Ingredients:
16 oz. Ground Chorizo
8 oz. Ground Beef
1/4 Cup Minced Onion
2-4 Cloves-Minced Garlic
16-24 oz. Oaxaca Cheese-
Shredded or Grated
or Monterey Jack or Mozzarella
1/4 Green Chiles-Optional

00:00Hello and welcome to Matt's Casual Cooking and today for the office month we are going to be
00:08making sizzling queso with chorizo. Very fun and easy recipe to make and very good for well
00:19any office get together or just with friends and family. So we're going to go over all the
00:24ingredients and how it's put together and let's get to it. All right folks so before we go over
00:35the ingredients today please consider hitting the subscribe button. It's a great way to get
00:41all these fun meals and appetizers in your feed every week. So getting back to the ingredients
00:51I'm going to go over the original recipe and then I'm going to talk about modifiers that I've done
00:58to make this for me personally a little tastier. You can experiment with it that's the great thing about
01:04it. Now you're going to need eight ounces of chorizo and you're going to want to crumble that
01:10and remove the casting. Now I'm using 16 ounces of ground chorizo and you certainly can do that today
01:22and I'm also using eight ounces of ground beef with this. You need a quarter cup of minced onions but
01:31I'm
01:31going to just use one of these kind of shortcut whole ones today. It just makes it a little bit
01:40easier. Now if you just want to chop up an onion hey that's that's up to you and don't blame
01:45me if
01:45you don't want to. You're also going to need two cloves of garlic minced and I'm just using four
01:51today due to the excess onion and meat and you're going to also need 16 ounces of
02:01oxicata cheese and you're going to want to freshly grate or shred that
02:06or if you can't find oxicata cheese you can use Monterey Jack or mozzarella. I'm using
02:12mozzarella today and I'm using a couple more ounces for it as well again because of the extra meat
02:19and you're also going to need a quarter cup of roasted green chilies. Now I'm not
02:24using that myself today. I'm not like a huge fan of it. They're fine but I just they don't want
02:31to
02:32excite me in my recipes as much as other things. So we're going to go over the meat first here
02:37in a
02:38minute. I will see you now. All right folks so you can see I've started cooking the meat together.
02:46Now the biggest thing is even if you're using the tubes like I said remove the casing and we want
02:52to
02:52make sure we crumble it up the best we can. Now we only want to cook this for about 10
02:59minutes and
03:00don't worry the beef will definitely cook in about that 10 minute time frame. We really want to allow
03:09the fat to render off of it and then what you want to do is what I've got off to
03:14the side. I've got a bowl
03:16and a paper towel in it. Now if you want to use a plate and a paper towel you can
03:22but all we're going
03:24to do is once it's done is put it on that plate or in that bowl with the paper towel
03:29and we want to
03:30leave the fat in the pan itself. So then go ahead and do that and then we'll move on to
03:37the next step.
03:38So we'll see you then. All right folks so I'm going to turn the stove off for just a second
03:46to show you.
03:47But you can see I've got a decent amount of fat. Now don't worry if you've got a couple little
03:50chunks of meat
03:51in there. Uh what we want to do now is what you normally do is just turn your stove down
03:58to a medium
04:00high and then go ahead and add your onions and your garlic. Get as much garlic out. And what we
04:13want to do
04:15then is cook these just cook these until they are nice and golden brown. And we really want to cook
04:24them. That's why we're keeping the fat. They kind of add a little bit more flavor to it as well.
04:30So then
04:32once these are done go ahead and add in your back in the chorizo and then also the chilies if
04:42you are
04:43using them. And then just cook it for just a second and then set it. Now we're going to turn
04:49it off and
04:49set it off to the side and we'll go into baking this. So I will see them.
04:56All right folks so the meat is done. Onions garlic combined and like I said if you're using the chilies
05:01you want to add it in. Now what you want to do is I've got a two and a half
05:06quart dish here or if you
05:08want to get out of eight by ten dish as well. And if you're using a lot of ingredients you
05:14might want
05:14to get out of nine by thirteen for this. But what you want to do first you can see I've
05:19layered the
05:19bottom with about a third of the cheese. So what you want to do with the meat you just want
05:27to take a
05:27little bit less than half. Sprinkle it in and maybe a little bit more.
05:41All right and then about another third of the cheese just sprinkle it on top and then
05:49you're going to add again a little less than the then half of the remaining meat mixture
05:57and then the last of the cheese and then you want to finish it off with adding
06:01the rest of the meat mixture on top. And then what you want to do is turn your oven to
06:08400 degrees
06:10and we're going to cook this for about 20 minutes maybe a bit more until the cheese is nice and
06:18bubbly
06:19and kind of browning on the top. So go ahead and do that and I will see you at the
06:24end.
06:28All right folks so you can see we are done. We got a nice gooey and crumbly
06:35queso dip in here and for your chips I really like these dippers for it but you can certainly use
06:43like
06:43tortilla chips or you know whatever kind of chips that you like with your dip. And this is great for
06:52parties, friends and family and just hey any even office obviously get together that you go to.
