01:15And the entire time, you were all headed for this momentous final challenge.

01:29and the winning team will leave here as next-gen baking champions with $25,000.

02:20I'm going to show you how to make a zoetrope cake.

02:27The zoetrope was one of the first ways people experienced animation in the 1800s.
02:33Now, here is a simple round cake.
02:37Now, I put decorations on it in a pattern that, when you spin it,
02:41makes them look like they're moving up and down.
02:44I have one last diamond to add to the pattern.
02:48They rolled out some fondant.
02:50Now, I'm going to use a cookie cutter,
02:53because I want all these shapes to be the same to really pull off the illusion.
02:59So here's my last diamond, but plain fondant's a little boring.

03:06So what I'm going to do is edge it with a lighter color to add a little more dimension,
03:11and it becomes a lot more interesting.
03:16In order to make it look animated when you spin it,
03:19you have to evenly space out your decorations.
03:22And to create the idea of movement, you need to place them at different heights.

03:29Now, here's the magic part.
03:32If I spin this, you'll see the decorations going up and down like it's animated.

04:17you'll have to create your very own animated cake.

04:23So we want to give a little advantage to the team who won the most recent challenge,

11:18So we want to do sweet potato pie filling in the finale because we have done a sweet potato
11:24pie filling before, and the judges really liked it.

12:05We're going to do buy chocolate-themed cake with a chocolate cake and strawberry buttercream
12:10with kataifi and our pistachio butter filling.
12:13So our inspiration for our flavor, our cake, is the Fire World Dubai chocolates, and then
12:17more recently, people have been adding, doing, like, cups with them, which, where it's, like,
12:22cut up strawberries with the kataifi mixture and the chocolate.

12:28So Duff and Cardia have been telling us for this whole competition to make sure our flavors
12:33are super-duper balanced, bold, and bright.

12:43pretty.
12:44So we're planning to decorate the 10-inch with kind of do some splatters of chocolate, and
12:49we want to put the words next-gen on it in gold to match our gold stars, and the 8
12:53-inch
12:53is going to be our galaxy buttercream with the stars, and then we're planning to put kind
12:58of, like, a sun on top.

13:06So this is definitely something new, and doing something new on the finale can be risky,
13:11but it also can work out really well.

17:08To start stacking my cake, I start with a layer of my crunch cake, a layer of buttercream,

17:30For our Dubai filling, we just combine our pistachio butter and toasted kataifi together.
17:35This is kataifi, and it is a Middle Eastern and Mediterranean shredded pastry.
17:41It's a good texture for the cake.
17:43It's really crunchy.
17:44It's also going to add a lot of flavor, and so I think the judges will really love it.
17:48To make the pistachio butter, I start by blending my pistachios, so I add a little bit
17:52of coconut oil and melt it, and then I add, like, three or four tablespoons of tahini
17:57into it.

18:00We combine both our kataifi and our pistachio butter.

20:40don't want that, so I try to go in and smooth it out, but it makes, looks like the cake

20:46It's every time I keep spraying it, it's like it keeps going into chunks and then I have
20:50to wipe it off.
20:50This is not good and this is not how I wanted my finale cake to go.
20:59I don't know what's going on, so we're going to have to figure out a way to fix this.
21:04So I go in and try to smooth it out to give it, like, a gradient technique.

21:54I'm going to pipe very pale shades of yellow, orange, and pink on my bottom tier of my cake.

22:10To get the zoetrop to work, every heart needs to be almost exactly the same.
22:15This should work, because each one goes here, and they need to be in even straight lines, evenly spaced apart.
22:21And this is the part that I'm going to be so picky on, because that's the actual challenge, and that's
22:28what needs to be important.
