These savory flans are an excellent idea if you're looking for a simple, light and flavorful recipe. The duo of mushrooms + spinach, sautéed with garlic, shallot and a touch of parsley, adds an irresistible fragrance. Mixed with a base of eggs, cream and grated cheese, they become soft, melt-in-the-mouth, highly flavorful flans.

Ingredients:
Spinach:
- 1 tablespoon olive oil
- 5 oz baby spinach
Mushrooms:
- 7 oz mushrooms
- 1/2 shallot
- 1 tablespoon butter
- 1 clove garlic
- chopped parsley
- salt
- pepper
Flan:
- 2 eggs
- 1/2 cup cream
- 1 tablespoon cornstarch
- salt
- pepper
- 1/2 cup grated Comté cheese (or Emmental)
