00:00Ever heard of chicken bog?
00:01It's gonna be your new favorite thing after today.
00:03Just place your chicken in a pot,
00:04add in some onion, celery, and a little bit of garlic.
00:06Then add just enough water to cover
00:08and season with salt and pepper.
00:09Bring this to a boil, then reduce it to a simmer,
00:11cover it and let it cook for about an hour and 15 minutes.
00:14When it's done, remove the chicken and shred it
00:15and strain the broth.
00:16Clean out your pot and add in some butter.
00:18To that, I'm gonna add in some smoked sausage
00:20and let that brown.
00:21Now stir in some chicken broth from earlier.
00:23Season your water with a little more salt.
00:25Now we go in with the rice.
00:26You wanna do a little more than a two to one ratio
00:28when it comes to your liquid to your rice
00:29because this is supposed to be a little saucier
00:32than just plain rice.
00:33This is also the time where that chicken goes back in.
00:36This dish goes by multiple names.
00:37I first learned about it as chicken perlo.
00:39Now just bring this back to a boil, reduce the heat,
00:42cover it and let it simmer until most of that liquid
00:44is absorbed and the rice is tender.
00:45Turn off the heat and let it stand for five minutes.
00:47Garnish with a little green onion and serve it up.
00:50Top it with just fresh green onions.
00:51I had a southerner teach me that you could also put
00:53some pickled okra on the top.
00:55Mm, I could eat this every day.
00:57It's magical.
