00:05well hello there folks and a very warm welcome as usual back to watts for tea and this week's
00:11wee recipe and i do hope that i find you very well so we're coming up to the summer so
00:17i thought
00:17i'm going to do a summery kind of dessert nothing screams summer more than cream and berries so
00:24let's go and make a berry full so you're going to need to grab a nice big bowl and in
00:29there i've
00:29got my raspberries you can use raspberries and strawberries or whatever berries you like you'd
00:34use blueberry if you wanted i'm using raspberries and strawberries i'm going to cut my strawberries
00:39up because this is going to help let them macerate just that wee bit easier we're going to cover this
00:44fruit with you know sugar and let it sit for about an hour just so that it goes all gooey
00:49and syrupy so
00:50just to help that along i've cut my strawberries up because the raspberries are soft you know you
00:56don't need to do that with the raspberries then just cover everything in about three tablespoons
01:01of sugar and then give it a good stir around and just set that to the side for a minimum
01:06of half an
01:07hour the longer the better it's just going to get more syrupy and more gooey the longer you leave it
01:13i gave mine about an hour and this was me an hour later and as you can see already they
01:19have gone really
01:19syrupy you can see all the syrup in the bottom there and they've gone lovely and glossy and soft
01:25and this is exactly what you're looking for you can even do this overnight you know if you want it
01:29super gooey but this was good enough for what i need it for today and i'll just give it a
01:34wee start
01:35around just so you see how jammy this goes so quickly you know it's amazing so now i'm going to
01:41grab a
01:41hand masher and i'm just going to you know mash this ever so slightly just to mush everything together
01:47but i don't want this completely smooth i do want wee chunks of fruit still in there if you want
01:52more
01:52of a puree you can use a blender and blitz this completely but i think it's nice you know just
01:58with the odd wee chunk or two especially because we're having this with cream it just creates a nice
02:03texture change so use whatever size glasses you prefer but bear in mind this is very sweet so i'm
02:09going to go with the smaller option you'll get about five desserts of this size from your mixture
02:15pop a couple of teaspoons of your puree in the bottom now we're going to do the cream
02:20so into a very large bowl with your double heavy or whipping cream and then to this i'm going to
02:26add
02:26some maple syrup this is completely optional and up to you and i'm also going to add a couple of
02:32tablespoons of icing sugar and this is just going to help sweeten everything up and give it more of
02:38an interesting flavor and you want to whisk this until you know you get nice soft peaks you don't want
02:43this too firm you don't want to be chewing into a block of butter so you don't want it whipped
02:48too much just stop when you've got nice soft peaks and when you move your bowl you know it does
02:54still
02:54move it doesn't stay in the same spot because yeah this is just much nicer in my opinion if it's
03:00not
03:00overdone and i'm going to add half of my fruit into the cream at this stage and just give it
03:07a really
03:07good mix together
03:09and i'm also going to add just a dash of almond extract i think this goes lovely in cream you
03:21can
03:21leave this out or even add vanilla if you prefer but do try the almond extract it's lovely give that
03:28a wee stir through and then we're going to add the rest of your fruit in with this but this
03:34time you
03:34don't stir it in too much just kind of fold it in gently so you get that nice ribbon effect
03:41with
03:41your fruit and you can see the red fruit and the white cream it just looks a wee bit nicer
03:47in my
03:47opinion if it's not completely mixed through i'm going to use a piping bag you can use a spoon
03:52whatever you have i just find this a lot easier and a lot neater and i've got a wee bit
03:58of overspill so
03:59i'm just going to go around the edge with my finger because that's just me and all i'm going
04:03to do now is pop a strawberry in the top and a wee sprig of mint as well just so
04:09that it looks pretty
04:10for the youtube photo and i was really pleased with these and they look you know that they look
04:16amazing but they taste better than they look as well just the perfect summer dessert like i said if
04:22you're doing desserts of this size you will get about five out of this mixture if you're doing larger
04:28desserts you might get three you know it really will depend on the size of the glass that you're
