00:46for a healthy ice cream.

00:49Well, we probably should,
00:51but it is hard to beat a good ice cream.
00:53There's nothing like an ice cream on a hot summer's day.
00:56You know, it just drips down your hand.
00:58It's cold. It's delicious.
01:00It's creamy. It's moist.
01:02It's just a real naughty little treat.
01:05But it's a treat we indulge in very regularly.
01:09Every Kiwi eats an average of 22 litres of ice cream per year,
01:13putting us neck and neck with the Aussies and Americans
01:16as the biggest consumers of creamy treats in the world.
01:20My favourite ice cream would probably be chocolate.
01:22Hokey pokey.
01:23Cookies and cream.
01:24Banana.
01:25Passion fruit.
01:26Goody gumdrops.
01:28Well, young or old,
01:29ice cream brings out the kid in all of us,
01:31the naughty kid.
01:32How are we going to make a healthy ice cream?

01:52to pick out a popular gourmet, Mofan Pink.
01:54They all look absolutely awesome.
01:56As well as a large selection of premium ice cream,
01:58the cones are made to order.
02:00But at $8.50, is it worth its wafer?

02:05You know, that's what ice cream should taste like.
02:07It's got great flavours.

02:10The size is humongous.

02:16Ice creams aside, Michael wants to sample the whole genre.

02:30Well, it's a mouthful in any case.

03:00Mr Whippy, or Stuart to his mum,
03:02is one of about 50 cruising the back streets of New Zealand.
03:05The van and the brand go back around 50 years too, to 1964.
03:09I've always wanted to go into one of these, ever since a little child.

03:14It's a truly rare and valuable insight for Michael as he begins...

03:39The key to Mr Whippy's varied menu is in the toppings.

03:51But it's Mr Whippy's trademark soft serve ice cream that Michael is most interested in.

04:25Then, as if by magic, a customer materialises.

04:37Michael clearly has a soft touch with the customers.
04:39But how will he cope with his first soft serve?

04:48With the reputation of an institution on his shoulders, Michael has another go.
05:05Guys, it's a little bit flat, but man, it looks pretty bloody sexy.

05:15I'll just go to my beach.

05:17But even with the country's least experienced Mr Whippy serving misshapen ice creams,
05:22the crowd still gathers for that familiar taste.

05:37The orders and combinations seem to be endless.

05:43She's bigger than he is.
05:44All these combinations.
05:47In terms of working in the back of Mr Whippy today, it's a childhood dream.
05:50It was fantastic.
05:51All these candies and colours.
05:54Beautiful.
05:55But I really felt like I was working in a sweet shop.
05:59There is nothing good in the back of that truck,
06:02apart from maybe some almonds and some peanuts.
06:07You know what? I think I can do a lot better.
06:09I can make a healthier ice cream with more wholesome toppings.
06:13I think I can beat Mr Whippy at his own game.
06:17Chef Michael van der Elzen is challenging frozen treats.
06:20And in two days, we'll be taking on Mr Whippy with his own healthy version of ice cream.
06:26But first, he needs to make some.
06:28And where better than down at the beach on a beautiful summer's day?
06:32Today I want to make an ice cream.
06:34With as little fat and the smallest amount of sugar as I possibly can.
06:37So, replacing the sugar, Michael whisks honey into egg yolks.
06:42To which he then adds a mixture of hot milk and cream, creating a low-fat custard.
06:47That's about us, I think.
06:49Then it's a simple swirl of unsweetened yoghurt.
06:52The yoghurt, in theory, is replacing the complete amount of cream.
06:55And to finish, Michael whisks egg whites until peaks form.
06:59Or bigger muscles.
07:00Whichever comes first.
07:03There we go.
07:04That's folded gently into the custard and yoghurt mix.
07:07And stashed into containers.
07:09One plain.
07:10And one with an all-natural dollop of plum and cherry puree.
07:15And there's our two ice creams.
07:18While he waits for the ice cream to set,
07:20Michael kicks back and enjoys the beautiful ice cream.

