00:00Hi everyone, welcome to Cook's Daisy Cook.
00:03Today we are making Beef and Potato Stir Fry.
00:06This is a dish you don't often see on Chinese takeout menus.
00:11However, it's a very common dish in Chinese home cooking.
00:15It's a very easy dish to make and it's super delicious.
00:19I make this dish for my family all the time and they love it.
00:23I think you will love this dish too.
00:26Let me show you how to make it.
00:28We will start by finely mincing 5 cloves of garlic.
00:33And cutting a quarter of an onion into strips.
00:37Take the time to break apart the onion now.
00:40Then we will need 2 green onions.
00:43Split the stem part in half lengthwise.
00:46Then cut it into 2 inch sections.
00:49Next, the potato.
00:52Simply peel it and cut it into slices like this.
00:56I recommend you soak the potato in some cold water to keep it from turning brown.
01:01Now the beef.
01:03I am using a cut from a chai-tip roast today.
01:06Cut the beef into slices by cutting across the direction of the muscle fibers.
01:12Then marinate the beef with soy sauce.
01:16Dark soy sauce.
01:18A little bit of sugar.
01:20A little bit of baking soda.
01:22Some water.
01:24And cornstarch.
01:25Mix it up thoroughly.
01:28Then mixing a touch of oil.
01:31The last thing we need to prepare is some cornstarch and water mixture.
01:39Simply mix some cornstarch and cold water together.
01:43And stir it until there is no more clumps left in the mixture.
01:48Now we are ready to cook.
01:50Add some oil to a hot pan of a medium high heat.
01:54And we will briefly stir fry the onion first.
01:57The goal here is to get rid of the raw taste in the onion.
02:01So we only need to cook it for about 40 seconds.
02:05Next, we will stir fry the potato.
02:08Spread the potato out in the pan and season it with some salt and sugar.
02:14Give it a few toss to mix it evenly.
02:18Then let the pan fry until some of the potato starts to get golden brown on the edges.
02:25Then add some water to the pan.
02:28Put the lid on and let the potato cook for 2 minutes.
02:33After 2 minutes, the potato shall be cooked through.
02:37You can test it by cutting a piece of the potato with a spatula.
02:42If it cuts through somewhat easily, then it is ready.
02:46And we can remove it from the pan.
02:49Now add a little more oil to the pan if needed.
02:53And we will stir fry the beef.
02:55Spread the beef out in the pan.
02:58And let the pan fry until some of the beef gets golden brown on the bottom.
03:03Then add the minced garlic to the pan and stir fry the beef with the garlic until the beef is about 70% done.
03:13Now season the beef with some soy sauce, dark soy sauce and a little bit of sugar.
03:20Continue to stir fry the beef until the color looks even.
03:24Then add some water to the pan.
03:27The water will quickly boil and turn into a sauce.
03:31At this time, we can add the potato and onion back to the pan.
03:36Gently toss everything a few times to mix them together and we can add the cornstarch and water mixture to thicken up the sauce.
03:46Make sure to stir up the mixture because cornstarch tends to settle on the bottom.
03:52After adding the mixture, gently toss the beef and potato a few more times so that they are coated with the sauce.
04:01Then we can add the green onion and a little bit of crushed black pepper to the pan.
04:07Now all we have to do is mix everything up evenly and we are done.
