00:00Trader Joe's to the rescue again.
00:01You're just a handful of ingredients away
00:03from white chicken chili enchiladas.
00:05The secret weapon here is their pulled chicken
00:08with salsa verde.
00:09It's cooked, seasoned, and sauced, and ready to go.
00:11Take the chicken, I like to just dump it right here
00:13because we don't need to dirty a mixing bowl.
00:15To that, a can of white beans, drained.
00:17Mix those two things together.
00:19For the chili effect, I'm just gonna add
00:20a little more seasoning to those,
00:21a little salt and chili powder.
00:23Next, you just need a pack of tortillas.
00:24I got the corn and wheat blend.
00:26Roll the filling right inside.
00:27These go seam side down in a casserole dish.
00:30And for the sauce, a little white queso and creme fraiche.
00:33You could also use sour cream.
00:34My mother-in-law used to make these sour cream enchiladas
00:37and this reminds me of that.
00:39Right over the top, optional sixth ingredient,
00:41but highly recommended, some shredded pepper jack cheese.
00:44Then into the oven, 375 degrees
00:46till hot, brown, and bubbly.
00:47That looks good and indulgent.
00:50Finish it off, a little cilantro.
00:52Better not tell me these aren't real enchiladas.
00:53I know that.
00:56Oh man, it's better than I thought it was gonna be.
00:58That prepared salsa verde chicken
01:00has so much flavor and tang.
01:02White chicken chili has never tasted so good.