07:28Oh no, he's off again.
07:30He's had some tops ideas.
07:31I saw maybe four or five different toppings in Mr Whippy yesterday.
07:34All of them artificial.
07:35So, Michael's going to make some toppings.
07:37And he starts with a Mr Whippy classic.
07:39I'm sure that's made up of four things.
07:41The first one is baking soda.
07:42That gives your tongue that tingling feeling.
07:44Next up, citric acid.
07:46Followed by some icing sugar.
07:48Finishing with freeze-dried raspberries.
07:50This is my flavouring, but also my great colouring.
07:53And that's it.
07:56Ding!
07:58So, the sherbet bus has left the station.
08:00Ding, ding.
08:01Michael's next topping draws inspiration from Mr Whippy's menu.
08:05I want to make what came out of the Mr Whippy machine,
08:07which is aerated dairy, but I want to do it with 100% yoghurt.
08:11The yoghurt is melded and mixed with Michael's plum and cherry puree.
08:15Then it all goes into a soda siphon with a bulb of nitrous for fizz.
08:20Let's get that shake up.
08:23Aerated yoghurt.
08:25Take that, Mr Whippy.
08:27And that.
08:28Not quite the same as what came out of the Mr Whippy machine, but...
08:32Oh, that's so tasty!
08:35This nuttiness continues into Michael's final topping.
08:38I've got some toasted Brazil nuts.
08:40These are fantastic.
08:41They're full of selenium, which is a rich antioxidant.
08:48They smell extraordinary.
08:50They smell like chicken, like KFC chicken.
08:53They do.
08:55Well, because ice cream tastes like chicken too,
08:57let's hope it's at least frozen chicken.
08:59Set around the outside.
09:01I might be able to scrape the outsides of that off and get some tasters.
09:05Well, there's no shortage of volunteers.
09:07Do you want to try some of my ice cream?
09:08I'd love to, thanks.
09:09Sure.

09:11For his first combination,
09:12Michael serves up plain ice cream with that nutty topping.
09:16That tastes like Kentucky eggs.
09:20Isn't that funny?
09:21I can assure you there's no Kentucky in there.
09:24It was a bit different, eh?
09:25It was like Kentucky fried chicken mixed with yogurt, so...
09:28Like chicken, it's not going to fly.
09:30Next, Michael wants to try plain ice cream
09:32with whipped berry yogurt on this lady.
09:36Oh, that is really, really good.
09:39It reminds me of sort of like a mousse.
09:41So far, so smooth.
09:43Michael tries a sherbet on some hardened professionals.
09:46Pretty good.
09:48You get that ting in your mouth?
09:49Yeah.
09:50That's nice.
09:51Really nice.
09:52Oh, sherbet's nice.
09:53It's tangy, kind of zangy.
09:55It's like tingling in your mouth, craziness.
09:59Michael's winning everyone over with his toppings,
10:01but there's one big question he's yet to ask.
10:04How's the ice cream?
10:06The ice cream's got no flavour.
10:09I like the nuts better with the ice cream.
10:11I think the ice cream was missing, like, the sweetness, I think.
10:15Not, like, sweet or anything.
10:17Sometimes the truth hurts.
10:19Oh, and there was this.
10:20There's a weird texture to it.
10:21And this, too.
10:22A bit icy.
10:23And this.
10:24You can feel the crystals in it, which I wasn't expecting.
10:26I was expecting it to be a firmer sort of texture,
10:29and the icy crystals were a bit off-putting.
10:32I think we get used to creamy ice cream, don't we?
10:34Well, yeah.
10:35Do you like it better than ice cream you normally buy from a supermarket?
10:39No.
10:41No?
10:42I have a bit of work to do, eh?
10:44Yeah.
10:45I feel like I need to cry.
10:48In some ways, today worked,
10:50and in other ways, I felt that it was a complete disaster.
10:53Ice cream should hit the mark every single time.
10:56People should even go, Wow, I love ice cream!
11:00Didn't happen.
11:01Just like that.
11:03I take on Mr. Whippy in two days,
11:05and right now, I feel like I'm still at square one.
11:09Last night, I cried myself to sleep.
11:12The ice cream didn't work.
11:14You know, I just winged it.
11:16A little bit of cream, a little bit of yogurt,
11:18some egg, put it together.
11:20It wasn't right.
11:21I think I have to go back to the fundamentals
11:23and re-look at my ice cream recipe.
11:25But Michael will need something to serve his exciting new ice cream in.
11:29I feel I can't go into game day without a code,
11:31and I think for the first time in food truck history,
11:34I need to use butter.
11:36Ah, we forgive you, Michael, just this once.
11:39I'm using a really small amount of unsalted butter.
11:42Okay, yep, we forgive you.
11:44This is going to make a lot of cones.
11:46It's the butter you need to beat up, Michael, not yourself,
11:49which he does with some Demerara sugar,
11:52egg whites,
11:54flour,
11:56and finally, just to add some fibre,
11:58I've got some sesame seeds, some black sesame seeds,
12:00some poppy seeds,
12:02and some chia seeds.
12:04Michael spreads this mixed dough into a round mould.
12:07There you go.
12:08Then pops it into the fridge to set for at least an hour.
12:11In the meantime, Michael dives into his ice cream.
12:14But don't worry, he hasn't forgotten it's all about health.
12:17He's making a caramel with water
12:19and replacing as much sugar as he can with honey.
12:21You do need a thermometer for this
12:23because it's very difficult to tell what your temperature is
12:26just by looking at it.
12:27Once the temperature hits 120 degrees,

