00:13 I'll start by mincing up some white onion.
00:16 You just need a few tablespoons
00:18 and you wanna be sure it's finely minced
00:19 so you don't get any big chunks of onions

00:22 That's minced and ready to go.
00:23 I've done the same thing with garlic.
00:25 You want a good two tablespoons or so of garlic.
00:28 For the star of the show, of course,
00:29 the spinach, this is not baby spinach, it's regular spinach.
00:32 I like to just remove some of the bigger stems
00:34 and then just give it a quick rough chop.
00:36 You know how much greens like this,
00:37 especially spinach, cook down.
00:38 So this is gonna start like a ton of spinach.
00:41 That's why I love eating it
00:42 because it's like you're getting so much spinach
00:44 but it cooks down to like nothing.
00:46 That's it, now the first step is to wilt our spinach.
00:50 So I'm gonna put this in a skillet
00:51 and just kinda cook it down.
00:53 The purpose of this step is to remove
00:55 a lot of that moisture in the spinach
00:57 'cause if you just add this to the heavy cream step,
00:59 it's gonna water down your spinach.
01:01 All that spinach cooked down to hardly nothing.
01:04 Now what we're gonna do is drain it
01:06 and you wanna squeeze out as much moisture as you can.
01:09 All right, that's it.
01:11 Now we're bringing that skillet back to the stove
01:14 and bringing it all together.
01:16 Into the skillet, melt some butter.
01:18 Once the butter's melted, go in with your onion and garlic.
01:21 We're just gonna cook this down
01:22 until it's tender and translucent.
01:24 We're not trying to get any color here.
01:26 During this step, you're trying to flavor that fat
01:29 and that flavor's gonna carry out throughout the dish.
01:31 We're not trying to obtain any color here,
01:33 so your heat needs to be kind of like a medium.
01:35 We just want everything to soften.
01:37 All right, once that's softened,
01:38 in goes the spinach and the heavy cream.
01:42 Get that all well combined.
01:44 And now this is a step I've never seen before,
01:47 but I'm all about it.
01:48 We're gonna tear some slices of provolone over the top
01:52 and kinda get them melty and gooey
01:54 and then we'll stir it all in.

01:59 Finish it by seasoning with salt and pepper.
