00:00This is the most beautiful plate of bread I've ever seen in my life. It looks like art.
00:04It's day two of ordering just the bread. This New York City restaurant turns actual food waste
00:09into a delicious bread service. Stop number two is Cynthia in the West Village. Look how good that
00:15looks. Each of these pieces of bread are dyed with a different vegetable. Whatever is in season,
00:21whatever they can find at the market is kind of what culminates this entire plate. Both butters
00:26are made with upcycled kitchen scraps. So one blends pureed leftover lemons and jalapenos while
00:31the other uses freeze-dried tomato stems, onion skins, garlic skins to create a completely
00:36zero-waste butter. I feel like I've been talking about it forever and now I really just want
00:39to dive in. Okay, I guess we're going to carrot first. You can taste the lemon in the butter
00:46right away and it's not overpowering at all. It's so, so good. With the beet bread, we're
00:51going to go in with the other butter that has all the different vegetables that they did
00:55not waste. That is so good. And this butter is really subtle. They don't really taste
01:01a lot of the vegetable in it. It does have a different taste. I just can't put my finger
01:05on it, but it's so good, so smooth. Okay guys, for taste, I'm giving this a four. And for
01:10experience, I'm also giving it a four because turning zero waste ingredients into edible art
01:14is so unique. As for price, this is a tasting menu restaurant, so you have to pay $165 for dinner
01:20to get the bread included. So I'll leave the price rating up to you guys.
