Three years ago, the garden was in a wilderness state, and by clever use of mulching and no big principles, the two part-time gardeners have turned it round. Caroline and Leslie work there just three days a week and they never stop!
The hotel owners, Fjona and James are passionate about bringing health from soil to plate. They are helped by a team of fantastic chefs, and the restaurant has a Michelin star.
