09:24from that tree to graft onto a rootstock of another tree,
09:28and every single liberty came from that original seed
09:32that created that variety.
09:34For instance, if we wanted to make another liberty,
09:36we could take this branch, cut it off,
09:39and put it on the roots of another tree.
09:41And then eventually, that will take over and be the tree.
09:45So all the liberties are clones from that original seed.
09:48The only way to get a good-tasting apple is grafting.
09:52That's right.
09:53No one knows that, do they?
09:55Not many people know it.
09:56I mean, to be honest, I didn't know that.
09:57And I'm embarrassed of myself for not knowing.
10:00No, I would say 99% of people don't know.
10:02Yeah, but I don't want to be like these jerks.
10:04Okay, fair enough, fair enough.
10:06Okay, so...
10:07Almost fainted.
10:09Um...
10:10I had a really good question.
10:14Danielle, let's graft.
10:16Okay, so there's two ways of making a new tree.
10:19In dormant time, like around March here on the coast,
10:21you graft.
10:23You take the rootstock, and you put a healthy branch on top,
10:27and you make a new tree.
10:28But in the summertime, you do something called budding.
10:33So this is a dormant bud.
10:35I just slice it off, and you want lots of what's green under here,
10:41which is called phloem.
10:43Phloem is like the blood of the tree,
10:45and that's just underneath the bark,
10:46and that's that nice green color.
10:48The blood of the tree.
10:49Yeah, that's where all the sugars can transport back and forth.
10:53Xylem is the skeleton of the tree.
10:55It's the wood.
10:57You probably remember that from biology in grade nine.
11:00Uh, I probably do, yeah.
11:03So let's make a new tree.
11:05Okay.
11:06So take your bud, and kind of give a little bit of a tracing.
11:11Yeah.
11:11And so now I can peel just the bark right off.
11:14I want it to basically match this shape.
11:17So trace it like that.
11:18I'm moving my hands.
11:19Not that I don't trust you.
11:20No, it was a good move.
11:21I can't guarantee that I won't slice your finger off.
11:25Oh.
11:25That's pretty good.
11:27You don't cover the bud.
11:29There you go.
11:30So that's it.
11:31That's it.
11:31Once this bonds with the tree, it will suck sugars
11:36and water from the tree itself.
11:39And this little bud will grow a new tree.
11:43And you'll cut it from how much, how far up?
11:46So it has to be above where this tree was grafted.
11:51Like, if you were an apple tree, I could cut your head off,
11:55cut my head off, put my head on you,
11:57and I would basically just be using your body.
12:00But it would be me.
12:01If you had my body, your life would be so easy.
12:05I should tell you about the lower back tattoos I have that are...
12:08They haven't kept up with the times, let's say.
12:12Okay, this is fascinating to me.
12:14If I had read about grafting, I would have been intimidated.
12:18But the fact that you just showed it...
12:20The fact that I can do it, honestly.
12:22I am the most uncoordinated person.
12:25Well, that's what I feel like.
12:25I can't do anything, but this...
12:27When it worked, I was like, holy crap.
12:33Yeah, watch out.
12:34You guys see those, right?
12:35Yeah, we see them.
12:36You see them?
12:37I got stung by one the other day, and I played cello.
12:40I couldn't play.
12:41You play the cello, too?
12:43Do you ever come out here and play with the apples?
12:44No.
12:45Because that's good for growth.
12:46No.
12:47I don't play...
12:48I love the cello.
12:50So when you want to pick an apple and you want to see whether or not it's ready, you
12:54go against the grain and you push up and pull.
12:57See, this one is not coming off.
12:59It's still really held onto the tree.
13:01So if you grab the apple and just go...
13:03Oh, wow.
13:04Do you want to try one?
13:04Should I?
13:05Yeah.
13:06Look at that.
13:07Like magic.
13:09Boy, is it sweet.
13:10Sweet.
13:11This is called the...
13:12Sabina.
13:14Oh, that's good.
13:15We're going into a golden gala now.
13:18Yeah, these come right off.
13:20Look at this.
13:23I don't know.
13:23I have another one.
13:25Yeah, have another.
13:25How much are these?
13:29Boy, these are really good apples.
13:31All of them.
13:32Cheers.
13:33Chin chin.
13:35God, I could die right now.
13:36I'd be very happy.
13:37Danielle, thanks so much for all this.
13:39This is really...
13:40You're welcome.
13:40Dearly, thank you.
13:41I learned a lot.
13:41I'm glad you got to taste some real apples.
13:43Thank you, Danielle.
13:44You're welcome.
13:44I'm gonna just head out this way.
13:47Do you have a toilet?
13:48I do.
13:49Do you have a toilet?
13:51Couldn't just shake hands and say thanks.
14:03Despite having the knowledge for grafting,
14:05early American settlers found it was better
14:07to plant apples for drinking, not for eating.
14:11Hard apple cider provided a safe drinking source compared to the rivers and streams that could be full of dangerous
14:16bacteria.
14:18It's reported these settlers drank an average of two glasses of hard cider per day.
14:24Honest question here.
14:25Why didn't they just drink squirt?
14:27Or Mountain Dew?
14:28And, by the way, dew off a mountain.
14:31Also.
14:33Okay.
14:34Losers gotta bob for turds.
14:36Ready?
14:37Go.
14:42I have a cousin that drowned this way.
14:44Good morning.
15:12Well, the toilet is clean.
15:38Happy grafting, and remember, the future is agrarian.
