03:33Cooking is a science.
03:34It allows you to push the envelope.
03:35For this commandment,
03:37we've invited a special guest judge,
03:40one of the pioneers of molecular gastronomy,
03:43a true mad scientist and genius.
03:47Please welcome...
03:54I'm just kidding, of course,
03:56because there's no guest judge better
03:59than the one we have right here,

04:26and technology commandment,
04:29we want to see how well you can showcase
04:32these 10...
04:3710 advanced techniques.
04:42In this commandment,
04:43your strategy is just as important
04:45as your food
04:46because today's a no-holds-barred,
04:49non-stop cook-off.
04:51You'll have five hours on the clock
04:54to create as many dishes as you'd like
04:57that feature at least one of these techniques.
05:01The more techniques you pack into a single dish,
05:05the bigger the potential score.
05:08At the end of five hours,
05:10the chef with the highest total score
05:13will win and get a big advantage
05:15in the next culinary commandment.

06:36Each dish must feature at least one

06:40and technology techniques.
06:42Dehydration,
06:44spirification,
06:45foams,
06:46flash freezing,
06:47carbonation,
06:48gels,
06:49smoke infusion,
06:51powderizing,
06:52sous vide,
06:53and compression.
06:55Each technique a chef uses
06:56ups the dish's potential score.
06:58A dish with one technique
07:00is worth a possible ten points per judge,
07:02and a dish using five techniques
07:04is worth a possible 50 points per judge,
07:07and so on.

07:31I want to stay away from crashing and burning.
07:33I see this commandment as a scoring battle.
07:36Get as many plates up as you can,
07:38and try to score as many points as possible
07:40with each plate.
07:41That's my strategy.
07:42So I just start smoking everything.
07:46Duck breast,
07:47burrata,
07:47getting my carrots going.
07:49Bagging and pickling things,
07:51sous-vying things,
07:53making powders out of multiple fats.
07:55I'm starting with foam,
07:57which is gonna be a meringue.
07:58Instead of, like, rapid-fire,
08:00unintentional dishes,
08:01I'm focusing on quality.
08:03I'm going to make a lemon
08:04and blackberry pavlova.
08:05I'm gonna use pavlova for foam,
08:08which is the meringue.
08:09Takes about two hours to bake the meringue,
08:11so I wanted to get that on quickly.
08:14I'm doing spherification.
08:15I'm gonna make a coconut and passion fruit gelato.
08:18The coconut and passion fruit,
08:20I'm adding them into the liquid nitrogen,
08:23and it'll flash freeze it
08:24and turn them into spheres.
08:26Buddha seems comfortable with spherification.
08:29I think this is in his wheelhouse.
08:31It's tricky.
08:32Traditional spherification is typically
08:33where you take a liquid
08:34and you encapsulate it in a membrane.
08:36Typically, it's alginate,
08:37but it could be pectin,
08:38it could be gel and gum,
08:39and there's a chemical reaction.
08:41So that sphere will become solid.
08:46All right, Buddha, what have you got?
08:48Something to get your taste buds going.
08:50They use spherification and flash freezing.
08:52Two techniques.
08:53Yes.
08:54So the dishes were the maximum
08:55of 20 points per judge.
08:57The spherification technique that I'm doing
08:58is not your typical spherification.
09:00You will still get those spheres,
09:01but you won't get, you know,
09:03that sodium alginate feel.

09:09I really got the beautiful brightness

22:09I've been paying attention to
22:10what Chris has been doing.
22:12His strategy is to take one
22:14method and apply it to a bunch
22:16of different things at the same
22:18time and then figure out how
22:20he's going to use those
22:21ingredients later.
22:22If I want to keep up, I know
22:24I need to cook the same way.
22:26I'm working on a celery root
22:27foam, a potato foam, and a
22:30corn foam.
22:31I am making my egg curls to go
22:33inside my egg for the scotch
22:35egg.
22:35I'm using six techniques on my
22:37scotch egg.
22:38I made a ham stock gel.
22:40I then quickly added the
22:42sphered egg whites and egg
22:43yolks, stuffed that inside of
22:45the egg.
22:46The gelatin will set on the
22:47inside of the egg.
22:48Let it set, bread it, and then
22:50fry it.
22:50And then through the frying
22:51process, that jelly liquefies
22:55again.
22:55So I'm rendering down this
22:57pork fat.
22:57I'm also powderizing pork fat.
23:00And I render all that pork fat
23:02out, strain that, then you take
23:04tapioca multidextrin, kind of
23:06gets blended in together until it
23:07has that same consistency of
23:09powder.
23:09It's going to taste good.
23:11We're starting to see the chefs
23:13who took longer squeezing more
23:16techniques into each dish.
23:18But Beverly and Cara, if I were in
23:20their place, I would feel scared.
23:22They're going to need to employ a
23:23lot of techniques.
23:24Out of all the commandments
23:25we've done, this is the most
23:25gamified one we've had, where
23:27strategy really does come into
23:28play.
23:29All I did in the first half was
23:30set myself up to just crank.
