06:15five and a half and you have 11 children and you have a mother that's very comfortable with you around

06:59today we are straying away from the garden and we're going to go foraging and i found some real
07:04french people to help us so you know what's legit these guys are french and they got us into vietnam

07:26are foraging experts right uh kind of yeah the foraging people that i know that know how to do
07:31really good foraging they're french a lot of it is like a cultural approach french cuisine has been
07:37developed for a long time we don't even call it foraging for us it's just like one activity you
07:42do on the weekend with your parents or grandparents the main question we have at farmers market is like
07:46is this mushroom is going to kill me here in canada where in france is like how good is this

07:52compared to this one are you telling me that you'll fill all of these oh yeah me and cilia two

07:59would pick 250 pounds a day did you say 250 250 pounds so we i will do three trips my

08:04in mushrooms oh my god i'm so excited let's go forging this is mine jesus and then this one you
08:12might have to adjust that to fat so this is a gardening show but i find foraging and gardening
08:21very related this is how humans used to get their food yeah but people just slowly with farming forgot
08:29about it like i go to the farmer's market selling wild blueberries and people like oh they almost look
08:36like blueberries and they say like they're the ancestor of the blueberry and then people farm them
08:40and they got like bigger berries we always want to get like something better bigger faster and
08:47sometimes bigger doesn't mean better i tell that to my wife they should have put you guys in charge
08:58of finding ben laden one big difference between farming and foraging is the nutritious value of some
09:03of the plants for example a wild blueberry would have probably three or four times more antioxidants
09:08than the farmed ones here we are looking at some wild blueberries there no i know how to use these

09:18sorry you just you know look at where the berries are and you go slowly with your rakes here
09:23four days it'd be frustrating but once you find something it's so rewarding the problem is i want
09:29to eat them right away are these clean like the bears be honest it's cold it's just pee it doesn't
09:37taste bad i mean you can't tell a blueberry is from a family called vaccinium those one are vaccinium
09:43alaskans which is alaskan wild blueberry and those ones are the mountain huckleberry what is the latin
09:49name do we know uh vaccinium membranaceum i'm glad you said it because i was going to say it but

09:54we should go try and see if we can find mushrooms yeah i need to forge me a bathroom
10:02look at this god it's nice to be between the ferns again so we're in a spot now and if
10:12we were lucky
10:13what mushrooms would you be looking for right now in a place like this here i would be definitely
10:19looking for chanterelles and lobster mushroom probably it's always so much better to start
10:24fridging with somebody that already knows if you don't have that chance once again start with like
10:30a few basic spaces don't try to go too hard too quick because that's how there is accidents and
10:35poisoning and stuff and get a couple of books but never rely on any special tip to say if something
10:41is edible or not you need to learn it properly oh god what i lost my contacts
10:54so this one is a chanterelle mushrooms can't do any photosynthesis so they need to get their food
11:00from somewhere they're going to be relying on trees or plants to get the food because the plants are
11:04doing the photosynthesis the mushrooms they're going to attach themselves to the roots of a tree
11:10with what is called the mycelium of the mushroom the mycelium is actually the main organism of the
11:16mushroom so here is a good example actually of some mycelium that has been like uh developing into
11:22that rotten log most of the mushroom life is mycelium imagine that underneath the soil here in the forest
11:30there is a tree with branches and that tree would be actually the mycelium the mushroom get food from the
11:37tree and the tree partially get food and water from the mushroom and what we see as a mushroom is
11:43a
11:43reproduction part of the mushroom the fruit body and that fruit body is going to release spore
11:51look at this oh don't step there that's quick mud
11:59so here we actually have two different spaces of chanterelle so this one is a yellow chanterelle
12:04this one is a white chanterelle you won't find them in supermarkets or anywhere you will always find the
12:10yellow because the white tend to bruise orange really quickly so the shelf life is not as as good
12:15but the white chanterelle is really like firmer and meatier and last year we actually tried to do
12:21a vegan pulled pork so you basically shred them and the texture is really fibrous the same than chicken
12:26so try this one you will see that's anymore yeah but it's kind of peppery like i like it though
12:33some
12:33mushrooms they find raw some of them are not like you can't eat a morel raw if you eat too
12:38many it's
12:40likely you're gonna have trouble to digest them i'm not gonna get diarrhea am i not with one
12:44i find this about people that garden or work in nature it's good for your heart you guys smile a
12:55lot
12:56yeah and there's it's good for your brain like a purpose you know it's very direct link you know
13:01you find a real mushroom which is a real food that is gonna really feed someone yeah it feels tangible

13:40many prize edible mushrooms have risky look-alikes like chanterelles and then there's boss chanterelles
13:48king belit and then there's lilac brown belit hen of the woods and of course berkeley's polypore
13:58it's important to never consume anything foraged unless you're absolutely certain of its identity
14:03and edibility wait a minute this isn't a dorito
14:12let's go find some stuff to make some tea go go go go find it
14:18even an old lipton bag will work
