Thomasina Miers is an ace cook. She co-founded the restaurant chain Wahaca and loves to teach Mexican-style cooking.

It was such fun to work with her, and for myself to learn about this spicy Mexican dish. Although it's written mole, it's pronounced molay.
I'm not a great fan of really hot dishes, but this one had a very pleasant heat without being overpowering. I could really taste all the other ingredients, and it's almost a meal in itself!
