00:00This is Andrea Di Stefano, the chef from Manzo, and here are my five questions.
00:05So what I eat at home when I'm not in the restaurant is based on my wife's decision.
00:11So whatever she cooks, I think people don't let the steak rest.
00:16So the meat needs to rest, and all the protein inside and the juice is going to be inside the
00:24steaks.
00:24Then when you reheat it, that's when you're going to eat the best steaks.
00:29And I think most people, they don't do that. They just cook it and eat it.
00:33When I was young, my mom used to cook at home.
00:37I remember pasta with the lettuce and ricotta, smoked ricotta salada or salty ricotta smoked on top.
00:46Graded, simple, but was amazing.
00:48One of the favorite restaurants is Lumi Dining.
00:52Even there, the chef Federico Zanellato is a good chef, I believe.
00:56I went there to have a dinner with my wife, and I remember it was amazing.
01:02The parmigiana, which still let me think about my families and all my traditions.
01:08Yeah, the parmigiana is one of the places that is the layer deck plant.
01:11Yeah, it's one of the dishes that I think I can do over and over, and I'm never going to
01:16fail.
