This rice dish is lightweight and hands-off, making it a no-brainer weeknight staple. In this video, Chef Roscoe shows you how to make skillet red rice with charred scallions, tying together flavors from jollof rice and Carolina red rice, making this a side dish with a special story. 00:00I make this rice recipe at least once a week. Like most rice dishes, red rice is a
00:04story of migration. This particular dish, it's a mix of jollof and Carolina red rice.
00:09When that paprika and tomato paste hit, mmmm. Now add your bell pepper, garlic,
00:14cooked though still slightly soft. Add two cups of washed rice, along with two
00:18bay leaves, and two and a half cups of chicken stuff. Add your thyme, salt and
00:21pepper, bring it to a simmer, cover it with a lid. In the oven, 350 for 20 minutes.
00:27In the meantime, go ahead and try your lemons and scallions. Now let's plate up.
00:29This is one of the fluffiest rice dishes you'll ever eat. I don't even need to eat it.
00:33I can smell it. That's a good recipe. All I have to do is smell it. You know you did
00:37a good job.
