00:06hello there folks and a very warm welcome back to what's for tea it's lovely to see you all again
00:13and i hope that i find you very well and thanks for coming over for this week's recipe which is
00:19blueberry grunt and if you've never heard of blueberry grunt it's so named because of the
00:25sound that the dumplings can make as they cook you might hear a wee grunt but even if you don't
00:30it's delicious it's not the most aesthetically pleasing thing but let me tell you it's all in
00:37the flavor it's basically a sweet sort of stewed fruit and on top you've got this lovely soft
00:43pillowy bouncy dumplings and it's just a lovely combination and beautiful with ice cream so i'm
00:49just going to show you how i'm doing this but as usual i will put it on the screen as
00:53we go so i've
00:54got my flour sifted in a bowl i've got my buttermilk there as well and then i've got some very
01:01cold
01:01butter you can use unsalted or salted i've got a touch of cinnamon as well and then i'm using some
01:08bicarbonate of soda and also baking powder and that's going to give you the lovely airy light
01:13dumplings and just a pinch of salt as well but the first thing we're going to do is the filling
01:19and get that going and then we'll start doing the dumplings so i've got my blueberries i've just
01:24rinsed these and popped them into a bowl i've got some white sugar as well and i've also got a
01:30touch
01:30of water just to help everything stew and break down in the pan i'm also adding a wee bit of
01:37lemon
01:37juice and then another touch of cinnamon just so that it ties in with the dumplings so go over to
01:43your cooker i am using a frying pan but you can use a skillet or a cast iron pan whatever
01:48you have
01:49so water sugar lemon juice and then that cinnamon so you want to get your temperature up to sort of
01:55a medium simmer stir everything together until it's nicely combined you might find your cinnamon
02:01a wee bit stubborn you know it's quite an anti-social spice and it takes a wee while to mix
02:08in and mingle
02:09with everything else but it will get there eventually just be patient give it a few minutes and everything
02:15will combine and once your liquid is at a simmer you can go ahead and add in your blueberries i'm
02:21just
02:21going to give these a gentle stir and push around just to make sure they're well coated and that lovely
02:27syrupy liquid underneath so all you need to do is leave these for about 15 to 20 minutes until they're
02:34all
02:35starting to break down and bubble but just make sure you cook these nice and gently not furiously
02:41once they've been going for about 10 minutes you can go and start your dumplings so to your flour just
02:47want to add all of your dry ingredients just throw them in and then just give those a gentle stir
02:52together i am just using the end of a wooden spoon and then we can go and add in the
02:58butter so this is
02:59very very cold butter which i've just cubed i am using salted butter but like i said use unsalted
03:06if you prefer you just want to rub the butter into the dry ingredients until it disappears or looks
03:13like dry bread crumbs just like this and it will happen quite quickly it'll take about five minutes
03:19to do properly and it should be looking something like this and all we have to do now to turn
03:25this
03:25into a dough is add in the buttermilk so straight in with the buttermilk now i'm going to use again
03:31my
03:32spoon just to get everything nicely mixed because this is quite a sticky dough but you should be able
03:37to pick this up you know and shape this into wee balls or wee blobs it shouldn't be you know
03:42too too
03:43sticky if it is add another wee touch of flour but it should be good to go so i was
03:49quite happy with this
03:51and i am going to use my one tablespoon measuring spoon just to make sure all of my blobs are
03:57roughly
03:58the same so go back over to your cooker and once your fruit has been going for about 15 or
04:0320 minutes
04:04you just want to add some blobs to the top or the surface of your fruit just all the way
04:10around
04:10like i said i am using my one tablespoon measuring spoon but any spoon will do just so they're roughly
04:16the same size and we're just going to cover these and let them steam for about 15 minutes i don't
04:22have a
04:22lid big enough so i am loosely covering this in foil which does the same thing anyway then after 15
04:29minutes come back and just have a wee look make sure your wee dumplings or your biscuits are fully
04:34cooked all the way through and they will be by now some may disappear some will stay in the top
04:40they
04:40really do have a mind of their own it doesn't affect the flavor in every way this is going to
04:45be delicious
04:46and if you've got a cast iron pan or something that is oven proof you can finish this off in
04:52the oven
04:52if you want it a wee bit crispy or you know brown on the top i was quite happy with
04:57this and this is
04:58beautiful with some nice cold ice cream or even some pouring cream whipped cream whatever you like it
05:05really does add something to quite a tart filling which is in the bottom there but it's really sweet
05:10obviously with the addition of the sugar but the dumplings because they're not sweet you know it's just a
05:16lovely contrast going on so like i said not the most aesthetically pleasing thing in the world but
05:22i'm sure you'll be pleasantly surprised if you give it a go so do let me know what you thought