12:33Michael adds the bubbling caramel to whipped egg yolks.
12:36You're introducing air.
12:38That's what this is doing.
12:40You have this beautiful egg yolk and honey caramel mixture.
12:43Beautiful.
12:46As the name suggests, ice cream requires cream.
12:49What I can do, however, is I can take half of that cream away
12:53and replace it with unsweetened yogurt.
12:55At least I'm doing my best to have a great-tasting
12:57but semi-low-fat ice cream.
13:00Whipping.
13:01Until it's a thick yet soft consistency.
13:04Don't go any further, otherwise you'll turn it into butter.
13:09We've used enough butter today.
13:11Poor Michael. It's almost a butter complex.
13:13But on with the recipe.
13:15In goes yogurt, some heavenly vanilla pods,
13:17and finally, dreamy whipped cream.
13:20So we pop this in the container, straight into the freezer.
13:25That's going to work awesomely well tomorrow.
13:27Honey yogurt ice cream.
13:29Now to finish the cones, which cooled in the fridge,
13:32then went into the oven at 160 degrees for four to five minutes.
13:36When they're hot, they're really palatable and mouldable.
13:38As soon as they go cold, that's when they go rock hard like a cone.
13:42So you've got to move really quick.
13:44So separate them off the bottom, wrap that around,
13:47hold the bottom together.
13:49Fantastic.
13:50Mike's got everything in hand for tomorrow's showdown with Mr Whippy.
13:54Now his ice creams just need to freeze overnight.

13:59God, I hope there's not a power cut.
14:01Chef Michael van der Elzen is on a liposuction mission,
14:04sucking the fat out of frozen treats on behalf of the nation's flab.
14:08The ice cream's got no flab.
14:10But for the first time ever, he's had to compromise.
14:12I need to use butter.
14:15To combat his self-imposed guilt trip, Michael's come back to his kitchen.
14:19Hell-bent on taking the health high ground against Mr Whippy later,
14:23he's reworked the standard ice block.
14:25Why don't we make a vegetable block?
14:27I've never seen a vegetable block in a supermarket for sale.
14:31Watch out, Mr Whippy.
14:33The first of two versions of the veggie block is simply sweet corn,
14:37a good squirt of honey and a slosh of grapefruit juice.
14:40The second uses beetroot, pomegranate, pomegranate juice...
14:44Pomegranate juice is great. It lowers cholesterol,
14:46great for your heart, great for your lungs.
14:49...as well as some honey and blueberries.
14:53But how does this healthy concoction taste?
14:57It's got that certain little earthiness to it.
14:59This is going to be a pure antioxidant block.
15:02Sounds delicious.
15:04Well, both mixtures go into a mould with a chopstick, then into the freezer.
15:08Those little ice blocks are as healthy as it gets.
15:11I'm quite proud of that. Brilliant.
15:14Well, it's time to find out if that's true.
15:17With his ice cream set, his healthy veggie block set, now Michael is set.
15:22I am so scared. I'm pecking at it.
15:42It's Michael versus Mr Whippy in the great ice cream battle.

