00:00Hi everyone, welcome to Cook Stacey Cook.
00:03Today we are making Shrimp and Pepper Stir Fry.
00:06This is another easy, tasty and nutritious dinner recipe.
00:11The shrimp is succulent with a nice balance of savouriness and natural sweetness.
00:17The bell pepper is crisp and delicious.
00:21I will show you how easy it is to make this dish in your own kitchen.
00:26Let's get started.
00:27We will start by finely mincing 3 cloves of garlic.
00:34And preparing 3 slices of ginger.
00:37Then prepare 3 green onions and cut it into 2-inch sections.
00:43Keep the pieces from the stem part and the leafy part separate,
00:48because we will use them at different times during cooking.
00:52Next, cut half of an onion into large shapes.
00:57Take the time to separate the layers of the onion now.
01:01We will also need 1 bell pepper.
01:04I am using red and green bell pepper today for a more colourful look.
01:08You can use whatever colour bell pepper you have handy.
01:12Simply cut the bell pepper into bite-sized pieces.
01:16Now the shrimp, I am using peeled and deveined shrimp.
01:21Rinse the shrimp with cold water and patty dry.
01:24Then marinate it with salt,
01:27a little bit of sugar,
01:29some white pepper powder,
01:31corn starch,
01:33and a little bit of water.
01:36Mix it up thoroughly.
01:38And then mixing a touch of sesame oil.
01:41The last thing we need to prepare is some corn starch and water mixture.
01:48Simply mix corn starch with cold water and stir until all the corn starch dissolves.
01:57Now we are ready to cook.
01:59Add some oil to a hot pan over medium high heat.
02:03And add the onion and the bell pepper to the pan.
02:07Spread them out, let them pan fry for 20 seconds.
02:12Then season it with a tiny bit of sugar and a little bit of salt.
02:20Then stir fry for about 90 seconds.
02:23When the time is up, remove it from the pan.
02:26At this point, it should be a little bit undercooked.
02:30Add a little more oil to the pan if needed.
02:34And put the ginger in the oil.
02:37Let the ginger sizzle in the oil briefly to release some flavor.
02:42Then we can add the shrimp to the pan.
02:46Spread it out and let the pan fry until the bottom is golden brown.
02:52Then turn the shrimp over and pan fry until the other side is also golden brown.
02:59At this point, we can add the minced garlic and the stem part of the green onion to the pan.
03:06Stir fry everything together briefly.
03:09Then we will add a touch of rice wine.
03:13If you cannot use wine in your cooking, you can skip this step.
03:18Give it a few quick toss to let the alcohol evaporate.
03:23Then we will season it with oyster sauce, soy sauce and dark soy sauce.
03:31Continue to stir fry until all the shrimp look even in color.
03:36Then we will add the cornstarch and water mixture to the pan.
03:40Make sure you stir up the mixture first because cornstarch tends to settle on the bottom.
03:47The liquid will quickly boil and thicken up into a sauce.
03:52Once you see the sauce has thickened up like this, we can add the onion and bell pepper back to the pan.
04:01Also add the leafy part of the green onion, a touch of sesame oil and a little bit of crushed black pepper.
04:10Now all we have to do is give it a few quick toss to mix everything evenly and we are done.
04:17Serve this with some rice or noodle on the side and you have a healthy and delicious dinner ready to go.
04:24I hope you will give this recipe a try.
