07:18coral this is a barracuda I got right so this toxin grows on the coral and all the reef fish
07:23will eat
07:23the coral and what happens is these barracudas eat a lot of these reef fish and the ciguatera toxin
07:29bioaccumulates so every little bit of that toxin a fish eats stays within its body forever forever
07:34so it's not the only fish we see down here that has ciguatera but it's the most prevalent because
07:40it's eating most of these reef fish here because they the barracudas live on reefs right yes
07:48let's see if we can catch another one looks like we got got I don't think I have a whoa

07:54tight baby so a lot of these barracudas can have that ciguatera and that's why we typically don't
08:00eat them it's just the the risk is too high it's a toxin that affects your nervous system yeah a

08:05of people that have it it affects them different ways but things that are hot can feel cold things
08:09that are cold can feel hot it's it's pretty gnarly stuff man I'm bio accumulating more barracudas

18:35so we've already butter poached and caramelized the onion and the lobster for this omelette
