00:17It pairs perfectly with the creamy, tangy lemon filling.

00:21Pulse ginger snaps with butter

00:23until it resembles coarse sand,

00:24then press into the bottom and up the sides of a pie plate.

00:27Freeze until solid while you make your filling.

00:30Beat softened cream cheese with sweetened condensed milk,

00:33lemon zest, lemon juice, and vanilla extract until smooth.

00:36Let unflavored gelatin bloom in some water

00:39and then beat that into your filling

00:41before folding in some whipped cream.

00:43Add it all to your frozen crust

00:45and chill until set in the fridge about two hours.
