01:02Like everywhere else in the country, the Florida Keys aren't always sunshine and calm waters.
01:09This tropical paradise gets its fair share of rough weather.
01:13But the Contender 26 Bay is built for the challenge.
01:18Shallow draft where it matters, like fishing the backcountry and catching bait, yet seaworthy enough to venture outside the reef,
01:27even in sporty conditions.
01:29So with the lingering effects of overnight storms, the guys head offshore from Big Pine Key with high hopes for
01:37the day.
01:38It's gonna get super nice today, so the weather's gonna change as the day goes, but we got a little
01:42bit of cloud cover.
01:43We're gonna try and catch a blackfin tuna here.
01:45It's been some nicer tunas over top of the wreck.
01:47We're gonna chum a bunch of pilchards, put hooks in a couple.
01:49We're actually marking them a little bit here already in our first drift, so put those out there, see if
01:54we can catch them.
01:55My buddy Joe Malazzo has been texting me all morning.

01:58He's gonna be ready about lunchtime.
01:59I was thinking maybe we could slide back in, grab him, and maybe chase some sailfish this afternoon.

08:57The Florida Keys sit alongside the only living coral reef in the continental United States,
09:03including some of the most diverse sections anywhere along its 350-mile stretch.
09:09Plant a Million Corals is dedicated to restoring reefs here in the Keys and beyond.
09:17The guys drop by their Summerland Key facility for an update from co-founder Dee Dee Vaughan
09:23and a look at the growing operation behind the mission.
09:27You know, we've been so lucky to be supported by great volunteers.
09:30I know a guy who's a choop-chop Earl bird.

09:42He's been a great help.
09:43Something like that, yeah.
09:44Gave him a siphon and a sponge, and he's just helping taking care of corals.
09:47Thanks to volunteer help and generous donations, Plant a Million Corals grew from 280 corals to more than 50,000
09:57in just three and a half years.
09:59The nursery now holds enough corals to produce its first million, but space has become the biggest limiting factor.
10:07Our goal is to have enough space to outgrow 500,000 corals.
10:12That way we can be producing a million every year or even really every six months.
10:17And these corals are going to go back to our Florida reef track?
10:19Absolutely.
10:20And it's so important that we maintain a healthy reef, not just for things like biodiversity so you can have
10:27good fishing, good diving,
10:28but it's really the only way we could live in the Florida Keys and on the coast.
10:33Without a healthy reef system, we don't have anything protecting us from hurricanes.
10:37Now, new research focuses on growing large adult corals in the nursery, where a fragment can reach full maturity in
10:45as little as 14 months,
10:47compared to the 25 to 75 years it can take in the wild.
10:53It's a game-changing process that offers real hope for reefs around the world.
10:58Our goal is to outplant these larger, more mature corals, because not only are they the size of corals,
11:03they look like the corals you're used to seeing, but they also now act like mature corals,
11:09and will take on that next stage of development with sexual reproduction to produce more corals out there on their
11:15own.
11:15And we're going to be making half a million to a million a year right here.
11:21Exactly.
11:22It all comes down to tank space, right?
11:24Right, and funding.
11:26So, if we can get the funding to build the tanks, we can have the staff, the volunteers, the interns
11:31to take care of them,
11:33and that's how we can really make this large impact.

12:17Now, with the weather, finally laying down, and Captain Joe Malazzo on board, they set their sights on the afternoon
12:25sailfish bite.
12:26Joe brings years of sailfish tournament experience including plenty of time
12:32chasing sails alongside Earl and his buddy Dustin McCabe. After stocking the
12:39live well with Ballyhoo, Joe and the guys head to the edge and begin the hunt for
12:44feeding sailfish. So we're in the area here where there's a lot of bait, a lot
12:49of Ballyhoo and the sails are out in deeper water they kind of mainly stay
12:53out there when they get hungry they'll come in this time of year up in the
12:57shallow water where there's a ton of Ballyhoo and as they're doing that the
13:00Ballyhoo are gonna try to get away. So when you see it happening you're gonna
13:04look and it's gonna be hundreds and hundreds of Ballyhoo trying to get away
13:07from the sail at the same time which is you know we call it showering because
13:11it's literally just splashing of water from a distance once you get up on the
13:16fish because we run right to it as fast as we can you want to get there before
13:19he eats one. If you get a good cast you want to try to lead him by a couple feet
13:22and put that bait right in front of him so that's the one that he eats. I want to
13:27set my drag real light typically when we're casting at him like this it's gonna
13:30be a little lighter than I want to fight the fish so when we hook the fish we're
13:34gonna add a little bit more drag as as we feel okay but when we hook them what's
13:39gonna happen with this circle hook is the circle hooks gonna go all the way in the
13:42fish's stomach we want the sailfish to swallow it completely and then it comes up
13:46and as it gets to the corner of their mouth it's gonna roll over and find home 85-90%
13:52of the time
13:52we're gonna hook them right in the side of their mouth where we want to which is
13:55better for the fish obviously it's not stuck in its stomach in its gills
13:59somewhere bad but it's better for us too we want to pull the fish from his face
14:02okay it helps us fight the fish but these fish are gonna stay on the surface and
14:06we're gonna more instead of the concept of bringing the fish to the boat we're
14:11gonna bring this boat to the fish okay I kind of meet him in the middle
14:13so we're gonna pull nuts and we're gonna go to him and that way hopefully we'll catch
14:18the sailfish faster we're not gonna exhaust the fish completely and it's better for everybody
14:23we get him on the leader he jumps he's excited when we let him go he swims away healthy so
14:28that's the plan

18:17guys to share some of her favorite seafood creations today's recipe is an irresistible spicy tuna sushi
18:25roll have you ever made sushi before Earl not successfully that's it's one of those things like you got to

18:32professional get into this the first time right it's an art for sure and we're gonna hope help you
18:37uh make it today perfectly okay well what I'm gonna do is grab a nori roll and while I'm doing
18:42that and
18:42a sheet of nori you're gonna take the tuna and dump it into here and then mix our scallion and
18:47our sesame and
18:48our soy sauce also you're calling that nori that's a seaweed seaweed wrapper seaweed wrap and it's super
18:55important to get your hands wet for this so then that way the sticky rice doesn't stick to you whenever
19:02you start smashing it all down let's start putting your filling in so we have a little avocado you have
19:10cucumber your tuna and green onion mixture there we have some sesame seeds we're spicing it up right
19:17now with the wasabi and then the sriracha mayo so you're gonna take it and you're gonna with your fingers
19:22fold start to fold it over on here like that going keep going keep going and pinch and pinch back

19:30you go and then you want to put a little glue which is our water there and then you're gonna
19:34just gently roll it over finish it off uh-huh there we go oh and we're falling out the sides

19:42have overstuffed it just a little bit but the middle is still gonna be beautiful I feel really good about
