's pick some flowers but for all the hosts time is running
26:45out why's it taking him for so long oh hello three shops yep that's absolutely fine well done mission
26:56accomplished well done as the judges are on their way right I'm still gonna put the figs out are you're
27:04gonna put these in a dishes somewhere some of them just do whatever you want to do let's just get them
27:08in yeah are we done no I'll put them in a vase in here wait wait no no no no no no no no no wait and
27:15with everything to play for no one wants to slip up now we've got bins we know our mistakes but
27:23whether we learn from another thing time we on quarter Michelle's like she's on steroids she just needs to
27:30calm down a little bit that's all the hosts have pulled out the stops but now the welcome is over the
27:49the scrutiny begins oh it smells gorgeous what sort of cake is it lemon drizzle cake so you made it yes
27:59I thought Roy was the chef he is a chef but I do like to cook a lot at home I do all the cooking he
28:06doesn't want to cook at home well he probably does sometimes but I don't let him let's show you this room
28:12Nicola the rooms are under the judges microscopes and at this stage in the competition there is nowhere to
28:19hide they've got to remove forensically all evidence of the people who've been in the room before and so
28:27you need to put your specs on if you're over a certain age and they need to be really thorough we
28:34always use a hundred percent cotton it's a pretty duvet cover actually lovely nice fin yeah blue brush
28:42mm-hmm it's lovely and clean clean there's a whistle just the one glass yeah because there's just one
28:50single person still in the room ah I didn't realize that lovely oh you're fine I really liked the fresh
29:00flowers and then a little posy and then a recipe for the cake of the day that was very sweet I think they
29:08managed today and the challenges that they were thrown at them really really well with a plum
29:13so this is the pionnery yes excellent really cute isn't it beautiful and let me guess a little bird told us
29:42you like folding things so what gift have you left for the guests right well we've picked these
29:51beautiful flowers and then we've been picking the figs the baby peaches aren't they but then they're not
29:59right right I'm not sure whether from a health and safety point of view it's permitted to use those but for
30:09the future a really lovely idea the idea is brilliant right we're gonna leave you to it enjoy thank you
30:16we'll be looking to make sure everything that has been cleaned has been cleaned to a good standard you
30:23might miss the tiniest bit of dust on a countertop or you might not polish all the watermarks off that's
30:29really not as important as it having been cleaned check for cleanliness check for everything there's no
30:37and towel as I can see they are a hand towel in the swans yeah yeah I'm not sure how I feel about towel out
30:49shows very good few watermarks so having dusted on top of the shower head which you know they're new to it as well so it's not they just need to be told
31:04hello hello must be Rob I am hi I'm Eva one of the judges hi Eva lovely to meet you lovely to meet you yes
31:16please come on in sure thank you are you about ready we are about ready just a few final touches
31:23was that your mission for the day yeah did you find what you were looking for yeah it would do it's
31:33better than having sheets that have been marked by the iron oh right yeah so by the iron
31:38so this lovely man here on a mission all right he's accomplished my mission yes so so I think that has to go
31:44into the bedroom for the next guest then yeah yeah which is I'm going to quickly iron them so I'm going
31:49to leave you in the lovely capable hands of Rob a change of a day is it is a busy day it's about
32:00starting fresh everything will have to be clean the bathroom will have to be refreshed with new towels
32:04everything cleaned up and the room should be in a pristine condition for the arriving guests I can see
32:11that you've really got the eye for details well you and Jackie maybe we'll have to be fair to be fair
32:15that's Jackie's but you know I can't I can't take the credit for that yeah yeah yeah she's brilliant
32:20at that it's time for me to do a more thorough inspection of the bedroom and bathroom no problem
32:25at all I'll leave you to it and then you know where we are no worries no worries sorry sorry
32:35I've got the other one Jackie and Rob did well today it's been a very overwhelming day for them
32:45but I found that there is scope to improve the clean air standards in some area the room and
32:50bathrooms weren't dirty but I did find a few lapses in terms of this dusting in some areas
32:55due to something where you could see an improvement in quality moving forward
32:59the inspection may be over but the challenge is far from done as the early guests are arriving so
33:12we've got guests arriving early and you're ready absolutely ready we are about ready just a few final
33:17touches how does it feel that you suddenly had an early guest today we're all over it and the judges
33:25will be looking to see who will keep a cool head when the real test comes knocking right we've got
33:31the wine out ready you never know who's going to turn up on time or not it is a pressure pressure
33:38point and when the door knocks you are on show
33:42the competition to win a B&B in France is heating up the hosts are facing a true test of B&B life
34:01the early guest check-in and the judges are watching to see who can stay calm under pressure
34:11and still deliver a warm welcome
34:16this is your room for the evening very pretty so I hope it's to your liking and then this is your
34:27en suite oh wow beautiful it's a beautiful day out there and there's a beautiful garden out there
34:36so if you'd like to have a seat out there and then I'll bring you some drinks perfect sounds good
34:41I look forward to it Jackie was perhaps a bit nervous today the guests arrived early but sadly it
34:49is something that they will have to get used to talk about there yeah but it's only day two and I
34:56think there is potential in there their enthusiasm really made up for the little lapses oh wow so
35:03it's just a little welcome gift for you we have some fresh mint yeah and we just have a few French
35:10delicacies yeah please enjoy it's stunning thank you you're welcome enjoy it's actually really nice
35:17yeah it sort of goes with the whole atmosphere yeah doesn't it yeah soothing relaxing a bit like a day spa
35:25and this is your room for the night oh charming yeah nice and it's nice and airy yes on sweet bath the wi-fi code's there for you
35:39water station for you yeah and there's a little homemade gift from us as well oh bless you thank you
35:44it's um flowers from the garden and the recipe for my lemon cake which hopefully you'll enjoy shortly
35:49my first impressions of Nicola and Roy very warm very friendly very open-hearted got a really good
36:05first impression actually genuine folk we always call this part the chef sure you can't really serve
36:12it so who else can eat it the chef that looks wonderful thank you not too much nothing I'm going
36:24to just check that it's not you know poison your guests or anything absolutely I agree Nicholas yeah
36:31we'll deal join us in about 10 minutes is that okay brilliant all right is it good hmm lovely still warm
36:43and really lemony absolutely lovely it's a nice touch yes Steve tell them what it's called the
36:54Pisionary and to them in a boudoir wait out early this morning and picked some nice lovely yeah this
37:17is one of our welcome gifts but the figs Michelle picked them a bit early because they're not ripe
37:22enough yet so you can't eat like something you'd find off a castrated cap yeah yeah I'm sure they're
37:32peaches maybe leave them here and come back in a month or two it might be ripe but the thought was
37:39there and bless them it's all open if you want to open your windows so Steve thinks he's gonna stand
37:45there with his trunk some but I said no I'm really really impressed I mean who can't not like bold over

42:52maybe overwhelmed yeah I think the Jackie in particular seems to be flustering a lot which is a shame because
43:01she is so so lovely so lovely comes from a good place yeah she's trying to do well and she really
43:07wants to help but I think it's about finding that balance yeah I absolutely agree with you and you're
43:13kind of rooting for them and you want them to just stop take a deep breath and start again in an orderly
43:21fashion but then how many times can we keep on telling them this I think tomorrow with them will be a big tell
43:31the hosts are learning fast and starting to find their stride and the spirit of competition is
43:37taking hold we've had a few issues to deal with today we'll see what challenges are set for us
43:44tomorrow and go from there and see what happens I think the more and more we get into the competition
43:50we're enjoying it more yes there's going to be a few more curveballs but hey it's not what life's about
