09:34For instance, if we wanted to make another liberty,

09:36we could take this branch, cut it off,

09:39and put it on the roots of another tree.

09:41And then eventually, that will take over and be the tree.

09:45So all the liberties are clones from that original seed.

09:48The only way to get a good-tasting apple is grafting.

09:52That's right.

09:55Not many people know it.

09:56I mean, to be honest, I didn't know that.

09:57And I'm embarrassed of myself for not knowing.

10:10I had a really good question.

10:14Danielle, let's graft.

10:16Okay, so there's two ways of making a new tree.

10:19In dormant time, like around March here on the coast,

10:21you graft.

10:23You take the rootstock, and you put a healthy branch on top,

10:27and you make a new tree.

10:28But in the summertime, you do something called budding.

10:33So this is a dormant bud.

10:35I just slice it off, and you want lots of what's green under here,

10:41which is called phloem.

10:43Phloem is like the blood of the tree,

10:45and that's just underneath the bark,

10:46and that's that nice green color.

10:48The blood of the tree.

10:49Yeah, that's where all the sugars can transport back and forth.

10:53Xylem is the skeleton of the tree.

10:55It's the wood.

10:57You probably remember that from biology in grade nine.

11:00Uh, I probably do, yeah.

11:03So let's make a new tree.

11:05Okay.

11:06So take your bud, and kind of give a little bit of a tracing.

11:11Yeah.

11:11And so now I can peel just the bark right off.

11:14I want it to basically match this shape.

11:17So trace it like that.

11:18I'm moving my hands.

11:21I can't guarantee that I won't slice your finger off.

11:30So that's it.

11:31Once this bonds with the tree, it will suck sugars

11:36and water from the tree itself.

11:39And this little bud will grow a new tree.

11:43And you'll cut it from how much, how far up?

11:46So it has to be above where this tree was grafted.

11:51Like, if you were an apple tree, I could cut your head off,

11:55cut my head off, put my head on you,

11:57and I would basically just be using your body.

12:00But it would be me.

12:01If you had my body, your life would be so easy.

14:11Hard apple cider provided a safe drinking source compared to the rivers and streams that could be full of dangerous

14:18It's reported these settlers drank an average of two glasses of hard cider per day.