16:00Today, Mr Whippy has sent in their young gun, and he has high hopes.
16:04Look, I'm pretty confident, just quietly.
16:06There's nothing more joyful than having kids run out like I'm a god or something.
16:12Well, this god of ice cream plans to show no forgiveness,
16:16leading Michael to some of his most loyal followers.
16:20The plan is I'm just going to follow Mr Whippy on his normal route.

16:25I know that people like ice cream, but they love his ice cream.
16:29God, I hope I'm not heading into an ambush.
16:31Location number one, and within seconds, the lure of that sound is too much to resist.
16:37We listen to the music, and then we run out from our houses.
16:40It's a treat, so house is no relevance at all when I choose ice cream.
16:44After three minutes, Mr Whippy has already sold six ice creams.
16:48Meanwhile, Michael's still prepping.
16:50Right, so here we go.

16:57There's plenty of action down on the left there.
17:00Look at the queue outside, Mr Whippy.
17:02Ice cream! Healthy ice cream!
17:05Where are you going? I don't want to go down there.
17:08The whole family just walked straight past.
17:11The children, they wanted ice cream, and they haven't heard of the food truck,
17:14but they know Mr Whippy, so...
17:16And then a customer.

17:19Do you want the Sherbert ice cream?
17:21Yes.
17:22Okay, first customer.
17:23Finally.
17:24Oh, look at that.
17:27There you go, sir.
17:28It's only a matter of time until Michael wins the hearts and minds of his followers.

18:48But after the devastating response from his last sherbet ice cream...

18:53It's time to find out if it really is inedible.

19:19With these two happy customers, it seems Mike's luck is starting to turn.

19:26And so is the weather.
19:27It really has turned a little bit pear-shaped.
19:29Are people going to buy ice creams in the rain?
19:31Don't think so.
19:32Well, not from Mr Whippy, that's for sure.
19:35At this spot, he's had zero sales.
19:37As the trucks move on, the rain sets in.
19:40But you can't dampen a kid's desire for ice cream.

19:45The beet tip was a late addition involving a slice of beetroot ice block...
19:48As well as those chickeny Brazil nuts.
19:50Now mixed with goji berries and antioxidant-rich dark chocolate.
19:54I think it's yummy and the beetroot's really nice.

20:00The cone is a little bit better than the Mr Whippy kind.
20:04This adventurous family's put Mike back in the field.

20:15We chose to come to the food truck because it has more natural products.
20:19The food truck is mounting a comeback.
20:21And Mike's hot on Whippy's tail in every way.

20:32It's the final countdown and Michael needs to be our number one hit.

20:45As both trucks have a last minute flood of orders, it's come down to the wire.

20:55The ice blocks are actually selling better than the ice cream.
20:59There have been a lot of wholesome ice creams eaten today.

21:13Wasn't it? Wasn't it great?

21:21Mr. Whippy takes it out.
21:23I was honestly expecting the food truck to win.
21:25You know, people recognise the food truck and they come up and they go,
21:28right, ice cream, I'm going to try something new.
21:31But still, there was only three in it.
21:33It's pretty close, really.
21:35Today, Michael gave 50 years of creamy supremacy a supersized fright.
21:40But the king of the cone stayed frosty throughout.
21:43Is that really a bit of beetroot?
21:45Would you say that out of the Mr. Whippy truck?

21:49At the end of the day, I sold almost as many ice creams as Mr. Whippy,
21:53and I think that's a great thing that people want to come
21:56and try some new alternative healthy ice creams.
