07:32So, we're going to just push through and get all these different layers made, prepared, ready to go.

07:46When you present eat and mess as an eyeball, it becomes a different game.

07:54So, we're talking the eyeballs being actual life size.

08:05What was your mode of transport that you've got?
08:07The vanishing cabinet.
08:09So, what we'll do is kind of start it at the Room of Requirement.
08:12Where we saw the vanishing cabinet, from the scene where Draco is like practicing on the vanishing cabinet.

08:18And he like takes the tarp off of it.
08:20So, our showpiece will spin around to reveal the sister location of Borgen and Birx.
08:26There's a lot of different items, all the keys and the gems.
08:29We want to bring it to life.
08:31And to do that, we have to really load it up, just like the store is.

08:35And so, it's going to take a lot of work to kind of create all those different elements.
08:38But I think that if we can pull it off, it's going to be really cool to see.

08:49So, this eat and mess eyeball, we take some cocoa butter, black,

09:21So, I'm still using the classic short crust, but reimagining it as a Milfoy style.
09:26Milfoy means many layers.
09:27It's very French.
09:28I went to the French pastry school in Chicago, and I fell in love with it immediately.
09:33It's great to be paired with a classically trained baker, because I wouldn't have a clue on how to properly make that crust.
09:39I want to make my short crust thin, trying to stay true to the inspiration while still trying to make it my own.
09:46I'm going to get started on the lemon custard.
09:49The night bus is a giant piece.
09:52For our illusion of movement, we're going to have the night bus drive down the bridge, just like it does in the movies, with a hill that is made out of cake atop the lit up bridge.
10:01We're planning on walking a really fine line between going real big and going just over that line to making it too big.

10:12I'm worried that I wrote my recipe wrong when I scaled it.
10:16I'm realizing that my quantities are way off, and there is just way too much sugar, and it makes my custard just really, really, really thin.

11:28How did you start making cakes?
11:30So, I was a special effects artist and I used to do makeup, prosthetics, airbrushing for weddings or for special effects or for body painting.
11:38And then I started using it, just messing about on cakes with food coloring.
11:41Wow.
11:42And for some reason, here I am.
11:43Are the cakes a bit less temperamental then than brides on their wedding day or anything like that?
11:47The cakes aren't looking at you.
11:49There's not as much pressure.
11:51Priya, how did you get into chocolate?
11:53I was previously a hairstylist.
11:55My family was part of a wildfire evacuation and we moved quickly, suddenly to a new environment and decided to take a fresh start.
12:04Chocolate wasn't like anything else that I've done before and so it was exciting and new and so I really leaned into that and I'm glad.
12:12Never looked back.
12:13No.
12:14So, where's the tasting element going to go? How are you going to build it up?
12:17Instead of your classic Battenberg, we're going to do chocolate and mint.
12:20With the chocolate and mint flavors, we're really pulling inspiration from the tiles inside the Ministry of Magic, which are black and green.
12:26Yes.
12:27So, we're going to make the tasting element into a desk.
12:29We are making the main focal point inside, which is the statue.
12:33We've made the iconic green tiles from the Ministry of Magic.
12:37So, I think it's all really going to come together nicely.
12:39I think that it's really honoring the classics, but maybe taking our own little spin on it.
12:44I mean, after all, Harry is awaiting judge-ment.

13:20For a showpiece, it's inspired by Hagrid's legendary motorbike inside car.
13:24We want to make the motorbike to look like it's soaring through the night sky.
13:27I'm a chocolatier.
13:28This is my time to shine.

13:30And I get to make Wester Jarre a motorcycle out of chocolate.
13:34My step-mom was a chef.
13:36And once I was old enough, like eight, she'd be like, okay, you have two hands.

13:41And that is still what I'm doing 25 years later.

14:39So, first, I need to cover all the car in fondant before putting the lights and all the little details.

14:48So, I just got scent and gum, calcium gluconate, sodium alginate, and citric acid.
14:54I don't know any of those things.
14:58For the tasting element, we are making a mousse of custard with cooling agent.
15:03So, I always try to go with a different molecular technique in every challenge.
15:07All my family, friends, are for sure fingers-crossing for me, especially my cat, Buji Cat.

19:57So I walked over to the director, Chris Columbus, and I said, hi, Harry Potter.

20:03So they were looking for a silly Irish kid, and they kind of found a silly Irish kid that day.

20:21We're very nervous because this is a lot of chocolate.

20:27We have to pass the heat gun in order to melt the chocolate that we're gluing with.

21:55So we have to incorporate our tasting element in our showpiece

22:02So we will be placing our mince tart on the top of our gas tank to display this dessert.

28:05with a mint vanilla bean ganache, and a chocolate marzipan as well with mint.

28:18The texture of the sponge is great.
28:20The marzipan, even the thickness of that, you've got it kind of spot on.
28:23So great job.

28:25I don't get as much mint as I was expecting.
28:28I get more mint from the aromatherapy than from the cake.
28:32Even though the Ministry of Magic was formed in 1707, this is a great fresh take on a Battenberg.

28:46The colour of it is absolutely perfect.
28:48I love the lights on the back of it.
28:50You can tell that the car is taking flight, but also all of this beautiful work of the tunnels and the rocks and the grass.
29:02Your execution on it is great, but I think as we go higher up to the car, the finishing on certain things isn't as clean as what I see with the bottom half of the piece.
29:13But we know exactly by looking at this what part of the story you're trying to tell us.

29:29The testic element is a book.
29:31It's rounded with custard and then it has a streusel underneath and an inverse verification of rhubarb and ibiscus on top.

35:28The treacle tart, it's reimagined in the style of a milfoy.
35:32The shortbread crust layered with the treacle filling.
35:34A thin layer of custard.
35:42I would say the milfoy layers could have been thinner.

35:50I'm getting, obviously, a lot of lemon.

35:53It's so strong and sweet.

36:01Story-wise, you guys have transported us to that scene in The Prisoner of Azkaban.
36:06On the execution, some detailing is really, really wonderful.
36:10I think there's other little bits that need to be elevated to come to the same level of what you guys clearly are capable of.
36:17In terms of taste, I did like the idea of taking a treacle tart and turning it into a milfoy format.

37:13So, for the tasting element, we decided to take the classic British dessert of Eton Mess and turn it into an eyeball.

37:26I absolutely adore Eton Mess.

37:35So, actually, we've done a clotted cream ganache, strawberry compote in the center of the eyeball.
37:39We've also done a strawberry consomme, and then what we also have is a tarragon creme.
37:43Well, I've eaten a lot of weird things today, and now I'm going to have an eyeball.
37:48So, this has been eye-opening.
