00:00In the heart of Port Macquarie's hinterland, a new spirit is emerging.
00:07It's a story of passion, local produce and a daring leap of faith.
00:13One that's creating a drink with the truly unique taste of the Australian bush.
00:21When I designed the gins it was all about what have we already got available
00:26and what could we use in the product.
00:28Just knowing how well everything grows here is kind of part of the inspiration of making the gin
00:34and just using local produce, some that we grow ourselves in the product.
00:40Carla and Pete use ingredients directly from their farm including mango, passion fruit and bush lemons
00:49to give the gin a zesty and vibrant kick.
00:53We have all our botanicals in there at the moment macerating overnight.
00:59Basically we turn it still on.
01:01There's a big boiler.
01:02We'll evaporate the alcohol off which infuses all the flavours from the botanicals
01:08which are coming out and dripping out this hose here and catch that in a vat
01:14and that'll be our almost final product.
01:17But the road ahead isn't without its challenges.
01:20Like bernie farmers, they're on the front lines of an increasingly unpredictable climate.
01:28It's always an ongoing conversation about the climate and the weather situation
01:32and you know you've just got to be prepared I guess for anything.
01:36I'm a member of the RFS, got involved with that during the last bushfires in 2019.
01:44Everyone's still a bit haunted about 2019 when everyone thought there was a good chance
01:49they were going to lose everything.
01:51We're just lucky we didn't.
01:53And when asked what they love most about what they do, well their answer is pretty obvious.
